    Meet Patricia Smoak a long time Harrisburger who in her earlyyears was a homemaker turned truck driver, an 18 wheeler noless for a local moving company. The company's motto was"we move anything" and she did just that! Pat recalled haulinganything and everything from furniture, mechanical parts like

    nuts and bolts, to gravel. She often picked up cargo from traindepots and transferred them to a truck with only a dolly forequipment. Pat worked alone and was the first womantohold such a position which included transporting radioactivematerials to and from SRS. She remembers the hard work andexhaustion although she is still thankful that she was able toprovide for her family. Later on in life Pat was employed forover 20 years as a Corrections Officer at YDC. Obviously Patlikes a challenge!By all accounts Pat is also a "domestic goddess". She is a

    blue ribbon winner for her preserves and canning and has abeautiful garden that seems to flourish when the rest of ushave given up on ours. Pat fabricated her raised beds to beaccessible for anyone who cannot bend over versus traditionalstyles of design. For years Pat picked up the highest awardsincluding Grand Champion at the local agricultural fair and shestill has some of her products tucked away in her cupboards.You name it and she could preserve it, including meat, veggiesand beans to jams, jellies and chutneys. Pat tributes hercooking talents to her grandmother and grandfather who

    raised her on a farm in Blakely, Ga. and who slaughtered theirown meat and made homemade sausage along with saltedpork and dried jerky. One of her grandmother's favorite disheswas okra, corn and tomato soup which Pat later modified toinclude onion and basil. Yumm! Some other favorites were hercracklin bread and 1-2-3 Cake... of course it includes :1 stick butter2 cups sugar3 cups flourMelt cocoa, butter and sugar and drizzle on the top. Mmmmm

    Pumpkin Spice Cakew/ Cinnamon Cream Cheese Frosting

    Author: Divas Can Cook BlogServes:12Ingredients

    !3 cups all-puprose flour!1!teaspoons baking soda!"teaspoon salt!1 cup light brown sugar, packed

    !1!cups white sugar!#cup of butter, softened

    !3 eggs!2 teaspoons vanilla extract!1 tablespoon pumpkin spice!1!cup buttermilk!15 oz. 100% pure pumpkin (canned)!CINNAMON CREAM CHEESE FROSTING!2 (8 oz) packs cream cheese, softened!!cup butter softened, softened!1 teaspoon heavy cream!4 cups powdered sugar!1 teaspoon vanilla extract!cinnamon (as much as you like. Can also use pumpkin

    spice)Instructions1. Preheat oven to 275 F.2. Grease and flour 3 round ( 9-inch) cake pans. Set aside.3. In a large bowl whisk together flour, baking soda and salt.Set aside.4. In a large bowl cream together sugars and butter.5. Beat in each egg one at a time.6. Fold in vanilla and pumpkin spice.7. Add dry ingredients to wet ingredients, alternating with thebuttermilk.8. Fold in pure pumpkin.

    9. Pour batter evenly into the cake pans.10. Bake for 30-35 minutes (check it at 25 minutes) or untiltoothpick inserted in center comes outwith moist crumbs attached. (do not overbake. Cake willcontinue cooking while it cools)11. Let cake sit in pans for 5-10 minutes before removingand placing on a cooling rack to coolcompletely.12. While cake is cooling make the frosting.13. Cream together cream cheese, butter and heavy cream.14. Mix in powdered sugar a little at a time until creamy.15. Fold in vanilla and cinnamon.

    16. Frost cooled cakes.

    How To Keep Our Neighborhoods CleanEarly in the morning and late in the afternoon I love to take a walk to see progress in the neighborhood.

    As I am getting my daily burn, although I do notice the new and updated beauty to the neighborhood, there seemsto be areas filled with trash and debris. Though I love my neighborhood, I do feel that cleanliness should be an

    idea claimed by the majority. No one should want to see trash and debris in their neighbor.That should be agreed upon as a whole. Growing up in both the Laney Walker/Bethlehem and Harrisburgneighbors I have seen a great deal of trash. Though these are older areas, this should not make it acceptable toleave areas filled with trash and debris. By writing this article I hope to inspire others to want to see cleanlinessand beauty in the neighborhood.Neighborhood cleanups can be fun but you need numbers. Neighborhoods cleanups are not the only way thiscan be done. Here a few suggestions that I would like to challenge everyone to do in order to keep ourneighborhoods clean.

    1. If you are walking through the neighbor pick up trash along the way. You can carry a small grocery bag to put

    the trash in. Wear gloves if possible.2. Report unclean homes that are abandoned that has overgrown grass and filth.3. Report inoperable/abandoned vehicles that sit on the side of the road.4. Recycle all recyclable trash, electronics. Clean your recyclables.5. Remove all garbage cans once the trash man has dumped them6. Pick up floating trash in your yard and your neighbors yard if you see it.7. Keep your grass cut. It gives the appearance of cleanliness and order.8. Remove inoperable vehicles from your yard. This eliminates yard clutter.People will pay you for you inoperable vehicles.The Salvation Army take car donations. Take advantage of these services.

    Together with these steps this can also keep crime down.Abandoned dirty homes attract criminalactivity since no one can see what is actually going on inside of there.This will help keep our communities stronger. Cleaner neighborhoods get more respect.
