A very warm welcome to the April / May edition of the Gonerby Gazette.

Springtime is finally here and how wonderful it is to see our gardens and countryside bursting into life again.

Spring always feels like the New Year has really begun, with longer days and more time to spend on activities. The Easter holidays are around the corner and full of possibilities; Spring is the time of plans and projects. Serves 4

12-16 small-medium new potatoes,

unpeeled

2 tbsp. olive oil

1 tsp. paprika

Heat oven to 200°C/fan 180°C/gas 6.

Boil the potatoes for 10 mins, then

drain well. Arrange on a baking sheet,

then crush each one lightly with a

potato masher. Drizzle with olive oil

and sprinkle with paprika, sea salt and

freshly ground black pepper. Bake for

20 mins un�l crispy.

Beware – Japanese

Knotweed

Japanese Knotweed (or Fallopia

japonica) is an invasive plant that

grows up to three metres tall with

lush green heart shaped leaves.

The fastest growth is during the

spring.

The new shoots that emerge are red/ purple and can look like asparagus spears. In

late summer, small clusters of white flowers will appear.

The stems are hollow and bamboo like.

Why is it a problem? Owners of land with the plant have a legal duty to remove it, or they could be

prosecuted.

This can lead to a fine or custodial sentence of up to two years.

Japanese knotweed can:

• Cause significant and extensive damage to property

• Result in a reduc�on in the value of your home

• Prevent you from securing mortgage (banks oLen refuse to lend against

a property with Japanese Knotweed un�l a treatment plan is in place.)

Beefy Pesto Peppers

Here is a lovely recipe which can be cooked any�me of the year as you

can serve it with any type of salad and fresh bread, or if you prefer with

chips!

350g minced beef

1 onion finely chopped

1 clove of garlic crushed

1 tbsp. of tomato puree

1 tbsp. plain flour

300ml beef stock

Salt and pepper

150g green beans, topped, tailed and

cut in half

4 red peppers

4 tbsp. pesto sauce, red preferably

1. Preheat oven 200°C/400°F/gas 6. Put mince, onion and garlic in a

pan to brown for about 5 minutes.

2. Add the tomato puree and flour, gradually s�r most of the stock

in and bring to the boil. Simmer for about 15 minutes un�l thick,

season with salt and pepper set aside.

3. Cook the beans for 5 minutes and drain well, s�r into the beef

mixture.

4. Slit the peppers from �p to stem leaving the stalk in place,

remove the seeds and core, fill each with the beef mixture, stand

in a baking tray or oven proof dish, pour the remaining stock

round the peppers and top the meat with a tablespoon of pesto

sauce.

5. Bake in the oven for about 30 minutes un�l tender, serve straight

away.

This can be frozen, wrap in foil at end of step 4, thaw overnight in the

fridge and when ready to cook follow above �mings. You can use red,

yellow or orange peppers, green ones are not as sweet.

What is a food demonstrator? In my case, I’m terrifically lucky and it can mean anything I chose…… any job, food related. l This all started with my own business teaching students and any age of person to make bread. 15 years on; experience and travel have broadened my teaching to all aspects of food. I teach at Denman WI College, Oxford, numerous food festivals and county shows, large events like Hampton Court Palace to one on one private courses; WI presentations (it’s my ambition to be a speaker at a WI AGM, Albert Hall). Coming from a sport and nutri�on background, I value simple, healthy food and want to

empower people to get into the kitchen and cook. I’m fortunate to have teamed up with

Diana Thompson, of Manor Farm Cookery School, whom has the same keenness to promote

kitchen confidence at her wonderfully equipped and beau�fully located country, Cookery

School. The courses cater to all skill abili�es and all ages. Perfect. As my greatest job

sa�sfac�on comes from giving someone the confidence to get in their kitchen and cook.

Manor Farm Cookery School is the closest Cookery School to the Gonerby GazeQe area and

most certainly worth considera�on if you’d like to be more comfortable in the kitchen or

wish to expand your culinary wizardry.

I have worked with celebrity chefs and local producers alike; judge at the World Bread

Awards, and Bri�sh Pie Awards, as well as a regular contributor to local radio and

magazines. Do get in touch if you’d like to know more; and in the

mean�me I’d like to share a seasonal bread recipe for Hot Cross Buns.

Hot cross buns

300g strong white flour - or use 200g strong white/100g wholemeal 2.5ml sea salt 5ml mixed spice 5ml sugar 5ml malt extract 10g fresh yeast 150ml milk/water 1 egg 75g mixed dried fruit, soaked in tea for one hour

For the crosses: 50g flour 50ml water (1 egg and a little water to make an egg glaze – use prior to baking) Weigh the flour into a large mixing bowl, add all the ingredients

and mix to form a dough. Knead for 3-5mins, until smooth and elastic. Return the dough to the bowl and cover with a tea towel for 2hours. Alternatively, the dough can be transferred to a plastic, lidded box and put in the fridge to rise over night.

When the dough has doubled in size turn out onto a work surface

and roll into a thick rope and cut into 10 or 12 equal pieces. Now roll each piece into a tight ball. Lay the buns onto an oiled baking sheet, leaving space for them to prove and double in size.

Meanwhile make the flour and water paste for making the

crosses, and mix a little water with a pinch of salt and a beaten egg to make the egg glaze. After 20mins mark a cross on each bun, using the back of a knife, then brush with the egg glaze. Using a piping bag or snip the corner off a freezer bag and pipe crosses with the flour/water paste. Bake at 200ºc for 12-15mins.

From the oven, transfer the buns to a wire rack to cool. It’s an optional extra to brush with runny honey and give the Hot

Cross Buns a wonderfully glossy and sticky glaze.
