    TRANSESTERIFICATION MECHANISM

    Ethanol was deprotonated by the enzyme catalyst

    to become nucleophile.The breakage of triglyceride accompanied by theexchange of acyl acceptor, ethanol R group toform 3 ethyl ester and 1 glycerol

    The existence of heat as well as enzyme catalystonly increase the reaction rate and does notchange form in the end of the process

    CONCLUSION

    Immobilization of lipase based on the experimentresults shows that the optimum parameters are1:6 molar ratio, 60 hours, 50% enzyme

    percentage and 10% water contentThe best viscosity value obtained was 10.68 cP.The calcium alginate beads were appear as

    appropriate support for the ester conversion.
