Holiday Cost Cutters You’ve probably heard the old saying “It’s the thought that counts.” Well, it’s true. Ask any of your loved ones—a big, expensive gift is not what is important. So, this year, give your friends and family something from the heart, not the mall. Here are some ideas: • Bake something delicious and sweet. •Create coupon books with such services as a free night of baby- sitting or a free massage. • Dig up some old photographs that your family or friends may have forgotten. Purchase inexpensive frames for them, and then decorate the frames with paint, seashells or anything you desire. Keep the holidays creative and fun—your loved ones will adore anything if it’s from you! You’re Invited ‘Tis the season of brotherhood and joy, and to celebrate! We are holding a holiday celebration on Sunday, December 18, 2016 at 2:00 pm. Delicious dishes will tantalize your tastebuds as gorgeous carols fill the air! For a night to remember with your staff and friends of Ruston Nursing and Rehabilitation, don’t miss out on this special seasonal party!! White Chicken Chili • 1 lb. white beans, soaked overnight and drained • 6 cups chicken broth • 2 cloves garlic, minced • 2 medium onions, chopped • 1 tablespoon olive oil • 2 4-ounce cans chopped green chiles • 2 teaspoons ground cumin • 1 1/2 teaspoons. dried oregano • 1 teaspoon ground cloves • 1/4 teaspoon cayenne pepper • 4 cups diced cooked chicken • 3 cups grated Monterey Jack cheese • 1 jalapeño pepper, chopped (optional) Combine beans, chicken broth, garlic and half the onions in a large soup pot and bring to a boil. Reduce heat and simmer until beans are very soft. Add additional water if necessary. In a skillet, saute remaining onions in oil until tender. Add chiles and seasonings and mix thoroughly. Add to bean mixture. Add chicken and continue to simmer 1 hour. Serve topped with grated cheese. Garnish with cilantro, chopped fresh tomato, salsa, and/or guacamole. Serve with fresh warmed tortillas or chips. Chocolate Banana Bread Pudding • 4 eggs • 2 cups milk • 1 cup white sugar • 1 tablespoon vanilla extract • 4 cups cubed French bread • 2 bananas, sliced • 1 cup semisweet chocolate chips Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan. In a large mixing bowl, mix eggs, milk, sugar, and vanilla until smooth. Stir in bread, bananas, and chocolate chips, and let rest 5 minutes for bread to soak. Pour into prepared pan. Line a roasting pan with a damp kitchen towel. Place loaf pan on towel inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with water to reach halfway up the sides of the loaf pan. Bake in preheated oven for 1 hour, or until a knife inserted in the center comes out clean. A Historic Time One of these days, you’ll be looking back on these days saying, “Remember when...” Here are some ideas to help you preserve those memories. •Cover a shoebox with construction paper. Decorate the outside of the box to reflect your personality. Make sure you put your name and the date somewhere on the box. •Collect photographs and assorted items that you associate with your life right now. You might find newspaper articles about movies or music you like. Put all of these items into the box. •Record conversations when you have your friends or family together. (Christmas would be a perfect opportunity to do this!) Label the recording and put it in the box along with the rest of the stuff. •Write a letter or brief note explaining what the various items are and why they are important to you.
