James Cook’s days ashore following his first voyage were quiet, without a great deal of fanfare. Certainly his accomplishments were acknowledged by seafarers, but others weren’t as quick to applaud.

Critics attacked the value of the new lands mapped by Cook. New Zealand, they cried, was just a land of fighting cannibals. Northeastern Australia, they complained, was nothing more than a barren wasteland surrounded by a dan-

gerous coral reef, filled with stone-age people who grew nothing. And of the Unknown Southern Land, Cook proved nothing. Could it not still exist some-where between South America and New Zealand?

Perhaps because of these attacks, the King of England promoted Cook only to Com-mander, not to Captain as many felt was war-ranted.

to address the question of the Southern Continent. And so the Admiralty, for reasons of safety, purchased two vessels and began outfitting them for Cook’s second voyage. They were two Whitby colliers, rechristened HMS Resolution and HMS Adventure for this cruise. Joseph Banks, the wealthy scientist who was such an integral part of the first voy-age, was left behind in a huff along with his retinue of scientists, artists, servants and musicians. His demands to outfit Resolution with an upper deck for his en-tourage made the ship so top-heavy she couldn’t even navigate the tame waters of the Thames!

The Ships Set SailA crew was hand-picked. Provisions

were stowed aboard. Preparations were completed. The mighty figure of Cook would once again take command of a sailing ship, the 120-foot long Resolu-tion. Another ship, Adventure, was un-der the able leadership of Lieutenant To-bias Furneaux, who had already logged in one circumnavigation of the globe. Bound by a common goal, they would sail around the Antarctic region and discover this new southern continent at last, or put this notion to rest forever. A dangerous mission lay ahead as each of these seamen knew. No ships had ever dared venture into these treacherous seas. Their minds could only imagine the walls of snarling water, the oceans of jagged ice, the foggy silence of the unknown. The date was July 13, 1772.

But Cook and his men enjoyed safe passage. Benjamin Franklin had ordered all colonial ships to respect the scientific nature of Cook’s voyages and grant him safe passage in the name of all mankind. This edict was graciously and wisely decreed despite the fact the British and the Colonists were at war during Cook’s expeditions.

The two small ships skirted the Euro-

pean and African coastlines en route to the Cape of Good Hope. A strong wind in their sails, they steered south toward the bottom of the world. On January 17, 1773, these men became the first in his-tory to cross the Antarctic Circle. Twice more before the completion of the voyage, the crew would sail within the Antarc-tic Circle. Resolution had but one small heater aboard so Cook finally ordered his freezing crew northward, for Fall was ap-proaching in the southern hemisphere.

Warmer WatersChilled to the bone, the sailors headed

north to New Zealand and Tahiti. One cruel leg of this journey lasted seventeen weeks and logged in eleven thousand miles, all without even a glimpse of land on the horizon. Along the way, a nasty storm separated the two ships. Furneaux’s crew arrived first in New Zealand’s Queen Charlotte Sound and battled with the Maoris. One dozen crew members were lost. Adventure and her weary men decided to return to England.

Cook, along with his shipmates, con-tinued on with the mission. He charted their course back to the waters of the Antarctic. At his southernmost point of 7l degrees 10 minutes south, Cook de-clared that if a continent did lie farther south it must be fit only for penguin!

During this voyage Cook also mapped and named the New Hebrides, New Caledonia and South Georgia. And although Cook’s ship passed within 100 miles of Antarctica while in the Indian Ocean, her crew never spotted land. They were so very close to this elusive landfall yet never knew, thanks to this odd twist of fate.

A Joyous Return to EnglandThree years, eighteen days after setting

sail, James Cook, Resolution and a full crew tied up alongside English soil. The date, July 30, 1775, was one long year af-ter Adventure’s return. Seventy thousand

miles of ocean had washed across Reso-lution’s bow. Sadly, four men had been lost, but none to scurvy. The Copley Gold Medal, Britain’s highest honor for intellectual achievement, was bestowed upon Cook. And, following two of the longest voyages ever undertaken, James Cook was finally promoted to Captain.

A third and final voyage was planned for Cook, cutting short his well-deserved days with his wife and family. His next assignment was to discover a navigable route between Britain and the East Indies via a northern passage in the Pacific. It seems his steamer trunks would be restocked, new ships would be outfitted, and Captain Cook would once again be underway.

PERSONALITY PROFILES

International Jazz Pianist Kym Purling Australian U.S.-based pianist Kym Purling is a world-renowned musician who has performed internationally since the age of 14. He made his first national television

appearance at age 16 and has since worked in over 50 countries and 50 states in the U.S. as a pianist, performer, composer, conductor, arranger, educator and recording artist. 

Purling has recorded six albums, won awards and performed in many of the major concert halls and arenas around the world. He has appeared on numerous televi-sion shows and in countless newspapers and magazines in many countries and has also had national television documentaries produced about his incredible life story and career. Purling was found abandoned during the

Vietnam War at only a few days old and several months later became one of the very first overseas adoptions of any nationality in Australia. 

Trained classically from the age of six, Purling has since made significant contribu-tions in the worlds of jazz and musical theater. He has enjoyed a dual career as a performer in his own right and as a musical director and/or pianist for Natalie Cole, Engelbert Humperdinck, The Mills Brothers, Kaye Starr, Buddy Greco, Clint Holmes and many other world renowned artists. He has musical directed and conducted touring Broadway shows from New York City and has also dedicated much of his time towards charity organizations and cross cultural performance and education.

Cruise Director Rick SpathRick has been at sea for over 40 years and first became a Cruise Director in

1984. This year marks his sixteenth World Cruise, and he always enjoys traveling to various parts of the world, although his favorite region is the South Pacific.

Rick is originally from New Jersey but now hails from Charlotte, North Carolina, where he spends his vacations playing golf and with his four children – Michael, Anne-Marie, Nicholas and Steven. He met his wife Patty (from Twinsburg, Ohio) while at another company where she was the retail manager. Rick is a graduate of Springfield College in Massachusetts where he earned a Bachelor of Science degree with a concentration in physical education and kinesiology.

Rick has worked with, and interviewed, hundreds of celebrity actors, best-selling authors, sports personalities as well as two United States Presidents. His long career in the cruise industry began in the late ’70s, making continual progress through the ranks and working for several cruise lines in the process. As he moved up the ladder of success, Rick says he always wanted to work for Crystal Cruises: “It’s a pleasure to work for such a wonderful company, and with a crew who love what they do. I’ve always felt that if the crew enjoyed what they did, it would be infectious, hence, the guests would enjoy their cruise experi-ence that much more. 150 different main courses, several lavish luncheon buffets and the Mozart dessert buffet. In addition, he is responsible for Silk and Prego restaurants, Trident, the pool snack bar and ice cream bar, room service and for the culinary welfare of Crystal Serenity’s 630+ officers, staff and crew.

If you get a chance to tour the Galley, you will see the large state-of-the-art food lockers which keep all this food fresh. Crystal Serenity is equipped with the most advanced “fresh air ” sys-tems for the storage of meat, fresh fish, produce, and dairy products in high-humidity, constant temperature rooms. Guests aboard a typical Crystal cruise consume over 50 pounds of caviar, 4,000 pounds of fresh fish, 30,000 eggs, 600 pounds of fresh strawberries, and well over 4 tons of bananas, oranges, mango, papayas, and melons. Our guests deter-mine the choice of menu items. Werner says “We must provide our guests with Prime Rib, the finest steaks and chops, smoked salmon, lobster, and only the freshest of fish.” Werner is a very busy man. Judging by the elegant repasts pro-vided to our guests, Werner is not only a busy chef, but an extremely successful one.

Executive Chef Werner Brenner

Werner was born and raised in a town called Kimberley, located in the North-ern Cape of South Africa. At the age of

nine Werner moved to Austria with his family. As a child, Werner knew that one day he would travel and become

a chef. From an early age, Werner dis-covered his interest in food by pestering his mother with question after question about cooking.

After learning all he could from his mother, Werner decided he would have to begin his travels to further his culinary education. This led him to an apprentice-ship as a chef at one of the finest resorts in the Austrian Alps. It was at this time that Werner began his studies at the Culinary Academy of Bad Gleichen-berg. There he mastered the essentials of cooking — from chopping vegetables to preparing gourmet dishes on demand. Werner graduated with honors from the Academy at the age of 18. Following his military service, he spent three years cooking in some of the finest resorts in Austria.

While working in Austria, Werner discovered the perfect way to blend his love of travel with his love of food — his brother at that time working as a head-waiter told him of the opportunities available for chefs on cruise ships. It wasn’t

long before Werner decided to make the move toward the cruise industry.

Werner’s life-at-sea began in 1990 when he joined Royal Princess as a Chef de Partie. Through hard work, deter-mination and talent, he moved up to Sous Chef. Werner then decided to take a break from the ships and spent four years in South Africa where he worked in Cape Town as Executive Chef. In the year 2000 Werner decided to go back to sea, and he joined Crystal Harmony as a Sr. Sous Chef. There he met his fiancé Sarah and they live happily together in Alicante Spain. Werner has worked on all of our Crystal Vessels and has been promoted to Executive Chef.

“A chef that works and travels on the open seas is a lucky chef ” says Werner “and a chef that works and travels on Crystal Serenity is luckiest of all. The galley staff that I work with are trained professionals eager to exceed the expec-tations of the guests they serve — they provide an enjoyable work atmosphere. The ship on which we sail provides the itineraries and experiences that allow me to further my culinary education almost every day.”

In addition to his regular full day as chef, establishing the daily menus and overseeing a galley staff of 110, Werner works with hotel stores to keep the pan-try well-stocked. The galley provisions for a typical cruise include enough supplies for as many as 1,400 breakfasts, lunches and dinners each day. Each lunch and dinner menu, for example, has four or five main courses, which vary daily. Over a cruise like this, Werner must stock food for about 10,000 dinners, almost as many lunches and breakfasts, including over
