We are delighted that you are looking to hold a canapé and drinks reception at

Burghley House. Absolute Taste is renowned for beautifully styled, fabulous food and

our food is the most important thing we do. Every element of our canapés are

intricately styled and carefully designed by our chefs, combining delicious flavours,

textures and trends.

Absolute Taste is one of the leading catering and event design companies and in

October 2013, Absolute Taste was awarded the inaugural Event Caterer of the Year

at the Food Service Catey Awards for its bespoke approach and dedication delivering

stunning food and service.

Fabulous food is the most important thing we do. We are committed to preparing

delicious food using only the freshest ingredients from our trusted suppliers, many of

whom are local to Burghley House.

The principle that guides our decisions is simple: all of our food is expertly prepared

by our chefs using only the highest quality ingredients. We have built relationships

with fantastic suppliers allowing us to have access to the best produce from the

market. Our chefs’ skills and creativity ensures that our menus are delicious, inspiring

and well-balanced whether they are preparing elegant canapés or a lavish evening

dinner.

Cornish crab salad on a baby cucumber disc with a herb and

lemon crème fraîche

Venison carpaccio with juniper and herb crust on a brioche

croute with a pink onion compote

Venison and quail scotch egg with a cranberry dip

Fresh tuna tataki with radish, apple and mustard served “in”

chopsticks

Pan fried scallops with an apple and ginger dressing served on

an oriental spoon

Foie gras and chicken liver parfait served on a granary croute

topped with a red onion marmalade

Lemon sole and “French Fries” with fresh herbs and garlic

A pale straw colour and fresh citrus aromas with yeasty

overtones. The palate is elegant with strawberry pinot fruit.

Laurent Perrier Brut, NV, France, £50.00

Pale gold in colour with fine and persistent bubbles. Delicate

and fresh aromas with good complexity and notes of citrus fruit

ROSE WINE

Conte Vecchio Pinot Grigio Blush, Italy, 2009, £18.50

The nose is fruity, slightly floral and pleasant; particularly

crisp and balanced palate.

Cool, crisp and pale with zesty pink grapefruit and raspberry

Friendly and approachable with ripe plum and blackcurrant fruit

and soft rounded tannins.

Alto Bajo Cabernet Sauvignon, Chile, 2013 £18.40

Ripe red cherries and blackberries with notes of pepper and figs,

and a smooth finish.

Ceppaiano Chianti, Italy, 2012, £20.00

Vivacious ruby red colour tending to garnet with ageing. Intense

and characteristic bouquet, fruity with a violet fragrance and a

slight hint of cherries.

L’Hospitalet Pinot Noir, France, 2012, £20.75

A striking and vivid red colour with several punnets worth of red

berry fruit on the nose and palate. Soft and fresh with light ripe

tannins.

Chateau Lamartre St-Emilion Grand Cru, France, 2010, £25.00

Ripe blackberry, damson and black cherry fruit. Sweet juicy

tannins, spicy cinnamon and cedar oak and lively acidity complete

This wine displays aromas and flavours of pear and green

apples with a pale straw yellow colour in the glass.

Stone Barn Chardonnay, California, USA, 2012, £20.00

Fruity Californian chardonnay with ripe melon, peach and red

apple fruit spruced up with some toasty, vanilla oak richness.

Pouilly Fumé, Domaine Paul Buisse, France, 2012 £20.75

A fragrant and refreshing aromatic wine, with white fruit and

acacia flower aromas, round and slightly creamy in the mouth

with a delicate “smoky” tint.

Chablis Domaine de Marroniers, France 2011, £23.00

Classic, complex flinty nose with some lovely white flowers and

citrus fruits (lemon, quince) as well as a touch of toasted

almonds and hazelnuts.
