THE CRuSHER CAbERNET SAuvIGNON 2011This dark red brick-colored wine has enticing aromas of raspberries and plums with the signature Wilson Vineyards spice. Lively dark fruit comes through on the palate with a focused dry blackberry profile, full of secondary nuances. There is a great deal of background complexity to this wine, with notes of fresh coffee and dusty, sweet leather- dark, rich flavors that give this wine a bold, masculine character. The final balance between dark jammy fruit and dusty, earthy dryness is both alluring and satisfying.

THE CRuSHER CHARDONNAy 2011 Rich blonde in color, this full-bodied Chardonnay displays vibrant vanilla, key lime, and citrus aromas. Smooth and fresh, with a touch of zest, there are nuances of pear and almond flavors intertwined with the classic California Chardonnay profile, and an edge of tangerine that gives this wine a unique slant. There is also a nice underpinning of limestone and minerality that provides structure, and a clean, toasty finish from the gentle six months that this wine was aged on French oak.

THE CRuSHER PETITE SIRAH 2011 Rich, dark aromas of blackberries, violets, and crushed white pepper invite one into this Clarksburg appellation Petite Sirah. A jammy array of blackberry and black cherry -flavors dominate the palate, complemented by hints of vanilla, sassafras, and exotic oaky notes that linger through the -finish. Full-bodied, with rich mouth-filling tannins, the wine displays a multi-layered depth and complexity that invites lingered contemplation and enjoyment.

THE CRuSHER RED bLEND 2011 Opens with a fruity bouquet of Bing Cherry, wild strawberry, and black plum cou-pled with toasty notes of cedar and cinnamon bark. On the palate a flavorful array of boysenberries, raspberries and tart cherries take center stage complemented by hints of caramel, milk chocolate and espresso on the finish. This medium-bodied red blend is wonderfully balanced with bright yet well-integrated acidity.

THE CRuSHER vIOGNIER 2011 Golden straw in color, the 2011 Viognier is bright and focused with aromas of Bosc pear, white peach, pineapple sage and white pepper. Lurid -flavors of wild fl-ower honey, tart nectarine, lime zest, pineapple and mango all come together nicely on the palate. This wine is well-balanced with a racy and lean mid-palate. It’s clean, crisp and refreshing showing lots of ripe tropical fruit -flavors with a nice burst of acidity through the finish. This classic northern Californian Viognier will pair nicely with many dishes, especially Asian fare.

HAMILTON RuSSELL PINOT NOIR 2010The sublime 2010 Pinot Noir has a ripe bouquet of red currant, strawberry and Morello that shows no signs of under-ripeness. The palate is medium-bodied with ripe, fleshy red currant and cranberry fruit that is underpinned by extremely fine tannins. This has a wonderful build in the mouth and the finish is exuber-ant and almost feisty!

REyNEKE SyRAH 2010The 2010 Syrah has a show-stopping bouquet that is so complex and defined that it roots you to the spot: notes of blackberry, briary, seaweed and a faint touch of peppermint. The palate is medium-bodied with very fine tannins. There is a dense core of blackberry and bay leaf, then white pepper, thyme and fennel. This is a glorious Syrah from one of South Africa’s finest winemakers.

HAMILTON RuSSELL CHARDONNAy 2011This Chardonnay is well defined and understated on the nose, unfurling to reveal fresh lime, red apple and a touch of crisp pear that is very well defined. The palate is effervescent on the entry with a fine thread of acidity that counter-balances the ripe mango, clementine and apricot notes that decorate the finish.

KEN FORRESTER PETIT CAbERNET/MERLOT 2011The 2011 Petit Cabernet Sauvignon/Merlot has a superb bouquet with simple but fresh raspberry and wild strawberry fruit laced with cedar and sandalwood aromas. The palate is medium-bodied with crisp acidity and fine tannins. There is just a smattering of dark chocolate with a wonderful Old World finish.

KEN FORRESTER PETIT CHENIN bLANC 2011The 2011 Petit Chenin Blanc has a light, simple and attractive bouquet with some lovely pine and mint notes emerging with aeration. The palate is medium-bodied with crisp acidity. There are hints of nectarine and dried apricot with plenty of waxy fruit towards the concise finish.

The wines of Chile cer tainly have a little something for everyone. Whether you are looking for an adventure in taste or simply a solid value, Chile has it all. Chilean wine has been gaining notice here since the late 1980s, but Chilean wineries have been in existence for more than 500 years! Our buyer has searched the country from top to bottom and visited many Chilean wineries. With the spring creeping up on us, we decided to bring some new selections to the table and here are a few shining examples below.

vAyA vADISO CHARDONNAy 2012This Chardonnay boasts aromas of slightly sweet tropical fruits with undertones of smooth vanilla and gentle spice. Well-balanced flavors of bright citrus and crisp pear result in a gentle finish. Enjoy with some flounder, shell fish, or a nice green salad.

vAyA vADISO SAuvIGNON bLANC 2012Aromas of lemon peel and orange blossom with flavors of gooseberry and tropical passion fruit are evoked in this Chilean Sauvignon Blanc. A clean acidity permeates flavors of green apple and crisp pear for a bright linger-ing finish.

vAyA vADISO MERLOT 2012This Merlot dances with aromas of bramble berry, dried violet and sweet spice. Rich and inviting flavors of concentrated black fruits, juicy plum and dark cherry are balanced by a firm structure and a finish that lasts past the setting sun.

TAbALI vIOGNIER 2012This aromatic and subtle Viognier presents aromas of citrus and floral notes. On the palate gentle floral, honeyed and citrus flavors mingle with a soft rounded texture and great purity. This is an amazing wine at a sensible price. Try it tonight with some chilled shellfish or on its own as an apéritif.

TAbALI RESERvA PINOT NOIR 2010Aromas of strawberries, black cherries and hints of violets start off this juicy Chilean Pinot Noir. On the palate it is dry, with medium body dominated by red fruits and a smooth tannin structure complete with a long finish. It is balanced, interesting and a great wine to share with friends in the afternoon sunshine.

PINyOLET GARNACHA 2011Aged completely in stainless steel on its lees. Basically a baby Priorato, it reveals rich strawberry and raspberry fruit intermixed with notes of licorice, crushed rock and earth, all offered in a medium to full-bodied, heady style. The price is a steal and the quality of the wine is impressive. Enjoy it over the next 4-6 years or longer.

NIEL SANTOFIMIA ALMANSA 2011This would be a remarkable value at twice this price. Black and blue fruits on the highly fragrant, smoke-accented nose. Juicy, penetrating blueberry and cherry flavors display very good clarity and pick up ripeness and spiciness with air. Fine-grained tannins give shape and grip to the long, spicy finish. A Garnacha, Merlot blend.

FILON REAL CALATAyuD 2011(100% garnacha, from vines that are reportedly over 50 years old and planted at 2,300 feet): Saturated ruby. Powerful scents of fresh dark berries, cola, flowers and smoky minerals. Broad and chewy, with sweet dark fruit and candied floral flavors and an intense spicy overtone. Dusty tannins add grip to the long, sappy finish, which features notes of bitter chocolate and licorice.

bOAS vINHAS bRANCO 2011This white Dao has intense flavors of green apple and grapefruit. Fresh and crisp with a nice roundness in the mouth and touch of mineral. The finish is crisp and clean with well balanced acidity. Goes well as a starter, seafood, fish and cold dishes.

DOM MARTINHO TINTO 2009Dark purple in color with intense aromas of ripe red fruits. This red offers rich, upfront plum and blackberry flavors with hints of leather. Firm tannins and a long, lingering finish. Great Value!

LuIS PATO vINHAS vELHAS 2010The 2010 Vinhas Velhas red is a big uptick in depth and power over its elegant sibling, the Vinha Barrosa. Intense, crisp and quite stunning this year, it is grip-ping on the finish, silky and impressive. Its structure and acidity should give it a long life ahead, but it has the depth to support those structural items as well. I wouldn’t be surprised if this closes down hard for a couple of years in the near future. Drink 2014-2030.

DOMAINE GIRAuD COTES Du RHONE “LES GRENACHE DES SIxTE” 2011100% Grenache aged in 66% tank and 34% in older wood, the wine possesses a dark plum/ruby/purple color, copious tannins and body, earthy, sandy, loamy soil undertones, and plenty of kirsch, pepper and lavender. This big wine reveals superb concentration and enough structure to warrant several more months of cellaring. It has the potential to last at least 5-7 years.

NOvELLuM CHARDONNAy 2011100% Chardonnay (from 25- to 30-year-old vines), aged three months in a combination of Burgundy barrels (30%) and stainless steel tanks (70%), and, somewhat innovatively, is aged on Viognier lees which gives it a honeysuckle and white peach-scented nose. There is also a salty sea breeze character reminiscent of a crushed oyster shell-like note often detected in Loire Valley whites. This crisp, fresh, medium-bodied Cotes Catalanes exhibits lots of earthy/terroir characteristics. Think of it as a brisk, zesty, authoritatively flavored Chardonnay from the cool, alluvial soils on the banks of the Aigly River.

CROIx DE THOMAS MONTAGNE ST EMILION 2009Killer Juice! A nice nod towards a more fruit forward style while maintaining a solid foundation in its terroir. Silky flavors of plum and black cherry are surrounded by notes of coffee and dark chocolate.

It may not seem like it, but right around the corner is Rosé season and we’ve been tasting through dozens from the new crop. We are really excited with the 2012 samples we have tasted from France expected in the stores in early Spring. Look forward to our annual Rose sale!

MARCH CHEESE OF THE MONTH: bEEMSTER vLASKAAS When translated Vlaskaas means Flax cheese. This delightfully sweet and creamy cheese was made only during the harvest festival of the flax for the workers to eat on thick slices of bread and with porridge while they worked and celebrated. In 2004 the harvest festival celebration was recreated as a community event. While digging through archives for information on the exact way to recreate the harvest festival, the recipe for Vlaskaas was discovered. It was soon decided that after genera-tions of rest it was time for Vlaskaas to live again! Renowned for the best milk quality in The Nether-lands, Beemster was asked to make the Vlaskaas recipe. The result was spectacular! Vlaskaas became the centerpiece of the entire harvest festival and has won multiple best cheese awards around the world!

APRIL CHEESE OF THE MONTH:GERMAIN LANGRES 6.3Oz This classic AOC cheese from Champagne-Ardenne has its rind regularly washed in brine during its 5-week aging process. This is conducted in humid caves to maintain the desired texture and flavor. Beneath the soft, rippled, red-orange rind is a straw-yellow interior; the outer paste is soft and smooth and the core remains flaky until it’s at its peak maturity. It tastes salty, spicy and beefy. The top of the cheese is concave and tradition dictates pouring a little Marc de Champagne into it so when you cut it, it infuses the paste, making for a perfect synergy of flavors… but we won’t stop you from using your favorite Champagne or sparkling wine!

PreparationCut the onion into 4 wedges, chop the garlic into large pieces and place in saucepan. Add milk and simmer, 10 minutes. Strain the onion and garlic from the milk. In the meantime grate the Vlaskaas. Cut the bread into 1 inch cubes or ½ inch slices. Grind the coriander. Melt the butter in the fondue pot. In the pan used to simmer the garlic and onions, slowly mix the flour into the milk, stirring constantly. Pour the mixture into the fondue pot while stirring and let simmer for 1-2 minutes. Add the grated cheese little by little while continuing to stir. Let the cheese melt while stirring. Stir in wine. Once the fondue reaches an even texture, mix in the cognac and continue to stir. Keep fondue heated until ready to serve. Sprinkle the coriander on top before serving. Put the bread on the table and dip into the fondue. Serve with white wine or beer. Tips• Serve the fondue with a salad of fresh fruits: apples, bananas, oranges, grapes, and pineapples. • For a 100% alcohol-free fondue, replace the wine and cognac with 2 cups of an alcohol-free beer. • For a lactose free fondue, replace the milk with white wine.

On the palate it is soft and savory and the finish and aftertaste present, once again, the aromatic notes first felt on the nose.

EMA’S vINEyARD bRANCO 2010(Portugal) The 2010 Ema’s Vineyard white is Antao Vaz, 50% fermented in oak, the rest in tank. Just lovely, this is gentle and friendly, yet persistent, with a reasonable body and in-tensity of flavor on the finish. This combines a little seriousness with a fresh feel. I was a bit startled when I looked down at the price—it is a really nice value. This well-priced lineup from well-known winemaker Paulo Laureano provides a lot of bang for the buck. These generally won’t disappoint and the price is really right. Virtually everything overachieves.

ALTOS DE SAN ISIDRO MALbEC 2009 (Argentina) An elegant Malbec, with hints of wildflower, fresh herbs and ripe fruit on the nose. The palate is super bright but not overbearing with flavors of raspberry and black-berry fruit and a touch of minerality. Lighter in body than expected with all the ripeness but there is certainly a deceptive persistence to the finish.

PuNCH RARE COROJO CRySTAL TORPEDOMade with a reddish Sumatra wrapper, this cigar burns perfectly with notes of leather and earth. It smokes sweet, creamy and mild with a perfect draw.

In the early English pubs they served light ales and dark ales. So the name Pale Ale was simply a functional way to describe the beer. IPA was developed out of necessity. English soldiers stationed in India wanted beer. Nothing being produced would make the ocean journey. By the time it arrived it was usually undrinkable. The solution, add a lot of hops, they act as a natural preservative. India Pale Ale was born. Over the years it had a modest following until the modern Craft Brew craze embraced it and all of its possibilities. It allows the brew masters to express themselves. What type of hops? How much to use? When to add it? How long to leave it in? All of these factors give the brewers an opportunity to create something unique. IPA has become the signature item for many breweries. It identifies them to the beer drinkers of the world. Hop Heads will go to great lengths to find and purchase very special products that are produced in very limited quantities. The basic taste profile for an IPA is a flowery aroma and a bitter palate, both a product of the amount and types of hops used. It can be very simple and easy drinking with a pleasant aroma, or extremely bitter with a flowery nose that will knock your head back… and everywhere in between.

Spring is finally here. It is time to take a break from the heavy stouts and porters, and enjoy the refreshing hop-piness of an IPA. India Pale Ale highlights the bright flowery aromas and flavor of hops. The crisp bitterness of this wildly popular style of beer makes it a great match for a wide variety of food. Everything from your favorite burger, grilled chicken or fish, to a spicy stir fry, would be complimented nicely by any of the countless number of IPA’s currently available. TWIN ISLAND SAuvIGNON bLANC 2012 (New zealand) Pale lemon in color along with some intense aromas of passion fruit

and papaya with some grapefruit and fresh garden herb notes. The palate is bursting with citrus fruit and thyme, as well as succulent acidity leading to a fine juicy finish.

LuCA GRuCCI PROSECCO SuPERIORE DOCG (Italy) From Conegliano-Valdobbiadene, the heart of the Prosecco Superiore DOCG

area. Dry, crisp and well balanced, highlighting fresh peaches and red apple with citrus aromas. This is a fun and well-made sparkler.

PINyOLET SELECCION 2010(Spain) 80% old vine Grenache and 20% Carinena (from vines planted in 1945

and 1928 respectively). The wine was aged eight months in 2-year old French oak barrels. It exhibits copious notes of damp earth, forest floor, and a fiery, Graves-like, volcanic smokiness that comes from the vineyard’s soils. Rich, full-bodied and deep with plenty of kirsch, raspberry and black currant fruit characteristics, this mouthfilling red should drink well for 5-6 years.
