Sandra McClintock studied agrology and came back to the family farm determined to create a career in dairy. Gary Rolston, the former ag consultant who played a role in many farm ventures before his untimely death in 2015, suggested Sandra try something unique; a water buffalo dairy.
Although relatively new to the Comox Valley, water buffalo dairies are part of an emerging food trend. On the epicurean side, Italian-style mozzarella and bocconcini are traditionally made with water buffalo milk. On the health side, water buffalo milk, while higher in fat, is much lower in cholesterol than cow’s milk.
Sandra enjoys her herd. The animals are friendly, curious, and docile. And in a few short years they’ve grown from 15 calves and 1 bull to over 50 head. When the dairy first starting producing, Natural Pastures in Courtenay was buying all the milk, but once the McClintock herd grew to over 50 head, Sandra had enough milk to launch a new product; water buffalo yogurt. This partnership continues with the yogurt being produced at the Natural Pastures facility as well as the buffalo cheeses.
Because the milk is naturally rich and white it produces an outstanding product; mild in flavour, and creamy in texture. Its texture and taste make it a very versatile yogurt for both sweet and savory dishes.

INGREDIENTS: 2 - 4 eggs* ice for ice bath
DIRECTIONS: Remove eggs* from the refrigerator. With a pushpin poke a hole in the narrow end of the egg - this makes it easier for peeling.
Fill a large bowl 2/3 full with ice, and then fi ll the bowl with water.
Fill a pot with enough water to ensure the eggs will be completely covered by 1-inch. Bring water to a boil.
Using a slotted spoon gently lower the eggs into the boiling water and set the timer for exactly 6 minutes and 35 seconds. NOTE: It’s important to keep the water at a gentle boil. If a little white seeps out, don’t worry, it happens.
When the timer goes off, using a slotted spoon immediately transfer the eggs* to the ice bath – this part is imperative for the perfect soft-boiled egg. Let cool and peel.
Serving suggestion: Slice egg onto a piece of toasted fresh bread*, sprinkle with sea salt* and enjoy!
Chef’s note: Soft boiled eggs are also delicious with pasta, ramen, salads, soups, curries and more. A simply perfect soft-boiled egg is very versatile! *available at vendor stalls

INGREDIENTS: 2 - 4 eggs* ice for ice bath
DIRECTIONS: Remove eggs* from the refrigerator. With a pushpin poke a hole in the narrow end of the egg - this makes it easier for peeling.
Fill a large bowl 2/3 full with ice, and then fi ll the bowl with water.
Fill a pot with enough water to ensure the eggs will be completely covered by 1-inch. Bring water to a boil.
Using a slotted spoon gently lower the eggs into the boiling water and set the timer for exactly 6 minutes and 35 seconds. NOTE: It’s important to keep the water at a gentle boil. If a little white seeps out, don’t worry, it happens.
When the timer goes off, using a slotted spoon immediately transfer the eggs* to the ice bath – this part is imperative for the perfect soft-boiled egg. Let cool and peel.
Serving suggestion: Slice egg onto a piece of toasted fresh bread*, sprinkle with sea salt* and enjoy!
Chef’s note: Soft boiled eggs are also delicious with pasta, ramen, salads, soups, curries and more. A simply perfect soft-boiled egg is very versatile! *available at vendor stalls
