New South Wales is Australia's most populous state, contains one third (33%) of Australia's population and is located in the south-east of the country. The colony of New South Wales was founded in 1788 and originally comprised much of the Australian mainland, as well as Van Diemen's Land, Lord Howe Island and Norfolk Island in addition to the area currently referred to as the state of New South Wales, which was formed during Federation in 1901.

Wollombi is a small village in the Hunter Region, near Cessnock (in aboriginal language meaning the meeting place of the waters)

Born about 10 miles from the Tavern in 1929, Mel Jurd became a legend in Wollombi folklore through his various escapades, the most notable of which was his purchase of the Wollombi Wine Saloon in 1957 and the creation of Dr. Jurd's Jungle Juice

Legend has it that Mel, in his efforts to keep costs down and revenues up would save all the leftovers from the night before and pour them into a single container. Port, brandy, wine, you name it, Mel saved them all and experimented with various brewing techniques.
