measure+combine In a gallon-sized ziplock bag, measure and combine 2 C plain yogurt, ½ - ¾ C pumpkin puree, ⅔ C maple syrup, and 1 tsp ground pumpkin pie spice blend. Seal the bag well and have your kids mix and squish everything in the bag until its all smooth.

cool+fill Place the bag on ice to cool down for at least 10 minutes. Then, fill another gallon-sized ziplock bag halfway with ice. Then pour ½ C ice cream salt over the ice. Last, place the yogurt filled bag inside the other bag with the ice and seal.

wrap+shake Wrap the bag of ice with a kitchen towel to protect your hands and then take turns shaking the bag for about 5 minutes, until the yogurt mixture has reached a thick, nearly frozen consistency. Enjoy!

mix+stir Have your kids mix together 4 cups flour, 2 tsp baking powder, and 2 tsp salt. Then, stir in 2 cups plain yogurt and ½ tsp maple syrup until the dough is too stiff for a spoon.

knead+rest Knead the dough in the bowl until it holds together well, adding more flour if necessary. Then turn the dough out on a floured surface and cut it into about 12 pieces. Have kids continue kneading the small dough balls for about 5 minutes, until the dough feels smooth and elastic. Put the dough balls in an oiled bowl, cover with a damp clean dish towel, and set aside to rest.

press+oil+puff Have your kids press the dough balls flat into round discs - the thinner the better, about ¼ inch or less thick is ideal! Brush some olive oil on a hot non-stick skillet on the stovetop and coat each dough disc with olive oil. Lay the dough discs on the hot skillet one at a time, fitting as many as you can on the skillet at once without overlapping, and cook over medium heat for about 2-3 minutes. It will puff up in places or all over, and there may be some blackish-brown spots on the bottom. Totally okay! Slide a spatula under the flat bread and flip it, and cook for a minute or two on the other side, just until it finishes puffing up into a balloon and begins to color lightly on top.

The History of Hummus & Flat Bread! Hummus is actually the Arabic word for chickpea, called garbanzo in Spanish, ceci in Italian, and gram in India. Hummus is used through the Arab world. It started, presumably somewhere in the Middle East, mostly likely in Syria. The chickpea was used as food by our hunter-gatherer ancestors tens of thousands of years ago and was cultivated around 7,000 years ago in the Middle East.

Flat bread, also known as pita, is a round pocket bread widely consumed in many Middle Eastern and Mediterranean cuisines. The “pocket” in pita bread is created by steam, which puffs up the dough. As the bread cools and flattens, a pocket is left in the middle. In Israeli and Palestinian cuisine, it is the custom to eat almost everything in a pita, from falafel, lamb, or chicken shawarma and kebab, omelets such as shakshouka (eggs and tomatoes) and hummus and other salads.

The surprise ingredient of the week is: Pumpkin! ★ Pumpkins are fruits! More specifically, they are winter squash in the family Cucurbitacae, which

includes cucumbers and melons. They grow on vines on the ground. Each pumpkin has about 500 seeds and takes about 90-120 days to grow. The flowers of pumpkin plants that precede the fruit are edible.

★ Pumpkin contains potassium and vitamin A. They also have more fiber than kale and are full of heart-healthy magnesium and iron.

★ Pumpkin pie originated in the colonies. However, in early colonial times, pumpkins were used as an ingredient for the crust of pies, not the filling. Colonists would cut the tops of pumpkin off, remove the seeds, and fill the pumpkins with milk, spices, and honey, and bake them in hot ashes.

★ There are over 45 different varieties of pumpkin. They range in color like red, yellow, and green, and have names like Hooligan, Cotton Candy, and Orange Smoothie.

★ Over 1.5 billion pounds of pumpkin are produced each year in the United States. The top pumpkin producing states are Illinois, Indiana, Ohio, Pennsylvania, and California. Pumpkins are also grown on every continent except Antarctica.

★ The world’s largest pumpkin was more than five feet in diameter and weighed over 1,800 pounds! It was presented in Minnesota in October 2010.
