Method1. Preheat oven to 150 degrees Celsius2. Separate the cloves of garlic3. Lay half the rosemary and half the garlic in

the base of a roasting tray. Lay the shoulder on top. Cover with the remaining garlic and rosemary, now adding the olive oil as well

4. Cover tightly with foil and bake for 4-5 hours. Rest for 20 minutes prior to serving

5. Serve with your favourite smashed vegetables or a tangy salad
