Learn how to make a tasty, healthy and nutritious meal featuring Australian native ingredients. Based on a popular family dish lovingly prepared by Clint Kupmurri. The delicious recipe features BBQ Emu skewers with Macadamia Nut satay, damper and coleslaw with spiced mayonnaise dressing.

Join Blair as he demonstrates the skills that got him into My Kitchen Rules. Like most blokes, the barbecue was the sole focus of his culinary skills. The kick-start he needed to get into the kitchen and become more creative with cooking came when he started to travel.

Family Recipes1 tbs olive oil1 brown onion, chopped2 garlic cloves, crushed800g can Woolworths diced tomatoes1 tsp dried chilli flakes1 cup Kalamata olives2 tbs baby capers, rinsed4 Woolworths chicken breast fillets1/4 cup Woolworths flat-leaf parsley leavesgreen salad, to serve8 mini slider buns

12 Old El Paso Stand and Stuff Mini Tortillas3 cups shredded iceberg lettuce2 tomatoes finely chopped1 cup grated tasty cheese420g can Beanz Creationz™ Medium Salsa Chilli Beanz1 tsp olive oil400g lean beef mince

3 cups rolled oats1/4 cup sesame seeds1/4 cup sunflower seeds1/4 cup pepitas1/4 cup shredded coconut1 cup finely chopped dried apricot1/2 cup honey1/2 cup hulled tahini1/3 cup light olive oil

1. Preheat oven to 180°c. Heat oil in an ovenproof pan over medium heat. Cook onion and garlic for 5 minutes or until tender. Stir in tomatoes, chilli flakes, olives and capers and bring mixture to the boil. Add chicken to pan, covering with sauce.

2. Transfer to oven and bake for 20 minutes or until chicken is cooked through. Sprinkle with parsley and serve with salad.

Tip:

Double the recipe and freeze half for up to 1 month. Reheat, shredding the chicken, and use as a filling for enchiladas.

1. Heat oil in a large non-stick pan and cook mince for 5 minutes, or until well browned.

2. Add beanz creationz™ medium salsa chilli beanz and simmer for 3 minutes. Season to taste.

3. Place a spoonful of chilli bean filling in the base of each warm mini tortilla.

4. Sprinkle with a little chopped tomato and top with shredded lettuce.

5. Finish with grated cheese and enjoy immediately.

Tips:

Select an iceberg that is heavy for its size, with fresh looking leaves that are firm to touch.

1. Preheat oven to 160°c. Line an 18cm x 28cm pan with baking paper.

2. Place rolled oats, sesame seeds, sunflower seeds, pepitas, shredded coconut and dried apricot in a large bowl.

3. Place honey, hulled tahini and light olive oil in a small saucepan and stir over medium heat until melted.

4. Pour honey mixture over oats and stir thoroughly. Pour mixture into prepared pan, smooth top and press down firmly. Bake for 30 minutes.

5. Leave to cool. Chill for 30 minutes, before cutting into bars. Store in an airtight container in the fridge.
