Welcome and thank you for working the concessions stand. This guide provides general expectations for new parents, opening and closing instructions, including a quick start sheet, and suggested food quantities to assist with optimal food prep.

Expectations for New Parents

Concessions is a busy but fun job that helps make money for team needs like uniform replacement, athletic department needs like equipment replacement and field repair, and student needs like senior scholarships. All families are expected to work at least one concessions shift per season (individual team requirements may vary). While working concessions, you may be expected to take and fill orders, make change, make coffee/hot cocoa, make hotdogs/pretzels, place pizza on plates, wash dishes, wipe down counters, etc. Some events, like Varsity football games, large track invitational, etc. are very busy. Most other events have a steady flow of customers with a peak during half times. Sometimes concessions are very slow. When it’s colder out, people tend to eat less (although hot cocoa sells fast). This guide, coupled with signs in the stand, will provide you all the information you need to work a shift, even if it’s brand new to you. There are some important health department guidelines to adhere to:

1. When you arrive, read the health notice posted on the white board and/or wall 2. Handwashing

a. Handwashing sign shall be posted at all handwashing sinks in the concession stand.

b. Handwashing shall occur only at the designated handwashing sinks.

c. Handwashing shall occur after engaging in any activity that contaminates the hands prior to engaging in food preparation.

3. Hair restraints – all food handlers shall wear hair restraints. a. Hair restraints include hair nets, baseball caps/hats or ponytails with

no loose hair falling out. b. Hair ties and a spare hat are clipped to the white board in the stand

4. Gloves shall be worn any time food is handled. a. Change your task, change your gloves. (e.g., remove gloves if

handling money and discard.) b. Typically, we have designated people to handle money and fulfill orders and

others preparing the food to minimize the putting on/taking off of gloves. Sometimes, if you are working a short-staffed shift, you may need to do both.

Outdoor Concession Stand

Quick Start Wipe down all counters and surfaces, inside microwave, warmers with the Bleach Spray

Turn on the Oven, Stovetop, Pizza Warmer, other warmers.

Heat up/Make: x Hot dogs x Hot water x Coffee (if cold outside) x Pretzels (2-3 trays each Salt and Cinnamon/Sugar) x Popcorn (if using Machine – big nights only – usually only varsity football games)

Set up/out x Candy, small Chips, Nacho chips, Ramen, Microwave popcorn, Hot cocoa x Tables - place in front of stand with condiments and napkins (wipe down first) x Needed utensils, gloves, foil, Pam (pretzels), forks (Ramen), coffee cups, nacho trays,

cheese cups (for pretzels with cheese – for nachos use tray), spoon (cocoa)

Pizza will arrive about 15-30 minutes before the first game time. x Give the driver a $5 tip from the cash box and put Pizza receipt in cash box. x Mark Pizza box edge with a “P” (pepperoni) or a “C” (cheese) and put pizzas in the

pizza warmer. x Keep pizzas in the box when they are in the warmer or they dry out.

For Varsity Football nights, take food to press box (or set aside for them to collect). Usually 3 salt, 3 Cinnamon/Sugar pretzels, 6 hotdogs, 1 whole pepperoni, 1 whole cheese. Press box should have been stocked with condiments and waters ahead of time.

Ryan Young or Claire Collins should bring the cash bag. Put money in cash box.

Open rolling window 15-30 minutes before first game time. For large events (varsity football games, large track meets, special events…) open window 45-60 before event.

Outdoor Concession Stand Opening and Operating Procedures �

Wipe down all counters and surfaces, inside microwave, warmers and tables with the Bleach Spray solution. Open rolling window and wipe those counters too.

Turn on the Pizza Warmer, coffee machine (if cold out), food warmers, Oven to 400o and stove top burners

��������������� Take small black pot and fill half way with water for hot dogs – place on stove with burner at

HIGH. Remove hot dog buns from refrigerator to “warm up”.

Turn Heat and Humidity dials to 8

Press Bake, + until reach 400, then Start. A timer will start to let you know when oven pre-heated. Add another 5 mins. (old oven)

Pretzels in this freezer.

Utensils.

Foil, and food service gloves.

Take a bag of frozen pretzels, a packet of salt and a packet of cinnamon/sugar out of the freezer beside the large drink coolers. (cooking instructions below)

Take out utensils. Utensils are on the back shelves in a small bin or by the sink – you usually need a couple pairs of tongs, a knife, and the pizza cutter.

Take large silver pot and fill with water and place on stove with burner at HIGH (this is for hot chocolate, tea, Ramen Noodles, etc.) When water reaches about 185° pour water CAREFULLY into a thermos.

x Use brown thermos for hot cocoa Use blue thermos for plain water x Use Digital Thermometer to measure temperature

Once the hot dog water is boiling add hot dogs, return to boil and cook for approximately 5 minutes. Remove hot dogs from water, place in buns and wrap with aluminum sheets and move to front warmers.

Extra Nacho Cheese

Make a pot or two of coffee (just on the cooler nights). Coffee grounds are in the refrigerator.

Check Nacho Cheese Machine for Cheese. If empty, replace bag with a new bag of cheese. If low, make sure a new bag is in the reserve bin inside the machine. Instructions for replacing bags are posted on the bulletin board. Make sure you write the date on the cheese bag. If date on current bag is more than 10 days old replace bag with new cheese.

Take candy containers from the refrigerator and under the work tables and put them on the red display shelves.

Take out chips and misc. food items from large bins under the work tables. Tortilla Chips and Ramen Noodles are in the large red bins under table in front of oven, Hot Chocolate Mix is in fridge or in back cabinets (under the cheese machine).

Take small table(s) from the back room out to front of concession stand and put condiments and napkins on it. Fill napkin holders if they are low. Most condiments are in the refrigerator. Extra Napkins are on the shelf in the front left corner of stand. For small events just put condiments and napkin holders on the counter - no need for tables.

Change Specials on all Menu boards as needed (add/remove Chick Fil A, Friend Rice, Hand Warmers, Icee Pops, etc.)

�For Varsity Football Games – take menu from beside Gatorade Cooler beside the small rollup window and hang on outside of concession stand between the two large rollup.�

Make sure you have enough plastic gloves, aluminum sheets, pretzel salt, cinnamon & sugar, PAM Spray, paper plates, napkins etc. out (extra supplies are in the cabinets/shelves at the back of the concession stand, under the work tables or on the shelves in the front left corner of the concession stand).

Separate plates (they stick) for serving pizza. Do not plate pizza early – it dries out.

For Varsity Football nights, take food to press box (or set aside for them to collect). Usually 3 salt, 3 Cinnamon/Sugar pretzels, 6 hotdogs, 1 whole pepperoni, 1 whole cheese. Press box should have been stocked with condiments and waters ahead of time.

Keep pizzas in the box when they are in the warmer or they dry out. Cooking RAMEN Noodles:

Remove plastic wrap from cup.

Partially pull back lid.

Fill cup to the inside line with hot water from brown thermos.

Close top of Noodle cup.

Give to customer with a fork, tell them to keep lid closed for a minute or two and remind customer that it is HOT!

Kettle Warmer Warmer switch

Cooking Pretzels:

Place pretzels on cooking sheet.

Spray pretzels with PAM spray.

Sprinkle Salt or Cinnamon/Sugar mix over pretzel before baking.

Place in oven and set timer: 12 minutes if thawed 14 minutes if frozen First set of pretzels may take longer – oven takes a while to really warm up.

After baking—wrap in foil, mark with an “S” (salt) or C” (cinn/sugar) and place in front warmers.

Making Popcorn (Use large popcorn popper only for big sports nights – otherwise use microwave popcorn):

Turn on Warmer, Kettle Warmer, and Kettle Rotation (3 switches)

Wait few minutes

If Popcorn pre-measured, open oil/butter side and squeeze into kettle. Let run for ~1 minute until melted (watch to avoid smoking/burning). Add popcorn kernels/salt side of packet.

When kettle stops popping, use the handle in front to turn the kettle and empty it of popped kernels.

Bag up some popcorn to have ready to serve and leave in popcorn warmer.

For large events, pop 3-4 kettles of popcorn before game starts, pop more as needed.

If night is especially busy, you may want to have in reserve x a few plates of pizza plated x a couple nacho trays set up with chips (not cheese) x a couple Ramen noodles unwrapped. x 1-2 popped microwave popcorn bags (if not using Popcorn Machine) x a pot of hot water ready at all times.

Outdoor Concession Stand Closing Procedures

Any leftover hot food can be given free to volunteers or to students, fans, etc.

Popcorn Kettle and warmer are OFF. Do this early so kettle has time to cool.

The large pizza warmer is OFF (switch is at the bottom left corner).

The Oven and Stove top are both OFF.

All electrical devices are OFF (food warmers, coffee maker, etc.) x EXCEPTION—Leave the Cheese Machine ON and with the cheese in it.

All Counter tops, warmers, popcorn machine, microwaves, etc. have been cleaned/wiped using the Bleach solution in the spray bottles.

Remove popcorn kettle for more thorough cleaning – use hot pads if needed. Clean inside and outside of kettle using bleach solution.

The drink refrigerators are restocked with drinks.

ALL food items are securely stored and put away: x Chocolate candy goes in the small Pepsi refrigerator in bins x “Sugar” candy, chips, Slim Jims, etc. go in the large bins with lids, under the work

tables. (Airheads, Starburst, Swedish Fish, Sour Patch, Mentos, etc.) x Condiments, opened hot chocolate mix, coffee grounds, hot dogs and buns go in

the white Refrigerator beside the triple sink. x Uncooked pretzels go back in the large white Freezer, along with Salt and

Cinn/sugar mix. x Nothing edible should be left out on the counters. (Including sugar, creamer,

condiments, hot chocolate mix, chips, coffee, etc.)

All pots/pans/utensils/bowls are washed and set to dry on racks or put in utensil bin. Washing instructions are posted above the sink

All of the large brown “thermos” containers are emptied and cleaned.

Any tables or items outside are wiped down/cleaned and brought back inside the stand. (Tables are stored in back storage room).

Floor is clean (there should be a broom and dustpan in back room or by the front door).

Large trash can bag is removed, tied up and placed outside the concession stand. New trash bag is installed in large trash can inside.

All money is put in cash bag and given to Ryan Young, Claire Collins, or BRABC Officer.
