Where do you draw inspiration from when developing recipes?
Ilovetoeatout,whichisagreatsourceofstimulus,aswellasbeingakeenreaderoffoodandfood-relatedbooks,andalisteneroffoodpodcastsfromaroundtheworld.Observingwhatishappeningontheinternetisagreatwaytospottrends,aswellaskeepingupwiththebroaderfoodmedia.WhenIhaveabriefforrecipedevelopmentIwillalwaysvisitmylocalfreshfruitandvegmarketsandtakeinspirationfromthefreshproduce,intertwiningitwithnewideasandintegratingtrends.

What trends have you noticed are emerging in the health scene?
Noonecanfailtonoticetheriseandriseofplant-basedeating.Evenifyouarenotafullycommittedvegan,excludingallanimal-basedproductsfromyourdietoravegetarianomittingmeat,manypeople(‘flexitarians’and‘reducetarians’)areincludingatleastafewplant-basedmealsintheirdieteveryweek.Healthconcerns,worryaboutanimalwelfareandawarenessofenvironmentalfactorsareallcontributorstothistrend.Thehealthscenenaturallyincludesdifferentfoodtrendsandthedietandlifestyleswefollow.Low-carbeating,paleo,ketoandintermittentfastingcontinuetobepopular.Consumingmoreleafygreenvegetableandlower-carbstarchyfoods,suchassweetpotatoisacceptedasbeingbetterforyou,alongwithincludingplentyofwholegrainsandgut-friendlyfermentedfoodslikekimchi,kefirandkombucha.Ingredientsthataregainingtractionincludeyoungjackfruit(atropicalfruitthathasafibrous‘meat-like’texturewhencookedandiswonderfulatabsorbingflavours),aquafaba(seebelow),variousseaweedsandmeatsubstitutes,notonlymadefromsoy,butalsomadefromseitan(gluten-based)andpeaproteins.

Is there any additional complexity into converting from cooking with animal products vs. plant based?
Itneednotbecomplexwhenconvertingrecipestomakethemsuitableforeveryone.Therearesomanybrilliantandreadilyavailableplant-basedalternativesthatfunctioninasimilarmannertotheirmoretraditionalcounterparts.Replacementsforanimalfatsrangefromcoconutoiltooliveoil,nutoilsandricebranoil(afavouriteofmineforfrying).Ialsoloveavocadooil.Aquafaba(theliquidleftoverfromcookingchickpeasandbeansusedasanemulsifyingagentandeggwhitesubstitute)isoneofmymuch-lovedingredientsatthemomentformakingsilkymayonnaiseandmeringues.

Afewyearsbackthevegetarian/veganoptiononamenuwaseitheragrilledvegetablestackwithabitoftofuifyouwereluckyorrisottoprimavera.Itiswonderfultoseethatmenushaveexpandedgreatly!I’veseenfiguresthatsuggest25%ofconsumersarechoosingveganandvegetarianoptionsfrommenus,sobymyreckoning,atleast25%ofthemenushouldbeabletoaccommodateplant-basedoptions.Iliketothinkoftheseoptionsasjustreallygoodfoodwithgreatvariety–thatjusthappentobeplant-based.They’regreatforeveryone.
What has been your favourite dish you’ve created with the wedges?
Ooh,that’satrickyonetoanswer.Idolovethebowls,withtheircombinationsofcrunchysweetpotatowedgesandthefresh,lightingredients,butIreallyalsoenjoythecomfortingcombinationofthewedgeswiththecaramelisedroastedbrusselssproutswithlusciouscashewcream.Oh,andwhataboutthechipotleaquafabawiththewedges–todiefor!
What is the most outrageous/creative sweet potato dish you’ve seen/tried?
I’vethoughtaboutcreatingadessertdishwiththesweetpotatowedges.Freshlycookedsweetpotatowedgestossedincinnamonandstaranise-spicedsugar,servedwithadeliciousscoopoforangecinnamonicecreamandadrizzleofcaramelorbitterchocolatesauce.Yum!
