Why is Product Traceability Important?

Public health impact

– Immediate: trace food forward to prevent sale and consumption

– Preventive: trace food back to determine cause of the issue, and prevent it from happening again

Economic impact

– Cost to industry

– Cost to society

– Estimated loss in the billions

In the event of a food-borne outbreak, the goals of the government’s food safety organizations are clear:

– Find and contain the problem quickly

– Find the source of the problem

– Trace forward to its spread, and inform consumers

Purpose

To provide guidance to the seafood industry on information and processes to support traceability, based upon industry identified best practices.

Vision

Developed a traceability framework which:

– Defines “critical tracking events” and “key data elements”

– Will be as cost and resource efficient as possible

– Identifies what is needed to support traceability for food safety regulatory requirements, recalls or public health trace back or trace forward exercises.

Following NFI leadership adoption of the framework and use of GS1 standards

– Identify standards for data presentation, formatting, sharing, and implementation

– Ensure that the implementation is based on best practices and experience

– Ensure the guide is built upon the regulatory requirements for traceability

Key Food Safety Data Elements

Each input to a “process” step needs to have a unique lot number:– Raw materials

– Ingredients

– Food contact packaging

– Work in progress

Each output from a “process” step needs a unique lot number:– Input lots linked to output lots

Record at each “process” step (critical tracking event):– Date/time each lot was harvested/manufactured/used/shipped

– Quantity of each input or output received, manufactured, used, or shipped

– Physical location that last handled each input or output

– Incoming lot # & outgoing lot # of each input & output

– Physical location where each input or output was shipped

GS1 standards are the “common language of business” and provide the framework required to support the traceability business process.

Traceability standards are based on the GS1 Global Traceability Standard (GTS).

They support:– Trading partners (the farms or vessels, your suppliers, your own company, your customers,

– Trading locations (can be any physical location such as a hatchery, a pond, a vessel, a boat dock, warehouse, packing line, storage facility, receiving dock or a store);

– The products your company uses or creates;

– The logistics units your company receives or ships; and

– Inbound and outbound shipments.
