First of all prepare the dough for the meatballs.1. Put to soak the bread, we can do it with a splash of milk or water, when it soft drain them and put them in a large bowl where we have ground beef.2. Salt + pepper and add the teeth minced garlic, parsley and egg.3. mix everything well, cover with paper fi lm and put it in the fridge for an hour.4. We took in a pan a little oil in which to fry fi nely chopped

INGREDIENTS• 700 g of minced beef• 1 onion medium large• 1 large carrot• 1 green pepper• 1 tablespoon tomato paste• 1 cube beef bouillon.• 1 egg• A Good Splash of Wine• A pinch of ground cayenne• 2 slices day-old bread• 2 large garlic cloves• chopped parsley• Olive oil• ground pepper• salt

onion with a pinch of salt, add the chopped pepper and carrot also sliced , we do a little bit until tender, then add the tomato paste will and wine, stir well and cook a few minutes.5. We form the meatballs with a little fl our and fry, when we all put in the pan with a pint of water, bouillon and cayenne, stir slightly and cook for about twelve minutes on medium heat.6. And we have our rich meatballs in a subtly spicy sauce.

Blend the almonds, the salt and the garlic cloves and add the bread crumbs previously sunk in vinegar.Add the oil gradually, as if making mayonnaise, while stirring. Add the cold water until it gets the desired texture. Put in the fridge and serve cold accompanied with melon or grapes.

Types of CuredSpanish HamThere are basically two different types of cured hams in Spain:

a) Jamón Serrano or “mountain ham” &

b) Jamón ibérico or “Iberian ham.”

Jamón Serrano There are almost 2,000 producers of Serrano ham in Spain.

Eighteen of these producers formed the Consorcio de Jamón Serrano Español in 1990. The name Jamón Serrano is now controlled by the European Union since the year 2000

and it protects the processing of this product, although it does not apply to a specifi c region. Look for the label that has an "S" in the shape of a ham, and says SERRANO ESPAÑOL if you want to buy Jamón Serrano from the consortium.

The mountain or Serrano ham is made from Several different breeds of white pigs, such as Duroc, Landrace or Large White. They are fed mainly cereals and cured from 7 to 16 months.

Jamón Ibérico

This ham is made only from the Iberian pig.

The breeding of the Iberian pig is re-stricted to an area in Southwest-ern Spain and Southeastern Portugal.

A l t h o u g h fed some c e r e a l s , these pigs also roam countrys ide and feed on acorns.

The curing p r o c e s s lasts from 14 to 36 months.

Nerja has a long history, evidenced by the primitive paintings found in its famous Nerja caves, discovered in 1959. These caves are now believed to be just one entrance to a linked series of potholes stretching many miles into the mountains between Nerja and Granada, and which may yet prove to be one of the most extensive unexplored systems in Europe. The Romans built here three settlements, including Detunda, of which now large remains can be seen. The area was later taken over by the Arabs in the early 8th century. Under the Moors, the town was known as Narixa, which means "abundant spring", from which the present name derives.Aqueduct of Nerja.Its agricultural and silk products are said[by whom?] to have been famed throughout the Muslim world and in the markets of

Damascus as early as the 10th century.Capistrano Playa, Nerja.The Balcón de Europa, a mirador or viewpoint which gives stunning views across the sea, is in the centre of the old town. Its name is popularly believed to have been coined by King Alfonso XII,

who visited the area in 1885 following a disastrous earthquake and was captivated by the scene. Local folklore says that he stood upon the site where the Balcón now stands, and said "This is the balcony of Europe". Local archive documents are said to show that its name

predated this visit, but this has not prevented the authorities from placing a life-sized (and much photographed) statue of the king standing by the railing.The Balcón area was originally known as La Batería, a reference to the gun battery which existed there in a fortifi ed tower. This emplacement and a similar tower nearby were destroyed during the Peninsular War. In May 1812, the British vessels Hyacinth, Termagant and Basilisk supported Spanish guerrillas on the coast of Granada, against the French. On 20 May, Termangant or Hyacinth opened fi re and the forts were destroyed. Two rusty guns positioned at the end of the Balcón are reminders of these violent times. The huge lumps of rock, the remains of La Batería, visible in the sea at the end of the Balcón, are further evidence of this action.

Balcón de Europe (the history) Nerja is a municipality on the Costa del Sol in the province of Málaga in the autonomous

community of Andalusia in southern Spain. It belongs to the comarca of La Axarquía. It is on the country's southern Mediterranean coast, about 50 km east of Málaga.
