Description of ovens• Built of various modular elements they are easy to

assemble and guaranteed by many years of activity and research regarding prefabricated wood-burning ovens and refractory materials.

• They are carried out in special refractory mortar.

• Their resistance is guaranteed up to 1000° C. The door (with hinge) is carried out with the same mixture and framing in homogeneous iron.

It offers maximum economy, perfect cooking and is very clean.

The oven can be heated ready for cooking with only 15 kg of wood

Practical advice for its good functioning

Any type of wood can be used to heat the oven. The oven will be ready for cooking when, after being turned on, it first becomes black inside and then white and thermometer sigh the right temperature .

• The “PIZZERIA” system. With a hot oven and open oven door, you leave a little burning wood on one side of the oven. On the other side you cook the pizza, foccacia, bruschetta etc. directly on the oven’s cooking surface.,

• The “PANIFICIO” system. You heat the oven to the desired temperature, burning all the wood inside. You put the food that is to be cooked in the oven, close the door and wait until it is cooked. With this system you can cook roast meats and fish, bread, whole roasted pig and pastries.

Approximate cooking times Pizza: about 10 minutes – Pies and tarts: about 20 minutes –

Cakes: about 20 minutes – Cannelloni: about 20 minutes - Lasagne: about 50 minutes – Bread: about 70 minutes –

Roasts: about 80 minutes.

There is nothing better than the delicious aroma and taste of a freshly baked pizza, but that flat thing covered in gluey cheese and synthetic sauce you pulled out from the supermarket freezer doesn't count! Connoisseurs agree that only pizzas cooked over a wood-burning fire are true pizzas. The smell and flavor imparted by the smoking wood is as essential as the tomatoes, cheese and basil.

Di Fiore Forni Pellet burner Our oven will use solid wood pellet , look similar to conventional wood burners, but they offer a lot more control over how much

heat is produced and when. They are a very environmentally friendly and clean burning heating option.

Benefits of pellet burners: Pellet burners have low emissions and provide convenient, easily controllable heating. Most units have a

remoter control, thermostat .

Gas burner

Gas BurnersAvailable for assembly on new ovens or retrofitted onto existing ovens, the gas burner increases productivity and reduces time and running costs. It can work alongside or even substitute for the normal wood combustion.

This unit is smaller and lighter while maintaining the same features and characteristics as a traditional oven. It quickly reaches cooking temperatures so that the first pizza can be cooked in 30 minutes. The oven dome is made in prefabricated refractory material (firebrick) thus allowing bread baking and larger roasts. The frame and metal surround are galvanized.

A wheeled base is available as an option.

The traditional wood-burning oven in refractory material, with external lining in galvanized steel, enamelled and insulated, maintains the temperature for a long time. It is easily transportable on wheels for being positioned in the open, in a garden or on a terrace or inside connecting it to the house’s chimney. It is easy to clean thanks to the valve for the disposal of the ashes.

The Cupra oven has been designed for easy positioning in the garden and is composed of 2 elements: 1)The upper part with the oven – it includes a small roofand chimney cap and insulation.
