La crema
catalana
INGREDIENTS:. 1 litre of milk.. 8 tablespoons of sugar.. 6 egg yolks. 1 cinnamon stick.. A bit of lemon peel.. 5 tablespoons of cornstard.
We need ¾ litre of milk and a cinnamon branch.
Add 8 tablespoons of sugars(aproximately 150 grs).
Add a small piece of lemon peel.
Put the mixture to cook and stir until it boils.
Boil the mixture for 3 or 4 minutes so all the mixture will have the cinnamon and lemon flavour. Let the mixture go cold.
Put 5 tablespoons of cornstard in glass or in a bowl.
Pour ¼ litre of milk to the cornstarch and mix well.
Beat one complete egg and 5 egg yolks.
Add the cool milk using a strainer.
Add the eggs to the milk and beat the mixture with a hand whish.
Add the conrstarch dissolved in the glass of milk.
Cook over the mixture a low heat for about ten minutes.
Don’t stop stirring until the mixture thickens. Take it out of the heat but go on stirring for 2 more minutes.
Put the cream in individual sized bowls.
Before serving it, throw some sugar on the cream.
Burn the sugar with a very hot metal.
