It’s a time when we have the opportunity to see friends and families gather together to enjoy each other’s company. We hope that all of you have been blessed with a great year of special memories. When we look back at this year it is filled with many exciting changes around the village that we hope you have been able to see. With the addition of the Cannonsburg Trail extension, the paved Honey Creek Inn parking lot, the new parking lot and park and many other happenings in the village, we can truly say it has been special year for us. More than those cosmetic changes, though, what has made this year special is all of you. Without the support from each and every one of you, Cannonsburg would not be the community it is today. Thank you to all of you and we wish each of you a safe and enjoyable holiday season. Merry Christmas and Happy New Year! The ice candles are truly a beautiful spectacle to see. There origin can be traced back to old Scandinavia where they would place a similar type of ice candle outside of each house so that St. Nicholas would be able to find each house! Our candles will be lit Christmas Eve around 6 pm and will stay lit through Christmas morning so that Santa can find his way to the village. We hope you can stop on through the village either at the beginning or end of your Christmas Eve celebrations! This is our favorite time of the year around Cannonsburg. It’s a time

to make a home cooked meal! Between prepar-

ing for holiday parties, Christmas shopping and en-

tertaining friends and family, there never seems to

be any time to sit down and relax during Decem-

ber. We would like to change that for at least one

meal during the next month for you. Come on over

to Cannonsburg, take a deep breath and relax for

a moment at the HCI. Stop in on Wednesday eve-

ning to enjoy our new Fish and Chips dinner special

or take a day trip to the village to enjoy one of our

new menu items like our Double Moose Mussels or

our Kurly’s Klub. Last but not least, don’t forget

December 4th & 5th France

Beef Bourguignon Puff Pastry - Beef Bourguignon is a

traditional French stew that uses bacon fat to brown

beef that is then stewed in Burgundy wine and beef

broth, all filled into casserole dishes and cooked to a

golden brown.

Coquilles Saint-Jacques - Traditionally a starter

course we turned this scallop, mushroom, and Gru-

yere bit of heaven into an entrée by plating it over

Chateau Potatoes, Asparagus, and a Foie Gras Gas-

trique.

December 11th & 12th Latin America

Pavo - Succulent roasted turkey breast glazed in

Mole Pablano. Our mole takes two days to make

and uses three different types of chilis, Ibarra choco-

late, and a list of about twenty other ingredients. It is

a little spicy and very deep in flavor.

Bacalao - There are many different recipes for this all

over the Spanish speaking world from South America

to Spain. It is a salted Cod stew served with pota-

toes, almonds, Manzanilla olives, Guindilla chile, and

pimentos del piquillo. My version is a little thicker,

more like a hash.

December 18th & 19th Japan Ponzu Duck - A light citrus glazed duck breast served

with grated Daikon Oroshi and Hari scallions.

HCFC - In Japan Kentucky Fried Chicken is the num-

ber one Christmas dish. Yes, I said it, KFC. They order

their Christmas dinner up to three months in ad-

vance! Since I do not know the Colonel’s Secret

Recipe, we are making the Honey Creek’s Fried

Chicken Recipe. Boneless marinated chicken thighs

fried in 12 herbs and spices (one more than those

other guys).

December 26th Jamaica Curry Goat - A very traditional dish in this region.

Cubed goat stewed in yellow curry and spiced up

with Scotch Bonnet peppers, and served over white

rice.

Curry Lobster - Fresh grilled lobster tail laced with red

curry, tomato, and scallion. Served over white rice.
