    Roast Chicken 101 with Honey Carrots Easy Meatloaf with Roasted Potatoes Slow Cooker Beans with Ham Hocks Broiled Seabass with Rice and Salad Dairy-Free Pesto Pasta Berry/Peach/Apple Crumble Baba Ghanoush with Pita and Cucumber Salad

    Braised chicken with coriander (Chile)

    Ingredients: 3 tbsp vegetable oil 3 to 4-lb chicken - rinsed,patted dry and cut into 8 serving pieces Salt, to taste Pepper, to taste 1 cup coarsely chopped onion 4 cloves garlic, minced 3/4 tsp dried oregano 2 tbsp plain flour 1 cup chicken stock 1/2 cup dry white wine 1 cup packed finely minced coriander leaves 1 finely sliced chilli (seeds kept in) Method: 1. Heat the oil in a large frying pan over medium heat 2. Add the chicken and cook until browned all over 3. Season with salt and black pepper 4. Transfer the chicken to a large plate while you saute the onion and garlic 5. Scrape the juices out of the frying pan into a larger cooking pot. Add the onion and garlic to the pot and saute over medium heat for 2 minutes 6. Add the chicken to the pot, along with the oregano and flour and stir 7. Pour the broth and wine into the pot, cover, and simmer over low heat until the chicken is just done 8. Just before serving, stir the coriander into the sauce and sprinkle with chopped chilli Score: GOL

    Lane Farms: The go-to farm for corn in the Santa Barbara area since 1868, Lane Farms uses no pesticides on their corn, so sometimes the tips of the ears can host the odd pest. If the tip has been affected just chop it off and youre good to go. A small sacrifice compared to spraying!

    , 2012 Roast Chicken 101 with Honeyed Carrots

    Ingredient: Whole or Chicken Salt Pepper For Carrots: 6 large carrots, peeled and sliced into 1/2 inch rounds 3 tbls ghee or butter 2 tbls agave nectar or honey 2 tbls parsley - chopped salt & pepper to taste

    For the Chicken:

    Preheat oven to 450 degrees.

    Wash your chicken, and pat very dry with paper towels.

    Salt and pepper chicken, adding other seasonings like Zuma Organic Poultry Blend, or Syrian Marjoram if desired.

    Roast for 45 minutes. It does NOT need to be on a rack of any kind! Thermometer, inserted in thickest part of thigh meat not touching bone - should read 165 degrees or slightly higher. Check this when you take it out at 45 minutes.

    Remove from oven and allow to stand 15 minutes before serving.

    I know, it sounds SO simple.. .and it is...

    Be sure to save the chicken carcass for a soup coming up that is out of this world good. Keep it in a freezer-safe zip lock until ready to use.

    For the Honey Carrots:

    While the chicken is cooking, melt butter or ghee in a skillet and add the carrots. Cook at a medium heat for about 8 minutes. Add the agave, parsley, salt & pepper. Toss to coat. Cook for another 2-3 minutes. A nice brown coating should form on the carrots. Turn off heat and set aside until ready to serve.

    Below there is a recipe for Roast Potatoes, or you could also serve with simple rice, or even a salad!

    You want to be sure to flip the potatoes halfway through cooking.

    , 2012 Easy Meatloaf with Roasted Potatoes

    Pre-heat oven to 350 degrees.

    Mix the meatloaf ingredients in a large bowl.

    Place on top of a foil-lined cookie sheet sprayed with coconut oil or canola oil.

    Shape into a two inch high loaf and coat the top with ketchup or smashed tomatoes, to create a savory topping thats gooey and delicious when done baking.

    Cook uncovered, for about 30-40 minutes.

    The internal temperature should read 160 degrees when you remove it from the oven.

    Let the loaf sit for 15 minutes before slicing and serving.

    For the Potatoes:

    Place the potatoes in a large bowl and toss with the olive oil, salt & pepper to taste,1 sprig rosemary, chopped Syrian Marjoram, 3 cloves whole garlic

    Pour it all out onto a baking sheet. Bake for 30-40 minutes at 375 degrees, until potatoes are crispy and tender.

    Serve Meatloaf with Roast Potatoes and a tossed salad.

    1 lb. ground beef 2 tomatoes diced

    small 2 eggs cup oats handful of chopped

    Marjoram & Basil 1 onion chopped

    fine 2 tbls worstershire

    sauce (optional)

    Roast Potatoes:

    Potatoes (Quartered, peel on)

    2 tbls olive oil salt & pepper to

    taste Bonnie's Tasty Herb

    Rub (optional) OR 1 sprig

    rosemary, chopped Syrian Marjoram

    3 cloves whole garlic

    Ingredients:

    lb. dried money beans (or any dry bean)

    cup vegetable oil

    1-2 packs of ham hocks

    1 medium onion rough chopped

    2 garlic cloves, minced

    1 chopped tomato

    cup packed light brown sugar

    2 tablespoons Dijon mustard

    3 cups water

    These money beans are so fresh they dont really need soaking, and should cook much faster than usual. Put the following ingredients into a slow cooker on HIGH for 2-3 hours.

    Or simmer on low heat for an hour or two in a pot. Add 1 teaspoon of coarse salt AFTER the beans are finished (the salt will otherwise affect the way the beans cook)!

    Dairy Free Pesto

    Ingredients:

    2 large handfuls of fresh lemon basil

    2 cups raw walnuts

    2 garlic cloves

    1 cup olive oil

    1/3 cup water

    salt & pepper

    In a Vitamix or food processor, add the above ingredients and blend until the desired consistency.

    Pour over pasta, and serve with salad. Can also be used as a spread or dip.

  • Independence Day Box July 5th, 2012

    Ingredients:

    Fillet of Seabass

    1 leek, chopped small

    1 tomato, diced

    1 tbls olive oil

    salt & pepper to taste

    Broiled Seabass

    Preheat oven to 350 degrees.

    Place all of the above ingredients into a piece of 12 X12 foil.

    Wrap fish up like a present, rolling the top for east access.

    Bake on a baking sheet for 20 minutes. Remove from the oven and let stand five minutes.

    Open carefully.

    Serve with the chilled Cucumber Salad.

    Berry, Peach, and Apple Crumble

    Ingredients:

    1 basket of strawberries

    2 peaches, chopped into small pieces

    1 apple, peeled and chopped (core removed)

    2 cups flour (reserve half for the topping)

    3 tbs honey

    8 tbls butter - COLD

    1/4 cup brown sugar

    1 cup walnut

    juice from a lemon (opt)

    1 tsp cinnamon

    1 cup oats

    Pre-heat oven to 350 degrees and place your rack in the center of the oven.

    Place berries, apple & peaches in a bowl and mix in 1 cup of the flour and honey. Pour in to a baking dish.

    Place the rest of the ingredients, plus the 1 cup of flour into your food processor* - don't be scared!! Pulse the crumble about 15 times...just until mixed...it will look like a large blob of rough dough! Remove it and press it onto the fruit - not hard, but making sure it covers most of the top.

    Place it in the oven and cook uncovered for about 40 minutes. It's done when the top gets a bit browned.

    Let cool for about 10 minutes, enjoy!

    *If you do not have a food processor, place all crumble ingredients into a large zip lock bag and squeeze it around until all blended. You will need to chop the nuts before you do this. Once blended through, you can follow the same instructions.

    Ingredients:

    2 large eggplants

    2 garlic cloves

    7 this tahini

    juice ofi lemon

    salt & pepper to taste

    For the Cucumber Salad, mix together the following and let it sit for an hour:

    1 cucumber - peeled & sliced thin

    1 tomato, seeds removed - chopped

    2 tbls olive oil

    1 tbls vinegar (umi plum or apple cider)

    salt & pepper to taste

    Baba Ghanoush with Pita

    Prep:

    Everything can be adjusted in this recipe to get it to taste exactly the way you want. More garlic, more eggplant, whatever...

    Heat your oven to broil and place the eggplants (whole) on a cookie sheet. Char the outside of the eggplants until they deflate. Turn them frequently with tongs. This will take 10-15 minutes. Place them in a large bowl and cover with a kitchen towel for 30 minutes. Peel off the skin and place the "meat" in a food processor (or chop fine).

    Add the garlic, tahini, lemon juice, salt & pepper either to the food processor (and blend until smooth) or mix into eggplant by hand.

    Serve with pita triangles.

    Excellent as a garnish for the Seabass, or serve with the Cucumber Salad, or try the fish, cucumber salad and the Eggplant for a real feast!
