Aussie BurgerBeef burgers.
500g beef mince
Building Blocks.
2 homemade or bought buns
6 slices of room temp tomato’s
2 small handfuls of baby spinach
½ onion cut into rings
2 star anise broken into pieces
4 Large slices cheddar cheese
2Tbs Mayonaise
2Tbs Tomato Ketchup
2Tbs American mustard
8 slices sour dill pickles or homemade cucumber pickles
Method.
Mix all of the Beef burger ingredients together and then form into 4 patties about a ½ inch thick.
In a small pan with some olive oil caramelize the onion rings with the star anise which should take around 5 minutes. Then remove the star anise and cool the onions. Re-heat the pan and cook the bacon rashers until crispy, remove and then fry both eggs, sunny side up and cook to desired consistency.
In a pan over a high heat cook the beef patties for 3 minutes on one side then turn the patties over and place the slices of cheddar on top of each pattie. Cook for further 3 minutes.
Place the beef burgers under the grill until the cheese bubbles. Then set aside to rest for 2 minutes.
Whilst the burgers are resting spread 1Tbs mayo on the bottom of each bun and then add the baby spinach, bacon and fried egg ,top with beef pattie, pineapple ring, onions and pickles. On the top buns spread 1Tbs each of mustard and Ketchup then place on top of burger.
