We’re able to supply some of the finest and rarest liquors on the planet. Let us curate a custom cocktail list to suit any type of evening. Our bartenders are hip, hospitable and know how to balance a drink. If wine is your thing, we have trained sommeliers on staff to handle your wine selection.

Chris BrownChris Brown began his culinary career in some of Toronto’s finest dining establishments including, Splendido and Avalon. Chris’s desire to further his understanding of the powerful relationship between food, culture and community led him to travel throughout Europe for five years, cooking in Michelin Starred restaurants in Italy and France.

Inspired by the caliber of artisanal gastronomy he experienced abroad, Chris returned to Toronto and took the helm as Executive Chef at Perigee, touted as one of Toronto's top restaurants.

In 2010, Chris’s passion for cooking and his determination to fight hunger at a grassroots level led him to establish catering operations at The Stop Community Food Centre, one of Toronto’s largest not-for-profit food organizations. This venture ultimately served as the platform from which Chris launched his successful catering operation, Citizen Catering.

With Citizen flourishing, Chris once again partnered with Nick Saul (of Community Food Centre’s Canada) to create Chefs for Change, which unites Canada’s top chefs in a spectacular dinner series, raising awareness and money to support.

Delving into a new business venture in Spring 2017 with longtime friend, Grant van Gameren (Bar Isabel and Bar Raval), Chris and Grant have created an elevated and unparalleled catering experience in Toronto with their new catering company, Victor Dries.

Grant van GamerenGrant van Gameren's rise towards one of Canada’s most celebrated chefs began shortly after opening the Black Hoof in 2008, which earned the title of 2nd Best New Restaurant in Canada.

A few years later he travelled to Europe where he became enamoured with Spanish culture, prompting him to open Bar Isabel in 2012. Bar Isabel received numerous awards, including Best New Restaurant in Canada.

In 2014, Grant opened his 3rd venue, Bar Raval which quickly secured a spot in the Toronto Top 10 New Restaurants in Canada list.

2016 proved to be a big year as Grant launched El Rey, Pretty Ugly and Harry’s in his ongoing quest of creating unique culinary experiences for the city he calls home.

Things to know when planning your event.Do you offer tastings?

We love hosting people in our beautiful tasting room and can accommodate up to 6 people. Please let us know if you prefer to join us during the day or evening.

Do you take care of rentals and staffing?

We are a full-service caterer and will arrange all necessary rentals for your menu, including tables, linens, chairs. We work with experienced and professional wait staff and bartenders.

We also manage all other event elements such as décor, specialty furniture, tents, flowers, DJ, audio visual etc. We source and take care of anything you need to make your event is a great success!

Staff We work with experienced, professional and friendly staff who will go above and beyond for you at your event.

Rentals We arrange all the scheduling and logistics of your rental delivery order and ensure everything will be set up on time. Rentals may change throughout the planning process and costs will change accordingly.

Will I receive help managing all the details leading up to my event?

Our team of experienced event planning experts will manage your itinerary and all event logistics, offering you guidance every step of the way. We will take as.

Do you offer Bar service? Can you provide specialty cocktail list?

We have exceptional mixologists who create unique, delicious cocktails. Your event manager will manage your bar product, service and delivery.

How do I choose a menu?

We have great menus for you to look through Please let us know what you have in mind and we will consult with our Executive Chefs, Chris Brown and Grant van Gameron to craft a menu that perfectly suits what you have in mind!

What if my guest list has a lot of dietary and allergy restrictions?

No problem! Our chefs create thoughtful and delicious vegan, dairy free and gluten free menu options. Please ensure you provide all dietary and allergy restrictions at least 1 week prior to your event so that we can be sure to have it all covered off.

When are final menu selections required?

Along with all dietary and allergy, the final menu selected needs to be submitted 7 business days prior to your event date.

My Guests aren’t rsvp-ing. What do I do?

Along with your final menu selection and all dietary and allergy restrictions, we also require your final guest count 7 business in advance of your event date. Sometimes guests are not great about letting you know whether they will be there, but we need a final number to work with so we suggest preparing for the number you believe will attend.

My event is outside of the city, will you travel to cater?

We will! We have catered in Muskoka, Caledon, Oakville, Burlington and are happy to cater for you wherever your event is!

Do you cater small events?

We cater all sizes of events however we have a minimum spend of $2000 on food. This amount does not include any other costs such as staffing, rentals, beverages or décor.

What if we just want something dropped off?

Our menu items are designed to be freshly prepared, so chefs are required on site to cook for you!

How do I book if I am ready to move forward with Victor Dries?

To secure your date, we will require you to sign your catering contract with Victor Dries and provide a 50% deposit with either a cheque or a credit card. If paying by cheque, please note that we require a credit card on file.

How is the final invoice amount determined?

We calculate your rentals based on the needs of your menu and staffing hours based on set up time and estimated end time of your event. Should the staff be required to be on site longer than estimated, final hours actually worked will be reconciled and billed to your credit card the following business day after your event.
