The holidays can be an important time of year for all small companies, and you want to make the most of this busy and stressful time.

If you’re in retail, a good portion of your entire annual sales may depend on how you do the next few weeks. But in every industry, the holidays present unique challenges and opportunities.

1. Party on! These parties present a great opportunity to network; meet potential new clients or referral sources for the New Year. If you need to build your business (and who doesn’t?) attend as many parties as you can and bring your business cards.

2. Send holiday cards. The holidays give you a perfect excuse to stay in touch with current and past customers. Send-ing a holiday card is a relatively easy and inexpensive way to remind someone about your business.

3. Give Gifts. The holidays are a great time to remember and thank those who help your business thrive. One of the nicest ways to show you appreci-ate what they’ve done is with a gift. It doesn’t have to be elaborate; for the small businesses, send chocolates or candies. Don’t forget those who help you every day.

4. Create holiday specials. Aren’t those gift baskets you see enticing? You can create them for your business too, even if you have a service business. If you do sell products, you can purchase gift baskets to wrap a number of items together. If yours is a service business, consider adding related physical prod-ucts to make the gift more tangible.

5. Offer gift certificates. Do you sell gift certificates? Why not? Even if you’re in the carpet cleaning business, some-one might purchase a rug cleaning as a gift for a friend or family member. If this is your slow season, one way to increase cash flow now is to offer customers gift certificates at a discount; regular cus-tomers can buy them to use later, pro-viding you with an infusion of cash.

9. Provide Online Coupons If you’re still stuck in the newspaper-insert or direct-mail rut, it’s time to start thinking about online coupons. More than 88 million consum-ers (47 percent of Internet users) planned on using online coupons in 2011. Retailers should look to couponing hubs for fast and targeted distribution to a wider audience.

10. Start Now! According to an article in USA Today, a National Retail Federa-tion study found 37 percent of consumers planned on beginning their holiday shop-ping before Halloween. As a result, you’ll have to compete against major merchants already rolling out their Christmas cam-paigns. Shoppers can procrastinate; you can’t.

6. Build your cash reserves. The holi-days represent one of two extremes for many businesses: either it’s the busiest time of year or the slowest. If you get a significant amount of your income now (or you’re having a particularly good year), give yourself a gift and put money in a reserve account. You’ll appreciate having that money come Spring or Summer when business is slower.

7. Recognize ALL holidays NOT JUST Christmas. Make certain you are sensitive to a broad spectrum of customers.

8. Finally, keep your priorities straight. No matter how busy you are, don’t get totally distracted by work. Remember the things that are really important: family, friends, community, and you. Spend time with those you truly care for and give to those who are less fortunate.

special day. This is one of my many can dos and always willing to help out.

I also currently maintain 16 websites as a Freelancer called CarriesKreations. I love to be able to design and create.

I’ve been privileged to meet a lot of won-derful people in San Tan Valley. With me what you see is what you get. I consider myself honest, reliable, loving, outgo-ing, and I have a great personality. I do not involve myself in elementary drama or gossip. I’m here to raise my kids and hopefully build a successful business. I created a Facebook group page called the East Valley Homebased Business group on June 26, 2012 and within 24

hours the group had 258 members. I never in a million years would have imag-ined a group of close to 500 members. I just wanted to reach out to others in the same situation I am in. On July 6th I was asked to help organize a vendor mixer, was going to be 6 women showing off their products (like a Tupperware party) well it ended up being 62 vendors at the Poston Butte High School Gymnasium. We now have two events coming up: November 3, 2012 from 9-3pm called the East Valley Business & Craft Fair and December 15, 2012 from 9-3pm called the SANTA Valley Holiday Business & Craft Fair. Both events will also be held at the Poston Butte High School Gym-nasium.

This leads to the Magazine you are now viewing. As a home-based business, funds are very tight. I spend most of my

business funds on product, and I can barely afford the high priced newspa-per Ads, or radio commercials. So I have created the East Valley Business Maga-zine also known as EVB Magazine. Born in Frankfurt, Germany (Army Brat, daughter to a Sargent Major, whom is in Afghanistan as we speak, granddaughter to an Air force Vietnam Veteran) raised in practically every Army base known, but my true home is New Jersey. It fits PERFECTLY!”

Mother of three wonderful children, and wife of eleven years. I moved to Johnson Ranch in 2006 from Dallas, Texas. To be honest looked really close on the map to where my family in Gilbert currently reside. A work transfer and having family out here in Arizona landed me in San Tan Valley and has been my home ever since. At first it took some getting used too, HUGE city to a one-way-in, one-way-out, one gas station “town” (at the time). I eventually got used to it and I truly love it out here.

I organized many events in Dallas, and seem to have an “act” for it, pretty much comes naturally to me. I really enjoy working with others and help create their

Difference is we don’t have the huge overhead that comes with renting the vacant overpriced slim picking “bou-tique” buildings out here in STV. I personally would love to have my own boutique someday. Who knows maybe someday I will.

I do know this, I WILL NOT GIVE UP. I always try to remember everyone you meet, talk to, smile at, or associate with IS A POTENTIAL CUSTOMER, treat others as you want to be treated, kindness and honesty keeps you and the people that you surround yourself with hopefully the same. If not…. at least you know YOU were!

Eggnog CupcakesYield: about 18-20 cupcakes

For the cupcakes:1 1/3 cups all-purpose flour¼ tsp. baking soda½ tsp. baking powder½ tsp. salt¼ tsp. freshly ground nutmeg¼ cup dark rum or bourbon (optional)1 cup eggnog¼ cup vegetable or canola oil1 tbsp. apple cider vinegar1 tsp. vanilla extract1 cup sugarFor the frosting:20 tbsp. unsalted butter, at room temperature2½ cups confectioners' sugar, siftedPinch of saltPinch of freshly grated nutmeg2½ tbsp. eggnog1 tbsp. dark rum (0ptional)For garnish:Ground cinnamon or grated nutmegCinnamon sticksDirections:

Directions:To make the cupcakes, preheat the oven to 350˚ F. Line cupcake pans with paper liners. In a medium bowl, combine the flour, baking soda, baking powder, salt and nutmeg; whisk to combine. In the bowl of an electric mixer, combine the rum, eggnog, vegetable oil, vinegar, and sugar. Beat on medium-low speed until well blended. Add in the dry ingredients and mix on low speed just until incorporated.

Divide the batter between the prepared cupcake liners, filling the cups 2/3 full. Bake 22-24 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan 5 minutes, then transfer to a wire rack to cool completely.

To make the frosting, place the butter in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium-high speed until smooth, 20-30 seconds. Add in the powdered sugar, salt and nutmeg, and mix on medium-high speed until incorporated and smooth, about 1 minute. Scrape down the sides of the bowl. Add in the eggnog and whip on medium-high speed until light and fluffy, 4 minutes. With the mixer on medium-low speed, blend in the rum.

Fill a pastry bag with the frosting and decorate the cooled cupcakes as desired. Sprinkle with ground cinnamon or grated nutmeg, and garnish with cinnamon sticks if desired.

Fran Shaffer is the owner and founder of ‘SWEET-errific!!’

Fran is from Huntington Beach, California and moved to Arizona back in 2005. She is married and also the mother of two sons. Having grown up in a large Italian family, it is apparent she was taught at a young age how to bake and cook.

“I always loved to help my mom and grandmother in the kitchen, preparing food for family dinner on Sundays after church, or on Holiday’s (those were always my favorite time to help out on all the sweets and treats we would bake.) As I got older and started my own family traditions of baking and cooking, it always reminded me of the fun I had and how happy I was being in the kitchen as a child.

When I bake, my inspiration is always remembering those days with my mom and grandmother.” Fran had been baking since she was very young and if you ever have a chance to try one of her amazing sweet treats you can tell that she has had MANY years of experience. “I have always been told by friends and family that my desserts are awesome and I should sell them. After some convincing from my wonderful husband to stop working and pursue my dream of one day opening my own bakery. With a leap of faith and a smile from my husband, several months ago I started the process to open my online bakery from home. I introduced it at the East Valley Business Expo, and received rave reviews. My bakery business started to bloom, and with an unexpected turn, I was introduced to a wonderful lady, Palma Riccobono.

She owns her own bakery in Queen Creek, and asked me to work with her and sell my treats in her bakery. With an open mind and the warmth in my heart, I decided to take one more step towards my dream of owning my own bakery.”

Stacey Tardif, who owns Sweetie Peaz Frozen Yogurt (along with her husband Dan) worked in property management previous to purchasing their business. She was inspired to open because she just wanted to work somewhere where people were happy to see them, not wanting to complain. “I have the best job in the world. People come to celebrate their birthdays, wedding proposals, graduations, first days of kindergarten. It really is good stuff, “expressed Stacey.

Stacey continues, “Our business is unique in that we really do strive to provide the highest level of customer service while having one of the cleanest frozen yogurt stores around. We also love supporting the community through fundraisers. Being locally owned and operated, this is our community too and we want to see it be the best!”

When asked what is the businesses “claim to fame?” she simply stated, “We only offer cool things, LOL! Honestly, everyone has a different love! Whether it is cake batter (my personal favorite) with Reese’s or fruit or the sorbet or plain old vanilla, we can find something for everyone!”

We sell EMT clothing, Litmann scopes, blood pressure cuffs, a vast plethora of medical supplies, jewelry, hand painted wine glasses, salt lamps, shoes, candles, sunglasses, luggage, knives & jewelry boxes/holders. And, if that’s not enough we got bling baby, purses, belts, body jewelry and much, much more.. We also do silk screening and embroidery! If you can’t find it here, then we can get it for you. We are open seven days a week for all your shopping needs. Our hours are Monday-Saturday, 10AM-7PM and Sundays, 11AM-5PM. Sitting at home while the kids are at school and the hubby is working monday through Friday finally caught up to me. I was lonely, lazy and going absolutely crazy. I decided that there must be SOmETHING I can do to fill my time, productively and creatively. One day I felt compelled to post a status on Facebook, simply stating, “I need to fill up my calendar! I am so bored!”

I don’t recall how much time passed before I found my “calling.” After a lot of weeding out bogus opportunities and endless “get rich quick” emails I had finally met my match. Local San Tan Valley resident Diane Haskins to the rescue! Diane urged me to call her. She was adamant in her convictions that she had the most powerful, amazing system that I may or may not have ever heard of, and she was more than willing to share it with me. I’m guessing she picked up on my online personality and wanted to hear and see for herself how sincere and committed I was. It didn’t take long before I found myself driving over to her house with my laptop riding shotgun.

The presentation went great. I sent out my first FREE card. I was hooked! It was, and is that SImPLE.

I shared my excitement and passion with my husband and he generously gave me the money (correction: lent me the money because I have every intention of paying him back) to buy my own business. Imagine that?! me? A business owner?!

I dove in heart and soul and was shocked by how addicting and fun this service is. The ability to create a card, utilizing my OWN words and photos was a sure sign that I did the right thing. As a self proclaimed writer and avid photo capturer I couldn’t think of any other “at home business” that had my name written all over it.

Since I started Send Out Cards late July, 2012 I have noticed many changes in my personal life. I’m seriously less bored. I’m laughing way more (usually at the cards I’m making and sending, lol.) I feel accomplished and connected to the world. I have sent over 60 cards to family, friends, leads and even strangers. The feedback and testimonials I’m receiving via network comments, texts and phone calls makes it entirely worth it. And, in all honesty I can say that I have truly found….myself.

A little bit about the owner: “I am originally from a small town in Iowa, raising my daughter Lacey as a single mother. We moved to Arizona 21 years ago with only what would fit in my car which mostly consisted of kid’s toys and our family poodle. Lacey and I have been in Arizona ever since. We lived in Queen Creek when Queen Creek didn’t even have a grocery store.

We moved back into town but our hearts were in Queen Creek and returned here a few years ago. We love the small town feel even though it is growing.

Since moving to Arizona, I met a wonderful man that is very supportive of our dream of owning our own boutique. Lacey has been married to her husband, Frank for almost 2 years and they have a 7 month old boy named Kayden, who grandma (that’s ME!) loves to spoil daily! Rounding out their family is Frank’s 10-year old son Dominic and a 7-year old daughter

San Tan Valley Chamber President’s Update – November 2012

(San Tan Valley, AZ., November 2nd, 2012) – It has been a busy October for the San Tan Valley Chamber of Commerce. Thank you to all our members and the San Tan Valley Chamber community for their cooperation in helping us expand the resources and services to help our local businesses. Some recent highlights include:

The Chamber kicked off its first SCORE Startup/Success Seminar Series. The Series ran for five weeks and walked attendees through creating a business plan, defining a target market, creating a marketing plan, financial records and how to seek funding. Cost for the Series was $125, but San Tan Valley Chamber of Commerce members were able to receive $100 scholarships from the Chamber reducing the cost to only $25 for all five weeks. A big thanks to: Let's Roll Automotive, Mama Nina's Pizzeria, MyBizNow.com, The Oasis Golf Club, Simply Unique Studios, Nerium by Veronica and Schumacher Tax & Accounting for participating.

The San Tan Valley Chamber of Commerce participated in the 2012 Arizona Chamber Executives Fall Conference. Topics included Chamber Success Strategies, Preparing Arizona Students for College, Career and Life, and the 2013 Statewide Agenda were covered, in addition to presentations by the Arizona Secretary of State, the US Chamber of Commerce and an Arizona Mayor Panel Discussion. It is always great to represent the local business community regionally, statewide and nationally and we were honored to participate again this year.

The San Tan Valley Chamber of Commerce is creating a SHOP LOCAL campaign for the month of November and is encouraging all residents in and around San Tan Valley to support our local businesses by shopping local. Our small businesses are the backbone of the community. We will be highlighting one business member every day throughout November with a huge push for SMALL BUSINESS SATURDAY on November 24th.

The Chamber's next After-Hour Mixer is Thursday, November 8th, and includes a ribbon cutting for Schumacher Tax & Accounting. The event will be held at Encanterra Country Club from 6pm-8pm.

Due to the Thanksgiving holiday, our monthly membership meeting is moved up one week and will take place on Thursday, November 15th, 7:30 a.m. at SRP.

My name is Deahanna Crowder and I run a respite home here in San Tan Valley. Due to becoming unemployed recently it has been very difficult getting kids.

I became Dylan’s guardian in April 2012. I’m not receiving any assistance aside from Dylan’s S.S.I. which is a mere $465.34 a month. His Pedi-Sure takes up 3/4 of his S.S.I. I also have 3 other kids living at home. I have spoken with Governor Brewer’s office and I had to send a letter requesting a meeting which I’m still waiting on. The State Legislature’s office has been investigating as well. Paul Gosar’s office did some research and ruffled a few feathers. Dylan goes back to the eye surgeon on the 5th of November and we will find out when he is having surgery.

Dylan will be getting a service dog. He hasn’t gotten it yet as I just received a script from the doctor last week when he was admitted into the hospital. We take each day as they come.The following is Dylan’s “Cry For Help”: Hi! My name is Dylan and I’m 3 yrs old. I have Autism and I’m “Failure to Thrive” (Kids who fail to thrive don’t receive or are unable to take in, retain, or utilize the calories needed to gain weight and grow as expected.) I also have ADHD, ODD and OCD. And, if that’s not enough, I have Nystagmus of the eyes. I don’t see very well at all. God made me a special little boy and because he did that I need special thing’s to keep me safe. I was given a special guardian who loves me and wants what’s best for me. I love to climb and throw things. I have an arm of a professional baseball player. I get into thing’s I’m not supposed to and it’s very dangerous for me.

These are the things I’m in need of in order to protect me and keep me safe.

* A special bed which costs approximately $5000 (my mom was looking at her insurance to help but because I’m only 3 she was told they can’t help)* The chair I need to eat (so I don’t choke due to my Cleft Pallet issue) is $1400.* I also need a special car seat so I can’t climb out while my mom is driving and that is $700.* Because of my poor vision I need a Helmet and that runs around $500.

* Even when I wear a helmet I still run into walls. My mom found mats that go on the walls and there’s another $400. **Update: A recent carwash was so successful that Dylan got a new helmet!!**

* I also am considered a “flight risk” when in the community so I need a stroller that I can hang out in and that is $1500.

For many families, autumn events like Halloween and harvest day are fun times to dress up in costumes, go trick

or treating, attend parties, and eat yummy treats. Halloween isn’t like any other day, and all the wonderful things that make it special and exciting can also lead to problems that might be unpleasant or even dangerous. A little bit of planning ahead of time can make a huge difference in making sure that everybody has a great time. These tips will help parents ensure that their children stay protected and have a healthy holiday season:

1. Talk to your kids before a family outing or event. Make a rule that you must always be able to see them and they must always be able to see you. It may sound simple, but keep reminding them periodically; especially if you think they’re getting restless.

2. Map out your plan. Designate a route before your kids begin trick-or-treating, and make sure they stick to it. Take the long way ‘round. Have your kids trick-or-treat in areas where there are a lot of people around. They should also avoid taking short-cuts through alleys and parking lots.

3. Remain visible. Dress your kids in a bright costume so others can see

them. Be sure to remember what they are wearing If their costume is dark, have your kids wear reflective strips or carry a glow stick or flashlight. Don’t cover the face. Instead of masks, have your kids wear make-up so they can see well.

4. If visiting the shopping malls, consider using a cute harness for toddlers who are prone to running off. There are lots of fun ones out there that look like a lion’s tail or an elephant’s trunk. Your child’s safety is most important, so don’t worry about what others think.

5. Teach your kids that if they ever become separated from you, they should look for a “safe stranger” for help. Some examples include

a mom with kids or a cash register person. With older children, agree on a “meeting place” ahead of time, in case you become separated. Teach them if stranger approaches says,” I know your parent come with me”, Ask for the code word while standing a safe distance away from them. It is best to have the child find help, than to have a stranger approach them. Parents should make a code word that only your family uses. Tell your child never to leave the mall or store to go looking for you, no matter what anyone tells them. Remind your child that you would never leave until you are reunited.

6. Try tick-or-treat-friendly homes. Ensure your kids only visit houses with lights on. And, you might also suggest the houses they visit have some sort of Halloween decoration on the porch. Stay outside. Make sure your kids don’t go inside someone’s house. They can get their candy from the porch.

7. Discuss age-appropriate safety issues with your child in a calm, non-fearful manner. Replace the word “strangers” with “tricky people.” Let your child know that it isn’t what people look like that makes them unsafe; it’s what they ask a child to do that makes someone “thumbs down.” Kids have been known to leave with a stranger because “he seemed nice” or “she didn’t look like a stranger.”

8. Make sure that your child knows your cell phone #

9. Quality-check treats. Check your kids’ candy before they eat it. Throw out any candy that is not in its original wrapper or looks like it has been tampered with. Always feed children a big meal before they go trick-or-treating, so they won’t be tempted to eat any candy before bringing it home for inspection. As if being full has ever stopped any kid from eating free candy!

10. Parents should have an up to dated picture ID, finger prints, medical/dental records records and a tooth print impression with DNASo let’s get ready and practice safety measures this season!

A feeling or attitude in acknowledgment of a benefit that one has received or will receive. The experience of Gratitude has historically been a focus of several world religions, and has been considered extensively by moral philosophers such as Adam Smith. The systematic study of Gratitude within psychology only began around the year 2000, possibly because psychology has traditionally been focused more on understanding distress rather than understanding positive emotions. However, with the advent of the positive psychology movement, Gratitude has become a mainstream focus of psychological research. The study of Gratitude within psychology has focused on the understanding of the short term experience of the emotion of gratitude (state gratitude), individual differences in how frequently people feel Gratitude (trait gratitude), and the relationship between these two aspects.

Who or what are you Grateful for? As a motivator of behavior, Gratitude may also serve to reinforce future pro-social behavior in benefactors. For example, one experiment found that customers of a jewelry store who were called and thanked showed a subsequent 70% increase in purchases.

In comparison, customers who were thanked and told about a sale showed only a 30% increase in purchases, and customers who were not called at all did not show an increase. In another study, regular patrons of a restaurant gave bigger tips when servers wrote “Thank you” on their checks,

Living In a household of six, where there are four of us that root for different teams surely can make for fun game days. My husband is a true Redskin’s fan (for shame, right!?); one of the 11 year old triplets is a Cowboy’s fan (really? ROMO?).

The other 11 year old (yep, triplet) is a Card’s fan (go him!) and the 13 year old, as well as myself say, “GO PATS! WE WILL GO ALL THE WAY!” And last, but definitely not least is the OTHER 11 year old. I think she just relates to the cheerleaders. To me, there is nothing like a day of Thanks with homemade food, cable TV and unconditional (despite winners/losers) blessings of love.

American football is one of the many traditions in American culture that is associated with Thanksgiving Day. Virtually every level of football, from amateur and high school to college and the NFL (and even the CFL on Canadian Thanksgiving), plays football on Thanksgiving Day (Thursday) or the immediately following holiday weekend (Friday, Saturday and Sunday).

Professional football teams and leagues have played on Thanksgiving from the start, with pro leagues and teams having played on Thanksgiving since the 1890s. It carried over when Buffalo and Rochester, two members of the New York Pro Football League which had held its championship on Thanksgiving 1919, and the

Ohio League, which traditionally held its marquee matchups on Thanksgiving, combined into the NFL upon its founding in 1920, and as such, the NFL has played on Thanksgiving ever since. The Detroit Lions and the Dallas Cowboys have played home games on Thanksgiving since 1934 and 1966, respectively, in a series called the Thanksgiving Classic. Beginning in 2006, the NFL added a third game on Thanksgiving night with a rotating host team.

The rival American Football League also played on Thanksgiving in the 1960s, as did the All-America Football Conference in the 1940s and the original AFL in 1926.

In the Canadian Football League, where games are played on Canadian Thanksgiving, the CFL hosts two games in the Thanksgiving Day Classic; it is one of only two weeks each year in which the CFL plays on a Monday, the other being the Labor Day Classic. The difference between the Thanksgiving and Labour Day games is that the Thanksgiving Day games do not have the same matchups each year; however, like its American counterpart, one of the games has a regular host (in the CFL’s case, the Montreal Alouettes). Coincidentally, both the Grey Cup, the CFL’s championship game, and the Vanier Cup, the championship of Canadian college football, are both traditionally played on the fourth weekend in November, which

amounts to the week before or the week after American Thanksgiving.

The World Football League originally planned to hold its 1974 championship game, World Bowl 1, the day after Thanksgiving in 1974; the business failures of the 1974 season led to the league reorganizing the playoff structure and pushing the World Bowl one week back. Similarly, the United Football League, which began play in 2009, held its first two UFL Championship Games over Thanksgiving weekend; this was not the case for the trunacted 2011 UFL season and current plans are for the championship game of the 2012 UFL season to be held December 1.

College and professional games played over Thanksgiving weekend are usually referred to as a classic. The University of Michigan made it a tradition to play annual Thanksgiving games, holding 19 such games from 1885 to 1905. The Thanksgiving Day games between Michigan and the Chicago Maroons in the 1890s have been cited as “The Beginning of Thanksgiving Day Football.”[21] In fact, Yale and Princeton began an annual tradition of playing against each other on Thanksgiving Day starting in 1876.

The Turkey Day Classic, a college football game between Alabama State University and Tuskegee University, has been played on Thanksgiving Day annually since 1924. It is also the oldest black college football classic, since the two colleges first played each other in 1901. Another popular black college football classic played on Thanksgiving weekend is the Bayou Classic between Grambling State University and Southern University, which is held the Saturday after Thanksgiving.And, last but not least is the Turkey Bowl. An example of an informal game from Redmond, Washington.

Unorganized groups have also been known to partake in American football on Thanksgiving. These informal matches are usually known as a Turkey Bowl (not to be confused with some high school football games that also use the name “Turkey Bowl”, see above, and with Turkey Bowling). These games are usually unofficiated with a flag football, street football or touch football format.

While the games themselves are not generally nationally known, Turkey Bowls hold importance for those who participate and it is not uncommon for rivalries to last for decades.[20] Turkey Bowls are played by a variety of people including extended families, college fraternities, volunteer fire departments, and local churches across the country which use the day and the game to have fun, exercise and renew old acquaintances.

I had a bad dream that night, and I rushed Dakota to the hospital immediately.

ONE IN A mILLIOND a k o t a s D e s t i n y. c o mHi, my name is Dakota, I’m a fun-lov-ing 7-year-old girl, with the heart of gold. I really love HELLO KITTY, swim-ming, Super Mario, crafting, coloring, and painting.

On May 8, 2012, I came home from school and complained that my tummy hurt. Mommy and Daddy took me to the emergency room. It was later revealed that there was a tumor in my tummy.

The doctors have since diagnosed me with a rare type of cancer, Burkitt’s Lymphoma (Stage 3).

I heard them tell my mommy and daddy that the tumor was the size of a baby’s’ head and one on my lung and one on my lymph nodes (the body part that stores the cells that fights infections).

Mommy and daddy say I have been brave as I have already finished three (3) rounds of chemotherapy since May 8th. Each time I undergo a round of chemo, I have to stay at the hospital for at least a week. Despite intense nausea, mouth sores, and losing my hair, I am on my way to beating cancer!

And this is why my mommy and daddy are asking for your support. My mommy and daddy need to stay near me at the hospital each time I go in for chemotherapy.

What They Need Is Your support! Although they are insured, their insur-ance plan will not cover everything. Co-payments and deductibles will have to be paid in relation to Dakota’s medication, physician visits, hospital stays, chemotherapy treatments and time away from work so Jason and Kim can be at the hospital together supporting their daughter. In addi-tion to medical expenses, there are other major costs associated with caring for a child with cancer.

As Dakota battles cancer, our hope is that financial burdens are the last thing on this family’s mind, so that they can completely focus on help-ing Dakota beat cancer. Many of you know the Clark family and many of you may not, but know this.....no matter how you can help, your con-tribution will help ease the burden for this wonderful family.

it’s time to talk turkey, turkey!

Which cooking method makes the better turkey: grilling, deep frying, roasting, or smoking?

Your cooking method is a matter of personal taste. Your choice, however, should depend on the palate of the majority of your guests. Below are some differences in the methods of cooking turkey.

Before cooking a turkey using any of these methods remove the neck and giblets, rinse the turkey well, and pluck any feather remnants. Cook your turkey breast side up. Always remove the pop-out thermometer. Pop-outs are not very reliable. A cooking thermometer should be used to make sure your turkey is done. A turkey is done when a thermometer inserted in the breast measures 1700, or the thigh measures 1800.

Roasted Turkey

Roasting turkey is a one of the easiest ways to cook your turkey. A turkey can be roasted in the oven on a roasting rack in a disposable pan covered with aluminum foil. The turkey should be cooked at 4500 for approximately 30 minutes, then 10-15 minutes per pound at 3500.

One great thing about roasting your turkey is that there are an assortment of bastes from which to choose. Depending on the variety you want to add to your feast you can baste the turkey in its own juices, fruits, beer, or wine.

One downside to roasting a turkey is that failure to baste the turkey approximately every 15 minutes will result in dry turkey. If the turkey is not basted, or the tent is not well sealed turkey juices will evaporate leaving turkey meat that sticks to the roof of your mouth.

Another thing to remember when roasting a turkey is to place it on a roasting rack. If the turkey rests in the bottom of the roasting pan it will fry in its own juices. It may also cook

too quickly. There are recipes and pre-prepared injections for moisturizing turkeys. Don’t hesitate to use an injection. Flavor is preferable to dry turkey.

Roasted turkey seems to be the traditional favorite. It is easy to find basting recipes in cookbooks and on the internet. Roastin turkey is the best way to cook stuffing. Stuffing can be bought premixed or your favorite homemade dressing can be cooked inside the turkey.

Deep Fried

Turkey

Deep fried turkeys have become more and more popular. A fried turkey is usually crisp on the outside, and tender and juicy on the inside. Fried turkey is not greasy if cooked correctly. Frying is also the quickest way to cook a turkey.

Frying a turkey, however, is a lot different than popping a turkey in the oven to roast.

Do not attempt to deep fry a turkey on your stove top. The temperatures are too high, the turkey is too big, and there is too much hot oil. Home stores, such as Home Depot and Lowe’s sells outdoor deep fryers that are ideal for frying turkeys. Outdoor deep fryers are also used to fry fish and make Cajun boils, so they are usually easy to find. The best time to buy a deep fryer is after the holidays when they are on sale. However, unless you know someone who owns a fryer you can use, you will need to buy a fryer. Attempting to fry a turkey inside is not recommended under any circumstances.

Before frying a turkey, clean it; bind the head and wings. Season it. Use rub on seasoning and/or flavor injections. The turkey should be thawed to room temperature

before frying.

Use a turkey hook, approximately $40, or devise your own hook to submerge the turkey in hot oil. A large fish hook or bar hook with a solid chain or rope can be used to devise your own turkey hook. Hook the turkey in the rear. Lower it in the fryer head first.

Be sure to wear quality oven gloves. Heat will travel quickly up a chain or other metal device. One way to avoid touching the rope or chain is to suspend it from a solid piece of wood that is wider than the circumference of the deep fryer.

Peanut oil, though more expensive than vegetable oil, is the best oil in which to fry your turkey. Expect to go through several gallons of oil. Your turkey must be completely submersed in oil with an inch or two above the turkey. Heat the oil to 4000 before placing the turkey in the oil. Just before lowering the turkey in the oil, turn the deep fryer off. There will be a huge fry back splash once you place the turkey in the oil. This is the most difficult part of frying a turkey. Take extra care to ensure that you do not get scalded.

Turn the fryer back on, and monitor the temperature gauge to cook the turkey at 3500 degrees. Temperatures lower than 3300 allow the turkey to absorb too much oil. Fried turkeys cook at approximately three minutes per pound. A twelve pound turkey should be done in 36 minutes.

Once the turkey is done, turn off the fryer, and slowly remove the turkey. Allow oil to drain off the turkey as you remove it.

Once you become known as a skilled turkey fryer, you will be frying turkeys for friends and family. Stock up on peanut oil, or make each person supply

their own oil and turkey.

grilled Turkey

Slow grilled turkeys are tasty. Grilling can be slow and tedious, but the result is rewarding.Grilling a turkey is much like roasting a turkey, except that you will place the disposable turkey pan on the grill. I still recommend using a roasting rack in the bottom of the pan, as the bottom of the turkey can burn on the grill if the

turkey becomes too dry.

Most recipes for grilling turkey say to cook the turkey over medium high heat for two to two and one-half hours. For a more tender turkey cook over a lower flame for an additional hour or two. The key to a great grilled turkey is basting. As with an oven roasted turkey, a grilled turkey should be basted with water or the basting recipe of your choice every fifteen to twenty minutes.

When cooking your turkey over a lower flame, for a longer period of time, use a cooking thermometer to determine when the turkey is done.

The steam generated by the smoker cooks your turkey. When you check the wood, open and close the external cylinder door quickly. Heat escapes very quickly through the door. A door that is open too long brings down the temperature and affects your cooking time.

Cooking time for a smoked turkey is not as easy to estimate. Variances in temperature, turkey size, and distance close to or away from the smoke and fire will all determine cooking speed. A general rule of thumb is 20 to 30 minutes per pound. Again, use a thermometer to determine when the turkey is done.

Do not stuff smoked turkeys. The turkey cooks too slowly to cook dressing and the dressing would taste terrible anyway.

One of the benefits of using a turkey smoker is that you can often smoke a couple of turkeys at one time. This may benefit you in the long run, as people will pay five dollar a pound or more for a good smoked turkey.

No matter how you decide to cook your turkey, don’t forget to save the drippings for gravy. Plus, your favorite sides such as (but not limited to): Mashed potatoes, cranberry sauce, green bean casserole, fresh buns and butter, squash, pumpkin pie and let’s not forget the STUFFING!

Smoked Turkey

Smoked turkey is the best tasting turkey. It takes the longest cooking time and also requires the right equipment. Smoked turkey’s can be purchased, but they carry a big price tag. One reason is that they are worth it. Smoked turkey is absolutely fabulous.

The biggest piece of equipment you need is a water smoker. Water smokers can also be bought at home stores, like Home Depot or Lowe’s, but many people never try out their smoker and you can often find a smoker at a yard sale, or thrift store. Water smokers may be powered by electricity, gas, or charcoal. Charcoal smokers have two pans. One pan holds charcoal, the other holds water to create smoke hot enough for cooking.

A typical water smoker holds wood chips and liquid in the lower portion. A rack is suspended in the top half of the smoker to hold the turkey. Wood chips or charcoal can be added to the smoker through a side door.

Smoking works best on turkeys 12 pounds or smaller. I prefer to smoke turkeys 10 pounds or less. A little salt and pepper is the only seasoning required. Use hickory or mesquite wood chips to add a delicious smoky flavor to the turkey. Pine, fir, cedar, or spruce wood should not be used. Turpentine will be released giving your turkey a green wood flavor. Your turkey will also be covered with black pitch.

Prepare the water and wood in your smoker, close the lid, and wait for the contents to heat to 3000. Clean your turkey and place it breast up on the cooking rack.

Work to maintain a 2500 to 3000 cooking temperature. Check the liquid and wood every thirty minutes to an hour.

Whatever entertaining option you choose to host for the holidays, a dinner, a brunch, a lunch buffet or reception, think in terms of the entire tablescape. A tablescape is an arrangement of personalized items that reflect something about you, or the season. Consider your entire table a canvas to decorate, with the ultimate purpose of showcasing the food you serve.

Begin with the backdrop. Determine what dishes, glassware and cutlery you want to display. Will you use a centrally placed centerpiece, or smaller accents at each place setting? Incorporate separate containers containing flowers, plants, fruits, or vegetables of the season.

Consider the color scheme and select coordinating linens for the tablecloth, runner, placements and napkins.

It doesn’t matter if everything matches exactly; it merely needs to complement one another.

A beautiful tablescape serves as an accessory to the delicious meal you serve. These accents, along with the mouth-watering appearance of the food, will be the added touches that your guests will long remember.

People want (and expect) good deals on Black Friday. Decide what items you’re going to put on sale, if you’re going to offer free shipping, or if you’re going to offer a discount on total purchases. Once you’ve determined what your specials are going to be, start marketing them immediately. Like RIGHT NOW!

It’s not too early to let your clients and potential clients know you’re going to have a killer sale on Black Friday, after all, you want to make sure they add you to their Black Friday shopping agenda. Make your sale or discount seem exclusive!! THAT DAY ONLY, seriously just that day.

Many businesses offer extra discounts to Black Friday shoppers between certain hours only. This is why you hear of people getting up at 4 a.m. to go to the mall or in our case Walmart. Set your specials between specific hours and make it clear to consumers.

Entice shoppers with freebies, I KNOW freebies…. Always keep your budget in mind, but if you can afford to throw in a free item to the first X amount of shoppers, do it.

This will entice consumers to go to your store (or order online) first, before they’ve spent all of their Black Friday budget elsewhere.

Hold a private shopping event. If you’re a smaller business, you may find that your Black Friday sales are disappointing because everyone is shopping at major retailers.

A great way to boost your sales for the day is to send out a personal invitation to your customers inviting them to a private shopping event with exclusive discounts.

The shopping experience will be more intimate and personal, allowing for you to build a better relationship with your customers. To us home based businesses this is very important.

Once you have your marketing plan in place, make sure you promote your Black Friday specials in every medium you can.

Utilize social media, blogging, and email marketing to help get the word out and don’t forget to update the content on your website (at least the home page) to reflect your upcoming sales.
