Sorbets1. Combine all ingredients with the exception

of purée and bring to a boil.2. Cover and let sit for 6 hours in refrigerator.3. Combine mixture with the purée using

a hand blender.4. Place into ice cream machine

and freeze.

Fruit Glass:1. Using a hand blender, combine the purée (1.2 oz/550 g), one

scraped vanilla bean, and agar (0.3 oz/10 g) in a medium pot. Then add the sugar (7 oz/198 g) and glucose (3.5 oz/100 g). Mixing constantly, bring the mixture to a boil.

2. Pour the mixture into a shallow container, and refrigerate until fully set and chilled.

3. Blend the set mixture in a chilled high speed blender until a smooth purée is obtained.

4. Add the maltodextrin (3.5 oz/100 g), and continue to blend until dissolved.

5. Spread the gel in a thin sheet on lightly greased acetate, and dehydrate for 24 hours.
