Belgian style mussel soup

1kg Mussels in the half shell1 Large onion chopped3 Cloves garlic finely chopped½ Cup white wine3 Cups of cream3 Teaspoons good powdered

vegetable stockGround black pepper5 Spring onions choppedChopped parsleyLemon zest

Fry the onion & garlic in a little olive oil.

When onion is turning slightly brown,

add the mussels.Throw on the white wine and once it has

steamed off, put the lid on the pot for

about 2 minutes. At this point the soup

should be boiling rapidly.

Remove the lid and stir in the stock.

Add the cream and black pepper to taste.

Leave to boil rapidly until liquid reduces.

This is rather a “runny” soup, that's why

you need loads of that crusty bread.

Check the seasoning at this point, you

may need to add a pinch of salt.

Garnish with the spring onions, lemon

zest, parsley and more ground black

pepper.

This is a really quick and delicious soup that can be whipped up in minutes.Serve it with loads of crusty bread.
