Bloom Where You’re Planted thrive even if the situation doesn’t seem ideal. Accept the nurture of others and weed out the negative thoughts that keep you from growing & blooming.
To thrive, growing things need sunshine, so you can bring a little sunshine into the lives of others. Helping others makes us happier and has the “pond ripple” effect—one happy person passes their joy onto the next person they meet—happiness blooms!
A refreshing watering makes all things grow better; refresh your
self with a heart of thankfulness. It has been proven that gratitude improves energy and vitality, quality of sleep, and reduces feelings of sadness.
Fill the garden of your life with people and activities that you love, stay active and you will thrive.
Our Encore campus is full of flowers in the Spring—raised garden beds, greenhouses, porches full of big colorfully blooming flower pots—and, year around, it’s full of the activities and tender loving care that make a soul blossom. So plant yourself here and bloom with us!

In April, thoughts on our Encore Campuses turn to flowers and filling our outdoor planters with blooms galore. The Clearbrook Inn Garden Club meets on April 18th. The Country Meadows Spring Planting Day is on April 27th. We have the knowledgeable assistance of some dedicated and generous Master Gardeners who help us fill our containers with just the right amount of soil and plants for blooming beauty throughout the season. At The Ridge the after-noon strolls often involve tending the flowers growing in their lovely outdoor areas.
Even if you don’t consider yourself much of a green thumb, you can still be the “charming gardener who makes a soul blossom,” according to French novelist Marcel Proust. Sometimes that soul is our very own, and we need to take advantage of the opportunities in our current situation to “Bloom where we are planted.”
Life can bring circumstances that seem less than favorable to us at the time. Like a flower soaking up the sun, we can bask in the care and concern of others and learn to
ALL THINGS grow BETTER WITH
Love

Don’t mess with Senior Citizens!
We went to breakfast at a restaurant where the “Senior Special” was two eggs, bacon, hash browns and toast for $2.99. “Sounds good,” said my wife, “but I don’t want the eggs.” The waitress warned her, “Then I’ll have to charge you $3.49 be-cause you’re ordering a la carte.” “You mean I have to pay more for NOT taking the eggs?” my wife asked incredulously. “Yes, ma’am,” replied the waitress. “I’ll take the special, then,” my wife said. “How do you want your eggs?” the wait-ress asked. “Raw and in the shell,” my wife replied. She took them home and baked a cake. Don’t mess with Seniors!

So if you’re crazy for cauliflower but don’t cook
much, you can buy it riced and ready to steam.
Easy! If you want to cook a little bit, but time is
limited, try the current favorite at our house,
roasted cauliflower. For a quick fix, buy a bag of
cauliflower florets, dump into a big roasting pan,
drizzle some of your favorite extra virgin olive oil
over it, sprinkle lightly with rosemary or Italian
seasoning, a bit of garlic, salt and pepper, toss
thoroughly, and roast at 425 degrees for about
20 minutes. Store it in a few pint jars and have it
ready for a snack or quickly reheated for a meal.
Try this economical superfood trend: cook down
the bones from the chicken you roasted for dinner
with a few carrots and some onion (don’t forget
the turmeric) and toast to your health with a

HERE’S TO YOUR HEALTH! Peggy Reece
If you are following healthy food trends, you no
doubt have eaten more kale in the last year
than you ever really wanted. Good for you! Kale
is nutrient dense, supports healthy cholesterol
levels, is anti-inflammatory, rich in anti-cancer
nutrients and anti-oxidants.
Just in case you are beginning to tire of chewing
those sturdy, curly colorful leaves, there is good
news for you! The new super cool veggies, which
contain unique disease fighting compounds, are
actually our old favorites, the crucifers! Broccoli,
bok choy, Brussels sprouts and especially
cauliflower have anti-cancer compounds, each
different, so it’s best to eat a variety of them
each week. Rich in vision-protecting carotenoids,
fiber, folate (encourages cell and tissue growth),
potassium (muscle and organ system health)
