In Spain, the Designation of Origin (D.O.) constitutes a system for the identification of distinct levels of quality, based on the particular

distinguishing properties of the geographical environment and climate where the raw materials are grown and the wines produced.

WINE SERVICE:When you pour wine, it’s best to the fill the glass to about 0.2cl (approx. 2 fingers) to prevent the wine from losing its ideal temperature.

WHY DOES SPAIN HAVE GOOD WINES?Spain is very well-known for its quality wines, and that’s because it has very good conditions for winegrowing: a lot of sun, variety of grapes and favourable land. What’s more, its ideal climatic variation and traditional cultivation methods give rise to very high-quality wines.

WINEGROWING: After the Phoenicians started growing, the Greeks arrived and took the vines and wine to the Catalonian and Levantine coasts. The Romans contributed to its vast expansion along the Via Augusta, which connected Rome with Cádiz and other ports.

DESIGNATION OF ORIGIN: This concept identifies a wine from a specific place, whose characteristics are due to the geographical environment and its inherent natural and human factors, and whose phases of production take place entirely in the geographical areas specified.

D.O.CA. RIOJA VS D.O. RIBERA DEL DUERO: Red wines from D.O.Ca. Rioja are balanced and elegant, while reds from Ribera del Duero are much more structured and potent.

D.O. RÍAS BAIXAS VS D.O. RUEDA: Whites from D.O. Rías Baixas are very fresh, Atlantic wines, while those from D.O. Rueda are of a continental climate.

DOES D.O. RÍAS BAIXAS ONLY HAVE WHITE WINES? Although regions like Galicia are known for their white tines, they also have an exquisite variety of lesser known red grapes of equal quality.

UNKNOWN TYPES OF GRAPE: In Spain, a collection of varieties of grape is taking place in order to draw up a map of all the types of grape that have been lost. The Spanish vineyard has tools and resources to continue cultivating in the extreme situation brought about by climate change.

HOW TO CALCULATE THE AMOUNT OF WINE FOR A GATHERING: Each bottle has 0.75cl, which gives us about 6 glasses. We can estimate that each diner will drink an average of 3 glasses.
