We all can agree that life

can become insanely

busy at the drop a dime.

Our schedules are consumed with

work, school, meetings, visits to

the gym, doctors appointments,

dropping/picking up the kids from

school and extra-curricular activi-

ties … the list goes on. With this

said, it’s sometimes impossible to

squeeze in a lunch break amid the

madness — and I don’t know about

you, but I can’t go long without eat-

ing. Once the shakes, jitters and

irritability hit, I know it’s time to

refuel.

Juggling a busy schedule, I found

myself racking my brain for some-

thing quick and easy to eat on the

go, and thought of my usual turkey

and veggie wrap that I throw

togeth-

er last minute. In all honesty, my

homemade wrap seemed a bit dull

and boring, and I knew there was

more variety out there.

On a quest to find some of the

most extravagant “Ono, You Know”

wraps in town, I took a break from

this crazy little thing called life to

sit back, relax and feed my soul.

So without further ado, allow me

to “wrap” this up, and enjoy my

take on these satisfying finger

foods at the following establish-

ments.

Ocean HouseCasual elegance is what you’ll

find here at The Ocean House

located beachfront in the Outrigger

Reef Hotel. Once stepping foot into

this establishment, you’ll be

amazed not only by the spectacu-

lar oceanfront view of Diamond

Head, but by the fact that all the

stress on you simply melts away.

“They built The Ocean House so

that it doesn’t look like a restau-

rant. You can’t see the kitchen, you

can’t see the bar, but it’s all here,

it’s just hidden,” says breakfast

manager Chris Cole. “Basically it’s

like a plantation-style house beside

the ocean. We just want our cus-

tomers to sit down, relax, be with

family and have a good time.”

The Ocean House opened its

doors nine years ago with dinner

service and began serving break-

fast to its early bird guests last

December.

“The Paniolo Morning Wrap is

definitely one of our more-popular

items,” says Cole, adding that the

Ocean House Breakfast ($12.95),

award-winning Ocean House Loco

Moco ($12.95) and North Shore

Omelet ($11.95) also rank high

among customers’ favorites.

Rolled in a flour tortilla, the

Paniolo Morning Wrap contains

scrambled eggs, applewood-

smoked bacon, spinach and

Cheddar cheese, served with coun-

try roasted potatoes lightly sea-

soned with rosemary, salt and pep-

per. It’s definitely the breakfast of

champions, and with the cuisine

sizable to the magnificent view and

misty sea breeze, I really couldn’t

think of a better way to start my

day.

here are a couple of thingsyou should know before youventure to Waialae Avenue fora taste of some excellent

Mediterranean food — the first isthat there is no fat Greek. There’s aFrenchman, a couple of local cooksand some very friendly waitresses,but no fat Greeks. Unless they come infor lunch once in a while.

Secondly, you should know that the food’s notall Greek. While a good number of dishes arepopular Greek staples — Souvlaki, Gyros andGreek Salad, to name but a few — many of thedishes represent the colorful, olive oil-infused,fragrant, healthful foods of the entireMediterranean region. From Chicken Alexander($12.95) to Lamb Shanks ($14.95), to theLevantine-inspired Babaganoush ($6) toMerguez sausage popular in North African cui-sine, Fat Greek owner Francois Provenza suc-ceeds in bringing fresh, healthy food to enthusi-astic patrons.

Provenza, with his loud laugh, enormous per-sonality and unbridled passion for good food, isan impressive host, and just the kind of charac-ter you might expect to find at the center of thisbustling, Mediterranean-inspired city spot. I

stopped by to chat, laugh, havelunch and find out more aboutthe man behind The Fat Greek.

Jo McGarry: Ever since youopened The Fat Greek, you’vebuilt a reputation for great foodand fair prices. Did you expectthat people would like yourcooking as much as they do?

Francois Provenza: (laughs)Well, it’s good, yes, of course. ButI’m not going to tell you that thefood is good. You have to look at the people en-joying it, and the people who keep coming backand having a good time. They tell the story ofthe food and if it’s good. But yes, I hoped thepeople in Hawaii would like it.

JM: But this is not by any means your firstventure into the restaurant industry.

FP: No, you’re right. I had restau-rants back in Europe. In San Tropez Ihad a beachfront restaurant, andback in London in the old days I hadjazz clubs, and back in 2000 I openeda place with Sergio. (Sergio Mitrotti ofCafé Sistina).

JM: So what inspired you to openThe Fat Greek ?

FP: All of the years of traveling andeating good food, and seeing howpeople enjoy good food and conver-sation. I just wanted to bring Mediter-ranean food — real Mediterraneanfood — to people in Hawaii. I wantedthem to enjoy and to see how we eatin Europe.

JM: How we eat in Europe isreally influenced by dozens ofdifferent cultures, don’t youthink?

FP: Yes, yes, just look at theGreeks. We traveled all over,from Africa to Sicily, to India …and they brought home lots ofgood stuff … lots of differentfoods. And actually in Greeceyou will find good food fromSicily, because Greece was oc-cupied during the war by Italy,

so different influences come from all over.

JM: How do you describe the food at therestaurant?

FP: Well, I think that what we do is Greek foodin the proper manner. And then we do any of thefoods that I love from Spain, Portugal, Italy — Ican cook from any of these countries. So wetaste, we test, and then I create more and moredishes. It’s simple, healthy, fresh, fresh food.

JM: I love the couscous here. It’s not thesweet, cinnamon/raisin-infused couscous thatmany people might be used to. It reminds memore of the staple of North Africa, or the kindI’ve eaten in Tunisia.

FP: I learned how to cook couscous in the Sa-hara dessert with the Bedouin. They cook it withlamb in North Africa — not the same way as inother places, which is sweet. The real way is thisway, the North Africa version. We serve it onMonday nights with lamb shank and garbanzo

beans, and merguez sausage and vegetables. It’svery good. Very popular.

JM: And then every other night of the weekyou have some special in addition to the regularmenu.

FP: Yes. On Tuesdays we have ChickenAlexander — chicken with the spices andvegetables and rice and salad. On Wednes-day nights we have Kabob, grilled lamb orchicken and vegetable kabob served withbasmati rice and salad. And on Thursdaywe have our Lamb Shank. It’s sautéed withvegetables and spices and simmered inour special sauce. And on Friday we makeMoussaka. It’s a very good moussaka.

On Saturdays and Sundays we do chef’sspecials, so really anything we want to.Sometimes it’s fish, sometimes lamb stew,sometimes shrimp.

JM: What would you sug-gest people order whenthey’re coming for the firsttime?

FP: Oh, there’s so much —the fresh salmon is popular,and the salads and the appe-tizer platter with hummus andbabaganoush and dolmades,merguez sausage, feta cheese,olives, Greek fries, spanako-pita. Mussels are very good

too … but the most popular dish with-out a doubt is the Royal Platter. It’slamb chops and shrimp and Greeksalad and fries and hummus and pitabread, and it comes with baklava, too,for only $36. Truthfully it can feed twopeople, or three … I keep telling peo-ple ‘use your hands, enjoy the foodwith your hands.’

JM: You don’t have to sit here forlong to realize that The Fat Greek isvery much about good food and a re-ally fun atmosphere.

FP: Yes, what I want is for people to

relax, to really enjoy the food, to have fun andvoila! — just like we’re in Europe.

JM: And you never charge a corkage fee. Peo-ple can bring their own beer and wine for free.

FP: To be honest with you, I don’t see why theyshould pay. We give them glasses — what shouldthey pay for? They bring their own wines, theirown beer, they’re welcome to do that.

JM: Are you tired of people coming in and ask-ing to see the fat Greek?

FP: (laughs) No, but they do sometimes comeand look in the kitchen to see if there is a fatGreek in there, or they look at me and they say‘hey, you lost weight!’ It’s all good. As long as peo-ple are having a good time, enjoying the food,that’s what we want.

Jo,My husband and I went to a

restaurant recently where wewere seated and then ignored fornearly 15 minutes. No one pouredwater or even acknowledged ourpresence for the first 10 minutesor so. Finally a harassed waitercame by with menus but by thattime we had lost enthusiasm. Iwanted to leave before eating. Myhusband wanted to stay, saying itwould be embarrassing to get upand go. What would you havedone?

Hungry in Mililani

My first question is, why did

you wait so long? Fifteen minutes

is an eternity when you’re in

need of attention. When you

walk into a restaurant, you

should be attended to immedi-

ately, whether it’s a smiling host-

ess telling you there will be a

wait, or a busy server greeting

you with water to tell you that

he’ll be right back. You are in a

restaurant, a place where you

pay for service and food. Being

acknowledged is part of the deal.

I’m edgy after five minutes of

being ignored. I’m irritated after

10 and I am out of the restaurant

if it’s 15 minutes. But, if the

restaurant is busy and someone

takes a mere 60 seconds to come

by, say hello and take a drink

order, then I’m happy to sit and

wait patiently until the staff gets

out of the weeds.

Just last weekend I took my

boys to try a new sushi restau-

rant. Admittedly it was busy, but

crowded dining rooms are a per-

fect place for restaurant staff to

demonstrate their oftentimes

excellent skills.

We sat. We waited. There was

no menu, no water and worst of

all, no eye contact from the wait-

ers, who rushed by as if praying

all their customers would disap-

pear. We left after 12 minutes and

went to the Mexican restaurant

next door, where they smiled

and brought menus, chips and

salsa as soon as we sat down. It

wasn’t as fancy, but it was a

whole lot more friendly.

Ifirst met Anytime Café owner KenWong at Hong Kong Orchid Caféwhen the Asian café concept was

just beginning to become popular.Fast forward eight years or so, andWong is still hard at work incorpo-rating a contemporary taste ofHong Kong with current favorites inHonolulu.

“It’s a type of food that people inHawaii really like,” says Wong, whohas remained committed to keepingprices low and food quality highthroughout his restaurant career.“Right now, especially,” he says, “weknow that people are looking forgood value. We want to give themthat in a menu that has many differ-ent choices.”

You’ll find Anytime Café in MarketCity Shopping Center. With a mod-est exterior and a large, cool, con-temporary dining room, AnytimeCafé makes for a casually elegant

destination that’s parttrendy bistro, partAmerican coffee shop. Openfrom morning until lateevening, there’s an opportu-nity to eat almost anythingat almost anytime. “Weserve breakfast all day andnight,” says Ken, “and wehave everything: Americanfood, Chinese, Western,pizza, East meets West —lots of choices.”

Go for the noodles ifyou’re a fan of shrimp wonton and clear, complexbroths. The won ton pi anda variety of noodles areflown in from Canada,where the flour used resem-bles the kind used in Hong Kong.The result is a more delicate, lessstarchy noodle that allows diners tosee that shrimp dumplings atAnytime are fat and juicy. “We usethe big shrimp, the 21-25 count,”says co owner Cindy Wong, “andthen we cut them into three piecesand put one in each dumpling. Youcan see the shrimp inside the wrap-per. Many restaurants use mostlypork with their won ton — our poli-cy is more shrimp, less pork.”

Importing noodles along withArborio rice and dried pasta addsto the cost of ingredients, but it’s aprice that the Wongs feel is worth

paying. “The difference in the imported

ingredients is all about quality,”says Ken. “We use very good ingre-dients because we know that it’simportant to our customers.”

Despite ever-increasing costs,the menu at Anytime offers sur-prisingly low prices, and dishesthat incorporate local-stylefavorites Loco Moco ($9.50) andSalted Pepper Pork Chop ($6.95).Order the Shrimp Wonton Soup($6.95) and you’ll notice immedi-ately the delicate, near translucentnoodles, or choose from a varietyof noodles, dumplings or rice

broths, which include Fish Ball Noodle inBroth ($7.95), Beef Brisket and Tendon($9.50) or Boneless Chicken Rice Soup($6.95).

A house specialty well worth trying is theThai style Pork Cheek with Dipping Sauce,where tender slices of pork cheeks are mar-inated then sautéed and served with asweet-and-sour blend of Thai spices, lemongrass and chili peppers. The spicy dip com-plements the melting luxuriousness thatbelongs purely to fatty pork.

“We cook it in the Thai style,” says Cindy,“and it takes a little longer to cook becausewe make every dish to order.” It’s well worththe short (10- to 15-minute ) wait.

Anytime also offers the kind of large-por-tion pasta combination dishes you’d expectto find in an Asian fusion restaurant: BakedChicken and Mushroom with Spaghetti($10.50), Baked Seafood with Spaghetti($11.95), and Baked Pork Chop with FriedRice ($11.95) are examples of dishes thatcome with sides of soup or salad and garlicbread. The portions are more than enoughfor one hearty appetite with lots left over totake home.

There’s a long list of Vietnamese andHong Kong-style iced coffees, tea and jellydrinks, and a simple dessert menu thatincludes the newest sensation from Japan:snow ice.

And for those who miss theItalian-style specialties of risot-to and pasta that were favoritesat Anytime’s previous incarna-tion, Banana Leaf Italian Bistro,there’s good news.

“We kept the chef because hemakes such good Italian dishes,”says Ken. “Now we offerChinese, fusion, Italian andAmerican food from breakfastthrough dinner.”N a t u r a l l y,

they offer them any-time.

Sam Choy’s Breakfast, Lunch & Crab

With visitors traveling from across the

globe just to feast on some onolicious grinds

by world-renowned chef Sam Choy, it’s no

wonder I was champing at the bit for the

chance to sink my teeth into the savory

Fried Poke Wrap that already had me salivat-

ing at the mere thought of it. For only $13.95,

satisfy your desire for a fine local wrap con-

sisting of Choy’s famous fried poke with

chopped romaine lettuce and tantalizing

fried rice wrapped in a flour tortilla and per-

fectly complemented by wasabi aioli sauce.

General manager Jeffrey Gaspar says that

Choy has a signature style with poke, mak-

ing this item a top pick among returning

patrons. High in quality and quantity, this

dish also comes with fries. Needless to say,

with all of my favorite foods wrapped into

one hearty meal — I couldn’t resist a couple

bites.

For those on a healthier or perhaps vege-

tarian track, you may want to opt for the

Grilled Fresh Vegetable Wrap ($12.95), fea-

turing eggplant, portobello mushroom, red

Hokua location, says the Chicken Lettuce

Wraps are considered the signature appe-

“There’s chicken, mushrooms, water

chestnuts and a little bit of onions in a spe-

cial sauce atop a bed of sticky rice noodles,

with lettuce cups on the side,” Vazquez

states. The best part about this is that you

can add just as much filling to your lettuce

cup as you wish. I personally like mine

overflowing with flavor, and therefore add

a substantial amount. The cool crispiness

of the lettuce also offers a refreshing sur-

prise. A vegetarian version of the dish is

available as well, substituting tofu for the

chicken. All lettuce wraps can be prepared

gluten-free at your request.

For all you happy hour revelers, beginning

early next month P.F. Chang’s will expand its

happy hour time, from 3 to 6 p.m. Saturdays

and Sundays, and from 9:30 p.m. to closing

Fridays and Saturdays.

Ingredients:• 2 racks of lamb, cut into double

chops

• 3 tablespoons chopped green

onion (prefer the white part)

• 1 tablespoon whiskey

• 1 tablespoon sesame oil

• 1 tablespoon toasted sesame seeds

• 1 1/2 tablespoons hoisin sauce

• Pinch black pepper

• 4 cups mashed potatoes

• 4 cups sauteed vegetables

Preparation:• Cut and trim fat from the lamb rack

and then cut into double chops; set

aside.

• In a bowl, add green onion,

whiskey, sesame seed, sesame oil,

hoisin and pepper and mix together.

With your hands, squeeze the green

onions along with mixture to

release the oil from the onions

until onions soften. Use as a

marinade.

• Put the lamb into the bowl and

rub the marinade over the lamb

evenly. Let it sit for an hour mini-

mum or you can let it sit overnight

• On medium heat, grill your lamb

for a minute on each side. Put in a

preheated oven at 350 degrees for

about three to five minutes or

longer, depending on how you like

your lamb cooked.

• To plate the dish, put one scoop

of mashed potatoes and vegeta-

bles. Lean the lamb chops against

the potatoes to let it stand up.

Surround with the sauce and garnish

with a stem of fresh herb.

For the sauceIngredients:• 1 cup red wine

• 2 cups veal stock

• 1/4 cup brandy

• 1/4 pound unsalted butter

• In a sauce pot, combine red wine

and brandy, and bring to a boil to

reduce the liquid by half.

• Add veal stock and reduce the liq-

uid to quarter, then add butter to

thicken the sauce.
