“…that rice has higher inorganic arsenic concentrations than most other foods, and consequently, diets that rely heavily on

rice may contain the most inorganic arsenic.”

Schoof RA, et al. Fd Chem Toxicol 1999; 37:839-46.

A market basket survey of inorganic arsenic in food.

Toxicity of arsenic

• Arsenic is a class I carcinogen

– Legislation (WHO, US-EPA, EU,…) : 0.010 mg/L in drinking water

– Food: no regulation, why…

…The inorganic forms of arsenic are more toxic as compared to the organic arsenic but so far most of the occurrence data in food collected in the framework of official food control are still reported as total arsenic without differentiating the various arsenic species….

…15 European countries > 100,000 results of As in food - 2/3 < LOD, - only 2 % speciation information

…The highest total arsenic levels were measured in the following food commodities: fish and seafood, … high concentrations in rice grains and rice-based products, …

….. In order to refine risk assessment of inorganic arsenic there is a need to produce speciation data for different food commodities to support dietary exposure assessment and dose-response data for the possible health effects….

Conclusions

• HPLC-ICP-QQQ is ideally placed for the determination of iAs in rice

• Every gas mode gives acceptable results highlights highest flexibility and 7700 or 7900 can also be used.

• HG-ICPMS is selective enough to determine only iAs

– HPLC not needed!

– Faster determination than using chromatography

– Straight forward data treatment • no peak integration

• easier SOP
