Culinary History: A Historical Review of Master Chefs

National ACF President

Dr. Chef Noel C. Cullen was inducted posthumously in the Acad-emy of Chefs Hall of Fame at the American Academy of Chefs recognition dinner. The induction ceremony took place August 3 during the American Culinary National Convention at the Anaheim Marriott Hotel. Induction into the American Academy of Chefs Culinary Hall of Fame is the highest honor an Academy Fellow can receive.

I first met Chef Cullen at Johnson and Wales University in 1990. It was a guest of the University at the time and accidentally intruded on a lecture Noel was presenting to fellow culinary colleagues. Impressed with his presentation, I remained throughout the re-mainder of the lecture.

Noel began his culinary apprenticeship at thirteen in Ireland and came to the United States in 1987 and developed his culinary skills that lead him to Certified Master Chef Status. He earned a Doctor of Education degree from Boston University placing him in the unique position of holding an earned Doctor of Education de-gree and Certified Master Chef Status.

Noel’s remarkable resume reads Honorable Order of the Golden Toque, Les Amis d’ Escoffier Society, La Chaine des Rotisseurs, Certified Master Chef, etc. Chef Cullen amassed at least forty-

five distinguished culinary awards including seven Olympic awards. The Chef was a recipient of numerous awards such as ACF 1995 National Educator of the year. He earned a Gold medal at the Culinary Olympics. He managed the Olympic team three consecutive years accumulating 22 gold medals.

Dr. Cullen was elected National President of the American Culi-nary Federation in 1997 at the Federation’s Annual Convention in Atlanta, Georgia, serving two consecutive terms.

As in the Man of La Mancha, the National ACF President, Chef Cullen, harbored a dream to see all professional culinary organi-zations under one umbrella. “There needs to be an amalgama-tion of cooking professionals.”

I remember Chef Cullen to be a unique ACF National President. He was an accomplished culinary oriented author, educator, culi-narian, leader and most of all, a friend. He distinguished himself via his unpretentious persona, culinary savoir faire that com-manded respect from colleagues, students and all those that had the good fortune of having interacted with him.

Like numerous other ACF units across the nation, individual chap-ters encounter occasional periods of “ waning interest amongst local ACF chapter members” difficulty holding on to members, recruiting new members, organizing certification classes, etc. This writer recognized a need to re-energize our local chapter. “I took it upon myself to invite ACF National President to our annual scholarship event” to render the National Board of Directors aware of other ACF dues paying affiliates that would appreciate a little national limelight.

The rest is history. Three hundred plus guests attended the eve-ning event; a huge and memorable success. Our chapter blos-somed once again.

Chef Cullen attended our Scholarship dinners on two occasions and looked forward to a third time. He harbored a dream he was never able to fulfill.

Coffee May Reduce Adult Onset Diabetes

A new Finnish study with more than 14,600 people,

published in the March 10, 2004 issue of JAMA,

shows that women who drank three to four cups of

coffee daily had a 29% reduced risk of adult onset dia-

betes. With 10 or more cups a day, their risk was re-

duced by nearly 80%. Among men, three to four cups

lowered their risk by 27%; a 55% reduced risk was

associated with consumption of 10 or more cups.

The findings from the National Public Health Institute

(Helsinki) are similar to results from other recent stud-

ies. This year, Harvard researchers noted that a study

with 125,000 people found men who drank six cups a

day cut their diabetes risk by half over 12 to 18 years,

while women who drank that amount had a 30% low-

ered risk. A recent Dutch study also found similar ef-

fects.

The study's authors said the reasons for the apparent

beneficial effects remain unclear, though it was possi-

ble that chlorogenic acid in coffee may indirectly help

regulate blood glucose levels. It is also well docu-

mented that caffeine stimulates insulin secretion by

the pancreas, the report said.
