Ruth moved to PA after high school. After arriving in Philadelphia, Ruth attended Philadelphia General Hospital where she received her training and became a LPN. Ruth worked at Abington Hospital as a nurse for 20 to 30 years. She had always wanted to be a nurse, and credits her mother for giving her the passion to be very caring and compassionate. After retiring from Abington, Ruth continued to be very active. She enjoyed participating in many different clubs such as the PTA board, and church services. Ruth said she was blessed to be married twice to two great husbands. In her first marriage, she had four children. After the passing of her first husband, she married again and had one more child. Ruth says she always tries to be a good person, to treat people the way she would want to be treated, and not be afraid to speak up for herself. PUMPKIN ICE CREAM PIE

Ingredients

Instructions

• 1 1/2 pints vanilla ice cream• 3 eggs• 1 3/4 cup pumpkin puree• 3/4 cup sugar• 1/2 tsp salt

• 1 tsp cinnamon• 1/4 tsp ginger• 1/4 tsp nutmeg• 9” unbaked pie shell

1. Pre-heat oven to 425 degrees. (place ice cream on top of stove to soften.)2. In large bowl whisk eggs and stir in pumpkin, sugar, salt, and spices.3. Mix in ice cream until smooth. Pour into pie shell. 4. Bake for 15 minutes in oven. Reduce oven temperature to 350 degrees and bake

30-40 minutes until filling is set. Yield: 8 slices
