    Last October my father, my wife and I took a trip aboard

    LAustral and had an unforgettable experience. I hope the

    LAustralskitchen at the age of 17, serving his apprenticeship in Paris at such

    landmark establishments as Ledoyen, Lentre and Julien. The next 20 years

    took him to the Far East, Florida and a stint in Canada, where he forged a

    relationship with Radisson Hotels.

    The Radisson Shanghai was his last stop before joining Le Ponant in

    2009. Tremel often does long stints on LAustral, sometimes undertaking eight

    month tours of duty. I dont like being away from my baby, he says. Indeed,

    he remembers the vessel when she was just a shell, a hull with no

    embellishments, pools, bars, cabins, carpets or comforts.

    The galley is compact but I have learned how to be unobtrusive with

    cameras in kitchens where space and time are tight. Usually, galley staff

    quickly forget I am there, even if right over their shoulder.

    For me, the most interesting and intimate pictures are of this backstage

    activity. A ship of this small scale provides a kitchen ambience closer to that ofa landside restaurant and its amusing to watch the interplay between chef

    and sous chef, line cooks, waiters, sommelier and Maitre D as they come and

    go from the floor to the galley.

    If the ship is Tremels baby, then these people are his family. In the mid-

    evening rush of dinner service, he is meticulously piping the text on to a

    birthday cake as his companions choreograph their movements around him.

    Tremel has almost total autonomy over what emanates from the kitchen. Le

    Ponant has a Corporate Chef rarely seen or mentioned but all five ships

    are allowed free hand to develop their own menus.

    Hotel manager Eric Noir has an eye on the budget and acquisition viability.

    His hotel controller and load manager he poached from a five-star German hotel.

    When it comes to logistics, Noir says. We are the dream team.

    The ship shortly leaves for Antarctica and her winter itinerary. No markets

    or suppliers to call on there and, to this end, a large shipment is waiting forthem at Livorno. It will take the day to load, collate and store.

    LAustralcarries a predominantly French crew and, on this sailing, the majority

    of passengers are also French, many of them repeat clients. As the principal front-

    of-house figure, with a permanent eye on his product and his clients, Noir is

    proud to report a 4.7out of 5 as the ships average client score. He has spent only

    three years of his working life ashore, the rest on ships, and the past 13 with Le

    Ponant. When I ask what attracted him to hotels in general and ships in particular,

    he replies: I have no idea. My parents were both doctors.

    LAustralis a state-of-the-art vessel. She can go anywhere and roll right

    through most conditions. The bridge is an assembly of startling electronics and

    navigational aids, although the human presence dominates. Impeccably-clad

    crew quietly exchange information with one another. Binoculars are trained on

    the horizon.

    Tremel describes himself as homeless. True, he has no home in Franceor anywhere else. His home is LAustral, or wherever he plants himself on his

    extended vacations, these taken when the mood strikes him.

    Yet living aboard a 440ft yacht with your own apartment, a couple of

    bars, a pool, gym, state-of-the-art kitchen to work in, plus a different view

    each morning, it has its compensations.

    The benefit of joining a ship when anchored off shore is

    the mandatory arrival by tender, thus reaching the

    vessel in her natural environment, rather than through

    a sanitised terminal. So it was, on a crystal clear

    October afternoon, LAustralwas waiting for me just off the Amalfi Coast.

    This vessel, launched in April last year, may be small at just 440ft

    long but is nonetheless too big for Amalfis picture-perfect harbour, hence

    she is standing at sea while her passengers spend the day exploring the

    pastel squares and alleyways of the town. A small tender shuttles back

    and forth and I join one of these short hops to join the ship.

    The tender nudges alongside the stern of the vessel, her smoky grey hull

    rocking lightly in the swell, six decks climbing toward an azure sky. Captain

    Patrick Marchesseau is present to endorse the welcome on deck three.

    LAustralis a soothing, intimate ship and her scale enables you tobecome quickly acquainted with her six decks, corners and facilities. The

    tone and ambience have been carefully considered by designer Jean

    Phillipe Nuel, resulting in what resembles a boutique hotel at sea.

    Ivory, mushroom and cinnamon fabrics, grey-tinted woods and deep

    carpets render the cabins acoustically and visually friendly. The muted

    colours and tones travel out into the communal areas several lounges,

    an outside bar, two restaurants, library and a theatre.

    Of course, there is a gym and a spa, complete with a hammam while

    the cabins make optimum use of space and light, and most have private

    balconies. Bathrooms feature a sliding panel which allows a cross-cabin

    view to sea or total privacy. The beds are large and comfortable, although

    they tend to dominate the room. Room service is available 24 hours a day

    and breakfast arrived at eight oclock sharp. With only 110 passengers on

    this voyage (out of a maximum of 264), we were actually outnumbered bythe crew. The company state they aspired to the feel of a private yacht,

    and it certainly felt like it.

    The heart of any cruise ship or yacht is the galley, and most of the

    culinary activity aboard LAustralis undertaken in just one kitchen, which

    serves The Coromandel gastronomic dining room on deck two and The

    Rodrigues Grill on deck six. The Coromandel is the primary dining room,

    quiet, elegant, softly lit and impeccably managed. The Grill, incorporating

    an outside dining area, is primarily for breakfast and buffet lunch,

    although it also provides a light supper facility. Both restaurants are open

    seating while The Grill has an outside barbecue area and seating for 80.

    Chef Philippe Tremel is in charge of all culinary output. With his

    brigade of 17 cooks and right hand man, sous chef Guillaume Guertin,

    Monsieur Tremel crafts a small but singular menu for The Coromandel,

    rooted in French provincial cooking.Coromandel presents a carefully balanced selection of appetisers,

    main courses typically a fish, meat, pasta and vegetarian choice and

    a selection of desserts. The Grill has a themed menu that rotates through

    various moods and cultures.
