Shirley always had a smile, loved cards, bingo and ready to sell tickets for Women’s Club and
the Association activities. We will miss her smiles and her thoughtful willingness to help
make every activity a success.

Greetings to all . With milder temps up north some of our winter residents headed back a
little early and we are so sad to see you leave. It becomes so quiet here in Southfork and immediately we start talking about September, October and November like it is just next week and that you are all back.. We bet some of you wished you had stayed a little longer here in sunny Florida and there is no place like Southfork to look forward in coming back to.. .. Thanks to all again and it is was so wonderful to see so many folks attending the great functions at the clubhouse and thanks for the support of our community. It is time again to start planning for the winter months and for all of you a cruise is being planned for January. If anyone is interested, please contact either Dot Cady or Marielle Quain. Just an update for all who do not know the status, but a light is definitely going to be placed at the intersection of US301 and HWY 98. How great is that??? I still want to ask a favor of all of you and that is if you see or hear of any accidents at that intersection to please let me know ASAP. I am still in touch with 2 people at D.O.T. and they are keeping me informed on what’s happening and when. We should take a moment to thank all of the Veterans for the sacrifices you
made on behalf of all Americans. We want to let you know that you are in
our thoughts and prayers this Memorial Day. Your dedication is something
that will never be forgotten.
Have a great summer and see you in the fall. Drive careful in your travels.

Women’s Club
On April 3rd, 41 ladies met in the clubhouse for their monthly meeting, hosted by Sally Auld,
Marge Otto and Carol Quandt. Thank you ladies for a job well done.
The minutes of the last meeting and the treasurer’s reports were read and approved along
with all the committee reports.
Mary Bolin (Charity Committee), mentioned that the lady that we helped to get her “GED”
was so appreciative and thankful for our help and we will keep in touch with her.
Mary also took the many stuffed animals to Heritage Nursing Home and they were very
happy to receive them.
The Chili Supper was a great success and thanks to everyone who helped us. We could not
have done it without you. All in all we raised $828.02 for the Charity Committee.
The speaker from the Red Cross could not be here because of an accident with a tree falling
on her house, so Pat Clayton a resident who lives here and a volunteer for the Red Cross,
gave us a nice presentation and specified that they are in great need for volunteers.
We had another speaker, Gloria Javier, from Pretty Pond Manor, an Assisted living Facility
who gave a description of the home. It is a 12 Bed facility located in a quiet and tranquil
atmosphere in Zephryhills. If anyone needs to know more information, they can call her @
813-783-8483. Her presentation was very interesting and enjoyed by the members. There
were many questions asked and she answered them all.
We celebrated 2 birthdays, Doris Grandy & Mary Clifford (who could not be here) with a
beautiful birthday cake.
Next month our hostesses are Donna Elders and Louise Murray.

GRANDMA'S HANDS: A must read thru to the end please!!!!!!!!!!!!!
Grandma, some ninety plus years, sat feebly on the patio bench.. She didn't move, just sat with
her head down staring at her hands. When I sat down beside her she didn't acknowledge my
presence and the longer I sat I wondered if she was OK.
Finally, not really wanting to disturb her but wanting to check on her at the same time, I asked her if
she was OK. She raised her head and looked at me and smiled. 'Yes, I'm fine, thank you for asking,' she
said in a clear voice strong. 'I didn't mean to disturb you, grandma, but you were just sitting here
staring at your hands and I wanted to make sure you were OK,' I explained to her.
'Have you ever looked at your hands,' she asked. 'I mean really looked at your hands?'
I slowly opened my hands and stared down at them. I turned them over, palms up and then palms
down. No, I guess I had never really looked at my hands as I tried to figure out the point she was
making. Grandma smiled and related this story:
'Stop and think for a moment about the hands you have, how they have served you well throughout
your years. These hands, though wrinkled shriveled and weak have been the tools I have used all my
life to reach out and grab and embrace life. 'They braced and caught my fall when as a toddler I
crashed upon the floor.
They put food in my mouth and clothes on my back. As a child, my mother taught me to fold them in
prayer. They tied my shoes and pulled on my boots. They held my husband and wiped my tears when
he went off to war. 'They have been dirty, scraped and raw, swollen and bent. They were uneasy and
clumsy when I tried to hold my newborn son. Decorated with my wedding band they showed the
world that I was married and loved someone special. They wrote my letters to him and trembled and
shook when I buried my parents and spouse.
'They have held my children and grandchildren, consoled neighbors, and shook in fists of anger when I
didn't understand. They have covered my face, combed my hair, and washed and cleansed the rest of
my body. They have been sticky and wet, bent and broken, dried and raw. And to this day when not
much of anything else of me works real well these hands hold me up, lay me down, and again
continue to fold in prayer.
'These hands are the mark of where I've been and the ruggedness of life. But more importantly it will
be these hands that God will reach out and take when he leads me home. And with my hands He will
lift me to His side and there I will use these hands to touch the face of God. I will never look at my
hands the same again. But I remember God reached out and took my grandma's hands and led her
home. When my hands are hurt or sore or when I stroke the face of my children and husband I think
of grandma. I know she has been stroked and caressed and held by the hands of God.
Happy Mother’s Day to all and especially the Grandmother’s!
SOUTHFORK MENS CLUB
They came. They saw. They ate. And ate and ate. The Men’s Club Steak Out had great weather, great
food, and a great get together which included our “Girl Friends”. Several of us could not finish the
steaks, they were that big. (Steak and eggs next morning.) The baked potatoes kept nice and hot on the
charcoal grill and with the whipped butter and sour cream they were ummm soooo good.
The salads must have been made by gourmets. Excellent. And desserts – enough to feed half of
Southfork. We’ll have to do this again soon.
The next meeting will again be doing what we do best, eating. This time at IHOP May 2nd for a
breakfast meeting. See the signup sheet for details.
May will be our last meeting until October. Watch the September news letter for that meeting which
should be October 3rd.

SOUTHFORK ACTIVITIES
A FEW YEARS A GO I HAD LISTED IN THE NEWSLETTER ALL ACTIVITIES
SUCH AS POKER, “65”, SHUFFLEBOARD, BINGO ETC WITH THE CONTACT PERSON AND THE AMOUNT OF
MONEY NEEDED IF REQUIRED, FOR A CARD GAME..
SINCE WE HAVE SO MANY NEW RESIDENTS AND MANY DO NOT KNOW WHAT SOME OF THE GAMES
ARE, I THOUGHT OF RE-DOING THE PAGE AGAIN. I NEED THE HELP OF ALL THE PEOPLE WHO CHAIR
THESE GAMES WITH JUST A 1 OR 2 LINER AND A CONTACT PERSON.
THIS WILL BE PUBLISHED IN THE NOVEMBER NEWSLETTER SO THAT WHEN ALL THE SNOWBIRDS COME
BACK, ESPECIALLY THE NEWER ONES WHO HAVE JUST MOVED IN, THEY WILL KNOW WHICH THEY
WOULD LIKE TO ATTEND

Thanks to Marielle Quain for serving as Maverick Block Captain for many
years.
Now . . . we are in need of a new Maverick Drive Block Captain. The
responsibilities include home delivery of the monthly Southfork Newsletter and
Managers’ Letter. There could occasionally be additional deliveries of important
information (advising residents of events in the community).

AMBULANCE PROGRAM FUND RAISER
STEAK-OUT, MOTHERS’S DAY
SUNDAY, MAY 12TH, 4PM @ CLUBHOUSE
COST: $9.00 per person
This is an advance sale/ticketed event. The cost includes Steak, Potato (either white or
sweet), and a dinner roll. Everyone will bring a dessert or salad to share.
You will cook your own steak, unless you convince someone else to cook it for you! It may
be possible to buy a cook!!
Multiple grills will be set up for use, poolside area. The balance of our meal will be a “pot-
luck” format, salads, desserts, etc. Everyone provides their own table settings and beverages.
Ticket sales will end on May 7th.
Sign-up /needs sheet will be posted. Contact any Ambulance Board Member.

Baked Potato (submitted by a resident)
Preheat oven to 450, Pour 1/4" kosher salt in a baking dish, Place washed baking
potatoes on the salt and Tightly cover dish with aluminum foil.
Bake for 1hr 15min and Remove from oven and brush tops of potatoes with olive oil
Set oven to 500 Return dish to oven uncovered and Bake another 15min.
Remove and enjoy with butter, sour cream, and your other favorites
Creamiest potatoes we have ever had. Even the skins are good.

Great Berry Tip
Berries are delicious, but they're also kind of delicate.
Raspberries in particular seem like they can mold before you
even get them home from the market. There's nothing more
tragic than paying $4 for a pint of local raspberries, only to look in the fridge the
next day and find that fuzzy mold growing on their insides.
Well, with fresh berries (strawberry, blueberry, black berry etc) just starting to hit
farmers markets, we can tell you that how to keep them fresh! Here’s a tip I’m
sharing on how to prevent them from getting there in the first place:
Wash them with vinegar.
When you get your berries home, prepare a mixture of one part vinegar (white
or apple cider probably work best) and ten parts water. Dump the berries into
the mixture and swirl around. Drain, rinse if you want (though the mixture is so
diluted you can't taste the vinegar,) and pop in the fridge. The vinegar kills any
mold spores and other bacteria that might be on the surface of the fruit, and
voila! Raspberries will last a week or more, and strawberries go almost two
weeks without getting moldy and soft. So go forth and stock up on those pricey
little gems, knowing they'll stay fresh as long as it takes you to eat them.
