Prior to his position at Nationals Park, Peterson was an Executive Chef with Levy Restaurants at Verizon Center in Washington DC for three seasons and Executive Sous Chef at Jacksonville Municipal Stadium in Jacksonville, FL. for two seasons.

Before joining Levy Restaurants, Peterson spent 12 years with 1492 Hospitality Group in Wilmington, DE as the Executive Chef and Director of Food and Beverage Operations. As Executive Chef, Peterson was responsible for creating menus throughout the company’s restaurants that included three country clubs with formal dining area and private event/banquet facilities and three additional restaurants. One of the restaurants The Columbus Inn won Zagots, Wine Spectator and DiRoNa awards while under the culinary leadership of Chef Peterson. In addition to his culinary responsibilities, Peterson was also responsible for business operations, including running senior golf tournaments, budgets, and all food & beverage procurement.

With eight years in sports and entertainment and major events/openings, Chef Peterson has witnessed some amazing feats in his time with Levy Restaurants including a Super Bowl in Tampa Bay, opening of Washington Nationals Park, Atlanta’s Georgia Dome, Atlanta Motor Speedway, Texas Motor Speedway, Charlotte’s Wachovia Golf Tournament, Jacksonville Municipal Stadium, Orange County Convention Center, McCormick Place, Arlington Park and Tampa Bay Raymond James Stadium.

Peterson is a graduate of the Culinary Institute of America in Hyde Park, New York. Cooking is a true passion for Chef Peterson having spent a good amount of time in Florida, Dave draws on his classical training to develop innovative menus with fresh and local ingredients with bold flavors.
