British chocolatier and cocoa grower, Hotel Chocolat, has taken a dramatic step to share its world of cocoa, with the opening of Boucan, Saint Lucia – set in the dramatic beauty of Hotel Chocolat’s own cocoa plantation, The Rabot Estate.

– Welcome –

Set high amongst the rainforest and sun-dappled cocoa groves of Saint Lucia’s oldest estate, Boucan is a stunning blend of luxurious plantation chic, natural beauty and wellbeing. It’s a truly special place where luxury and style come together with the drama of big nature and, of course, cocoa and chocolate. You’ll stay in one of only 14 luxury Lodges, designed in a blend of Hotel Chocolat’s contemporary style and traditional West Indian charm – perfectly positioned to catch the cooling and soothing tropical breezes.

Relax and unwind at the exclusive infinity pool and clubhouse, or treat yourself to a soothing treatment at the CocoaJuvenate Spa. Explore your beautiful surroundings, take a tour, or walk the estate trails and get up close and personal with cocoa like never before. The choice is all yours. And at the hotel’s restaurant, sit back and enjoy a soothing sundowner cocktail and then discover our pioneering menu of cacao cuisine – and all whilst admiring the sheer scale of the Piton Mountains that rise imposingly in front of you.



– Club Boucan –

The private pool is situated in Club Boucan – 2,500 square feet reserved exclusively for hotel guests. The striking, infinity black quartz pool is 50 feet long and has stunning views of the Piton Mountains. Reclining sun loungers with shade options are available along with the services of a club steward for drinks, nibbles and lunch. The exclusive Club Bar serves estate fruit cocktails, chilled champagnes, prosecco and wines all day.



– Experiences –

Our Signature Experience –Tree to Bar

Unique to the Rabot Estate, the Tree to Bar Experience is an exclusive opportunity for guests to get up close and personal with everything to do with growing cocoa and culminates with creating their own chocolate! Guests start off with a walk through the estate groves, selecting ripe cocoa pods to cut from the tree, and ends with hands-on experience where guests make their own chocolate bar from beans that they have roasted themselves. The tour includes all the stages in between – from the seedling nursery and fermenting room, to the sun-drying station, grinding, mixing and lots of tasting!

Lasts 3 hours and costs US $65pp

We want you to be as active or as laid back as you wish during your stay with us, therefore we have a wide range of experiences; from self-guided strolls through our cocoa groves to exciting sea adventures!
