Welcome to all!
After the great international event of the OMGD in Oporto in September 2019, it was
time to organise a "Grand Chapitre" in Alentejo, a region that
brings us excellent memories.
Our Confrere Dr. Jean Ferran, Bailli Provincial for the south of
the Tagus, who we know well, proposes an interesting and
varied program, with includes some classics, such as the Palace
of Cadaval and the Convento do Espinheiro, but also, as you will
see, the theme of the moment on the “ Climate Change and its
effects on the vineyard”.
This Grand Chapitre, which will also include inductions in the
OMGD, happens to coincide with the World Chaîne Day and our
annual General Assembly. It will be a time of great and extended conviviality, and we
expect a varied attendance, with participants not only from the different Portuguese
regions, but also from abroad.
Do not fail to reserve this date, as I have already done; I'm sure it will be outstanding.
In the city of our Gastronomy School our students will, as usual, not miss the call.

The Chapitre will be based at the “Convento do Espinheiro”, just outside the city of
Évora, a historical convent favoured by the Kings of Portugal since 1458, and
converted into a 5* Hotel with all modern facilty and a fantastic Spa.

where the Gala Dinner will take place on the Saturday night.

Friday, April 24th “Straight into action!”
• Welcome to a late afternoon cocktail hosted by our Chargée de Mission for the
ACCR, HRH Princess Diana, Duchess of Cadaval in her family’s Palace, with the
participation of the students of the ACCR sponsored Chaîne’s Gastronomy
School of Évora.
• The cocktail will be followed by a friendly dinner at the “Enoteca Cartuxa”, owned
by the famous wine foundation “Fundação Eugenio Almeida” which produces
some of the best wines in the Alentejo.
Saturday, April 25th “The Deep Alentejo”
• We will start the day with a talk by our Confrere and Professionel du vin, Miles
Edlmann on the theme “Climate changes and viticulture in Alentejo” where we will
hear about the challenges faced by the wine makers in Southern Portugal.
• We will then travel to one of the best wine producers in the Alentejo, the
“Comenda Grande” a Commandery established by the Knight Templars, now a
family based agricultural estate with a century long tradition that strives firmly
and continuously for the reconversion of Alentejan agriculture.

• Lunch will be at a local restaurant where you will be able to sample the best of
Alentejo food, and will understand the real meaning of the words “sustainable
gastronomy” !
• After lunch, we will visit a Cork Art Factory, where you will discover all that can be
made from cork, from shoes to handbags to candelabras…
• We will return early to the hotel, with plenty of time to refresh before:
• “The Big Celebration!” Evening at the Convento do Espinheiro (Black Tie) :
o Starting with a glass of Portuguese sparkling wine, we will gather for the
Induction Ceremony.
o Following the Induction Ceremony, we will have pre-dinner drinks during
which we will hear some “Cante Alentejano”, a Portuguese music genre
from the Alentejo region based on vocal music without instrumentation,
listed on the Intangible Cultural Heritage of Humanity.
o The Gastronomic Dinner prepared specially for the Chaîne will also allow us
to celebrate the World Chaîne Day in style!

PRACTICAL INFORMATION
The nearest airport is Lisbon (LIS), an easy 1h20 drive to Évora on the A2 / A6 motorways.
Transfers from Lisbon to Évora can be organised but are likely to be more expensive than
renting a car! The alternative is Faro airport (FAO) in the Algarve, connected by charter
flights to most cities in Europe, and a 2 ½ hour lovely drive through the Southern Alentejo.
If you are coming from abroad, we strongly suggest that you extend your stay to explore the
Alentejo (the historical cities of Évora, Estremoz and Vila Viçosa are close to each other and
well worth exploring) and also spend a few days to visit beautiful Lisbon or play golf in the
Algarve. We would be happy to help you organise your program, just ask.
The weather is likely to be warm during the day (24ºC / 75ºF), cooler at night (15ºC / 58ºF).
April is a lovely time of the year in the Alentejo, but there might be the odd shower… So pack
a light sweater for the evening and an umbrella (although the hotel will supply one if
necessary). Cobble streets are not easy to walk on high heels, you’ve been warned!

THE CITY OF ÉVORA
Évora is the capital of Portugal's south-central Alentejo region. In the
city's historic center stands the ancient Roman Temple of Évora (also
called the Temple of Diana). Nearby, whitewashed houses surround
the Cathedral of Évora, a massive Gothic structure begun in the 12th
century. The Igreja de São Francisco features Gothic and baroque
architecture along with the skeleton-adorned Chapel of Bones.
Stretching beyond the city's medieval walls, the arched Aqueduto da
Água de Prata (Aqueduct of Silver Water) dates from the 16th
century. Praça do Giraldo is the centuries-old main square, centered around the Henriquina
Fountain. In a former palace near the cathedral, the Museum of Évora displays art and
artifacts spanning the city's history. Notable churches include the Igreja de Nossa Senhora
da Graça, with classical statues set on its Renaissance facade, and the Igreja de São João,
where the nave is covered in blue azulejo tilework
completed in 1711.

The origin of the Convento do Espinheiro is linked to a legend that tells of the apparition of an image of the Virgin above a hawthorn, around 1400. In 1412 a small pilgrimage site was built in honor of Our Lady and given the growing importance of this site, during the reign of D. Afonso V, the church was founded in 1458 and subsequently the convent, which was populated by monks of the order of St. Jerome to whom the church is dedicated.

We are fortunate to count HRH Diana, Duchess of Cadaval and her husband HRH Prince Charles Philippe d’Orléans as active members of the Chaîne des Rôtisseurs and their support and contribution to our Gastronomy School in Évora has been essential to the founding of the school. We are therefore very grateful to be invited to their home, and it will provide the opportunity for us to meet some of the students of the Gastronomy School who will be serving the drinks at this occasion.
The Cadaval Palace has been the home and the property of the Dukes of Cadaval family since its foundation in the 14th century until today. Built on the ruins of a Moorish castle, and subject to many changes over the centuries, the final result is a unique combination of Mudéjar, Gothic and Manueline styles.
Stood in the historic centre of Évora, across from the Roman Temple, it features a vast residential area, developing over several floors, two inner gardens and a church, which is the final resting place for every generation of the Dukes of Cadaval family. The church is also of national interest, given its stunning interior, highlighted by azulejo tile panels, signed by their artist, António de Oliveira, and dating from the early 18th century. The Cadaval Palace is currently the residence of the Duchess of Cadaval and her family, although the church and some of the rooms are open to the public throughout the year, exhibiting rare items: books,charters, arms, paintings, sculptures, furniture, porcelain, portraits and travel accessories,among other objects of value and major historical interest.
For the last 21 years, the Cadaval Palace has also hosted a series of cultural events: the Classic Évora Festival, with the support of the Calouste Gulbenkian Foundation; The Orientals Festival, dedicated to traditional music from the East and the Évora Sacred Music Festival, dedicated to traditional music heritage of music around the world. The Cadaval Palace often welcomes national and international choirs, for performances open to the public, as well as soloists and music groups, and international art exhibitions featuring painting, sculpture and photography.

THE GASTRONOMY SCHOOL
The Gastronomy School of the Chaîne des Rôtisseurs was founded in Évora in 2012 to give young students aged between 12 and 16 years coming from underprivileged families a space to socialise between lessons and returning home with the objectives to:
• Awake in these young people an interest in the catering business through contact with gastronomy and oenology.
• Reveal the potential for creative local employment in the catering business and motivate them to pursue a career in this field.
• Encourage the acquisition of specific basic skills in the areas of food and wine and discover new talent in this sector.
• Encourage the students to achieve a secondary educational qualification of “Qualified Technician” in the catering business.
• Introduce them to the gastronomic and oenological heritage of the Alentejo, with the aim of developing tourism, employment and the local economy.
The course is organised over 2 years and 420 hours with a workload of 2
hours a day, 3 days a week and includes
theoretical and practical formation in all
aspects of the hospitality and culinary
business, as well as visits to selected
Restaurants, Hotels, Wineries, and Hotel
Schools and to date 57 students have
graduated and obtained their Diploma,
whilst 12 are now in training.

uma ou mais fotografias (tirar, editar,
gravar, digitalizar) que me representem,
assim como a reprodução, divulgação e
publicação, por qualquer meio e em
qualquer meio (papel, eletrónico, ...), de
uma ou mais fotografias que me
representem nos contextos estritamente
indicados : a Publicação on-line no site
da Chaîne des Rôtisseurs ou nas redes
sociais da associação, a Ilustração de
artigos de imprensa ou qualquer
comunicação externa (brochuras,
apresentação, ...) e interna (newsletter,
e-News, ...) relacionada com a Chaîne
des Rôtisseurs.
Esta autorização é dada sem limitação
no tempo.
Reconhece-se que toda gente tem um
direito exclusivo à sua imagem e ao uso
que dela é feito. Além disso, noto que,
na ausência de acordo da minha parte no
âmbito desta autorização, a minha
imagem não pode ser objeto de qualquer
edição, uso ou circulação.
Após a aceitação, eu reconheço as
condições relacionadas com a minha
participação, a saber:
- A confirmação da elegibilidade da
minha imagem para divulgação do
Bailliage de Portugal, bem como da
Chaîne des Rôtisseurs internacional; e
- O procedimento de cancelamento e
reembolso conforme confirmado no
Formulário de Inscrição.

Reproduction, dissemination and

or more photographs representing me

the Chaîne des Rôtisseurs or the social
networks of this association, o
Illustration of press articles, o Any
external communication (brochures,
presentation, ...) and internal

It is acknowledged that everyone has
an exclusive right to his/her image and
the use that is made of it. Also, I note
that in the absence of agreement on my

de Portugal, ainsi que de la Chaîne
