HK project managed the fit out including walls, electrics, lighting and decorations. The kitchen is executed in 3mm seamless stainless steel from goods, pastry and preparation, production to service with a 4 metre pass. LED illumination removes shadows with radius profiling throughout. The front of house operation is equal in execution with a bespoke still area and new dish and pan system. Manufactured in sections, the seamless fabrication adds value to the food process, removes opportunity for ingress, providing the restaurant with a built for purpose kitchen theatre. “Turning round this project quickly was an imperative consideration, so the project team worked through the night to ensure the project was executed.” Rupert Rowley Rupert and HK designed a ‘tasting bench’, allowing the diners a full kitchen experience at the pass, providing a vantage point of the kitchen operation. “The new kitchen has provided us with a more efficient work space and, in addition, a Tasting Bench enabling guests to dine in the kitchen. The twenty-five year old kitchen fell short of the chef team’s standards and was in need of upgrading. Rupert enlisted HK, who following a review of HK’s installations at Sheffield City College and Sheffield Hallam University produced the design brief. Consideration had to be given to the restrictions imposed on the Grade II listed building with development of the design influenced through appraisal of the kitchen processes alongside new equipment innovations. Using 3D visualizations, HK presented the new concept to Susan and Rupert before being appointed to design and execute the turn-key project.

Rupert wanted the kitchen to be robust, reflective of the quality of the venue and food service standards. Given the business had not closed for twenty-five years, the new kitchen needed to be flexible, heat and energy efficient, have longevity, durability and designed to enhance operational value, streamlining processes, and completed with minimum down time to business.

THE BRIEF

Max & Susan Fischer established Fischer’s at Baslow Hall in 1988 creating “Restaurant with Rooms”. Retaining its Michelin award since 1994, the restaurant is currently ranked 41 in the Good Food Guide Top 50 Restaurants. Head Chef Rupert Rowley combines classic favourites with modern combinations using ingredients sourced from Baslow Hall’s own garden as well as local farms.

BACKGROUND

“Initially we anticipated a partial upgrade because of financial limitations, but after discussions with Jason Fish, who put forward various options, we decided that we could undertake a complete reorganization and modernization of our kitchen.”
