It is hard to believe that 2019 is coming to a close. I would like to take this opportunity to thank all of our Members for a wonderful year at The Meadows. It is an honor and a privilege for myself, and my staff to provide a memorable experience each time you visit the club. Turnover in staff, challenging summer heat and rains, and focusing on improving the golf course and overall facility conditions made for quite a test this year. As the year progressed, the staff did a wonderful job of overcoming many challenges that the club faced to enhance Member satisfaction.

As we plan for 2020 and beyond, our hopes are to improve the club’s conditioning in all areas. Golf, tennis, fitness, and dining are all areas that have been reviewed and plans for improvement are now in the works. Our success as a club hinges on our ability to ensure Member satisfaction in a growing Sarasota market. December is a great time to socialize with friends and family. I want to remind everyone that it is not too late to utilize the club for all of your entertaining needs during the holiday season. We still have some dates and times available for that last-minute holiday gathering, dinner for two, or some last-minute shopping in our pro shop. Golf course conditions are wonderful, and the temperatures are prefect for tennis. Ala carte dining, either inside or on the patio, is available daily and the Member events like the Christmas Buffet and New Year’s event will fill fast. All are great opportunities to bring Members and your guests together this holiday season.

In closing, I hope that the 2019 holiday season finds you and your family happy and healthy. On behalf of the entire staff at The Meadows Country Club, I would like to wish you a happy holiday and a rewarding 2020.

Sincerely,

Here is yet another example of how great The Meadows CC members are! I asked for volunteers to help me paint the dance room, so it would get the makeover it needed. It never ceases to amaze me what a coat of paint can do for a room.

A HUGE THANK YOU to Elke Harrington, Sandi Gordon, Kathy & Paul Easley, and Penelope for helping me paint the dance room early October! I enjoyed the stories and the laughs, and I know it was all because of the paint fumes.

RECIPE FROM CHEF JOE

• 5 ½ pounds Sweet Potatoes, peeled and cut into 2-inch chunks

• 2 sticks unsalted butter, melted, plus more for brushing

• 1 ½ tsp freshly grated nutmeg• 1 ½ cup light brown sugar

• 1 cup milk, warm• 3 large eggs, beaten• 1 cup pecan halves (4oz)• ½ tsp cinnamon • Salt

INGREDIENTS

STEP 1Preheat oven to 350°Butter a 13-by-9-inch baking dish. Put the sweet potatoes in a large pot, cover with cold water and bring to a boil. Cook over moderate heat until sweet potatoes are tender, about 15 minutes. Drain well and shake off the excess water. Transfer the sweet potatoes to a food processor (in batches, if necessary) and puree until smooth.

STEP 2Scrape the puree into a large bowl. Add half of the butter, 2 tsps. of salt, 1 tsp nutmeg, ½ cup of brown sugar and milk and stir until combined. Stir in the eggs. Pour mixture into the prepared baking dish and smooth the surface. Cover with foil and bake for 40 minutes.

STEP 3Meanwhile, spread the pecans on a baking tray and bake for 5 minutes, until lightly toasted. Transfer the pecan to a work surface and coarsely chop them. In a bowl, toss the pecans with the cinnamon and the remaining melted butter, ½ tsp of nutmeg and 1 cup brown sugar, season with salt.

STEP 4Remove the foil from casserole, sprinkle the pecan mixture over the sweet potatoes, Bake uncovered, for 40 minutes longer, until the topping is golden and sizzling.

Let the casserole stand for 20 minutes before serving.
