Akıtma (Crepe)
Ingredients
• 1 cup all-purpose flour
• 2 eggs
• 1/2 cup milk
• 1/2 cup water
• 1/4 teaspoon salt
• 2 tablespoons butter, melted
Instructions
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each “akıtma”. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook “akıtma” for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
Peynirli Pide(Flat Bread with Cheese)
Ingredients
• Bread or Pizza Dough
• Turkish Kashar or Asiago cheese, grated.
• Plain Yogurt
Instructions
• Break the dough in egg size pieces. Flatten the dough pieces using a roller.
• Apply the yogurt and rub in with your finger tips on the bread. Spread the Turkish Kashar or Asiago cheese, press down using your finger tips all over the dough.
• Place the parchment paper on an oven tray and arrange on it.
• Preheat the oven to 250 C. Place the tray on the middle rack. When the top is light golden colour, take it from the oven. It takes app. 10-13 minutes.
Instructions
Serve Cheese Pide with tomato, peppers, parsley by the side.
