1938-2013

“The best laid schemes o’ Mine an Men, Gang aft agley.” (Scottish Poet Robert Burns, 1759-1796) The modern translation is “The best laid plans of mice and men often go awry.” When the weather hit two weeks ago Cooking in Central’s plans certainly did “Gang aft agley.” So now, there is an even better plan for the event on June 7th & 8th. Yes Central, there will be Cooking in Central 2013, and it will be June 7th & 8th…RAIN OR SHINE! Central’s signature charitable fund-raising event fell victim to heavy rains two weeks ago and has been rescheduled. As I write this contingency plans

are being made so that if weather spoils the parking at Amazing Place on Blackwater Road there will be an alternate site for the event and Cooking in Central WILL happen June 7th & 8th. Mia and I have headed up publicity for Cooking in Central for 2012 and 2013 so we are working to ask all of the gracious media outlets who publicized the event to help us get the word out about the new dates, which I will state again for emphasis, June 7th & 8th. I got word today that the food, auctions and entertainment have rescheduled and the event will be just as it was originally planned. So, clear your calendar and save the dates of Friday evening June 7th for Central’s largest Crawfish Boil and Saturday June 8th for the great cook-off, entertainment and auctions. Come out and join thousands of your friends and neighbors and enjoy Cooking in Central 2013. That IS, Good News for a Great City.

Once again, citizens, ARPA is working 2-3 times a week to clean the Amite River banks. SO- they need YOUR help! Their boat launch was heavily damaged and they are trying to obtain crushed concrete to repair it. Please consider donating 45-gallon garbage bags, money for fuel for their boat, bottled water, or even your time! They will be leaving a canoe effort this summer to clean up along the river. Contact them at [email protected].

Secretary of State, Tom Schedler, will address the Pachyderms of GBR meeting on Thursday, May 23rd at 6:30 p.m. at the Great Wall Chinese Restaurant, 3084 College Drive, Baton Rouge, 70808. (6:30 to 7:00 – Socializing; 7:00 – Meeting) Schedler will focus on the Department of Justice’s suit against the State of Louisiana and a number of Louisiana state agencies and officials alleging that Louisiana’s governmental agencies were not registering the recipients of state benefits to vote with sufficient vigor. Furthermore, the DOJ is demanding that the Secretary release the private, personal information of every registered voter in Louisiana.

The DOJ’s lawsuit, essentially a copycat suit to one filed by Project Vote and the NAACP in New Orleans in May of 2011, is in spite of the fact that Louisiana is ranked fourth in the entire country in terms of voter registration with over 84% percent of the eligible electorate registered to vote. Cost for the buffet is $13.00, drink, tax, gratuity and ice cream included. Pachyderm meetings are open to the public and guests are welcome. Reservations are requested. RSVP: 225-644-5728 or e-mail: [email protected] For more information, visit the Pachyderms on Facebook at www.facebook.com/PachydermsofGBR

City of Central Police Chief Doug Browning was excited to announce that all of the officers in the CPD are now radar certified. This means they have taken all of the necessary instruction and passed a very strict test. The instruction involved not just training on the apparatus but training the mind and eye to work together to be able to estimate the speed of an oncoming vehicle, including while in a vehicle in motion. This is excellent news for Central. "We now have the means to prosecute violators," Chief Browning stated. "We worked it out with the D.A.'s

office. We've already had our first set of cases go through." The next goal for the CPD is to become laser radar certified. The laser apparatus allows officers to check the speed on specific cars even if they are among a group of vehicles. "It works with Doppler technology. We have 1 laser unit and 3 car mounted units in the department," Chief Browning shared. This certification should be complete within the next 2 weeks. Chief Browning was firm when he stated decisively, "Everyone has to understand: Do Not Speed!"

NAPA Auto Parts announces the NAPA/Hokie Gajan “Blue Collar Player of the Year” Award recipients for 2012. High school varsity football players from all over the Gulf Coast were nominated, but only 12 were named “Blue Collar Player of the Year.” The NAPA/Hokie Gajan “Blue Collar Player of the Year” Award was created to honor players that deserve, but rarely receive, recognition. The honor recognizes those hard working, blue collar players that show up to work and never complain. NAPA knows the pivotal role that such unsung heroes play, and this award is our way of telling these players thanks for a job well done. The players were selected based on their athletic abilities, dedication

to the game and devotion to their teams. Central High’s Thomas Eddlemon was one of the 12 players selected. Players were presented with a plaque commemorating their achievement on May 1 at Walk-Ons Bistreaux and Bar located at 3838 Burbank Drive, and each player had the opportunity to meet Hokie Gajan. The 12 award recipients were finalists for a $1,000 college scholarship, and Thomas was named the recipient of the scholarship at the banquet. Congratulations, Thomas!

By Mia Freneaux Right after crossing the Comite River into the “West End” of Central, you’ll find its newest taste sensation, The American Farmhouse. American Farmhouse serves delicious homestyle cooking. Owners and lifelong Central residents Charles and Cristal Hebert are living their dream of an excellent restaurant coupled with a market. The market features fresh vegetables delivered daily, breads from the Jumonville Bakery, a variety of cheeses, and beautiful cuts of meat. “Every cut we sell is at least Choice Plus. Most are Prime Grade, which is only sold to restaurants, and it’s all Angus, aged at least 28 days,” Charles claims. They use what they sell in the market for their menu items as well, one more reason for their high standards. Expansion of the market is in the near future, with inclusion of locally made jams, jellies, honey, and even original local art. The restaurant side features an expansive menu with homemade gumbo and soup, salads, po-boys, seafood including tuna steak and red fish, pasta, and their specialty, grill offerings. Among these are melt in your mouth filet mignon and rib eye steak. One customer sampled the rib eye and left a $100 tip – saying it was the best he’d ever tasted. Smoked over pecan wood, the baby back ribs and pork chops are tender and flavorful. The menu also offers appetizers like char-

broiled oysters, which local resident Tim Lazaroe declared “delicious.” The desserts highlight Deli and Pastry Specialist Melanie Ardoin-Hall’s amazing bread pudding and other temptations – new recipes crop up regularly. The bar opens next week and will offer boutique wines, cocktails and beer. Future plans include an Oyster Bar. Where do all these amazing recipes come from? Chef Brian Johnson. A 20 plus year veteran chef, Brian spent many years at New Orleans’ House of Blues, then went on to be Executive Chef at the Belle of Baton Rouge Casino. “All of the recipes are in my head, nothing’s written down,” Chef Brian says with a smile. Chef Brian says his style of cooking is very New Orleans influenced. His deft hand with southern favorites like gumbo, greens, and pulled pork sandwiches attests to this. He is also one of the hardest working chefs in Louisiana, as he is in the kitchen at 4:30 in the morning, preparing breakfast. The American Farmhouse doesn’t just offer lunch and dinner, but awesome breakfast items like pancakes, muffins, biscuits, ham, and pork chops. The American Farmhouse is open Monday – Thursday 6 am – 9 pm, Friday 6 am – 10 pm, Saturday 8 am- 10 pm, and Sunday 10-3. Come let manager Lindsey Hebert and her skilled staff welcome you! 9550 Hooper Road (across from Cracker Barrel). 636-2684. Take out available.

I join many in Central who are excited about seeing friends and relatives graduate during these May days! My wife and I attended a graduation in New Orleans last week for our future daughter in law! How proud we were! I rejoiced as I scanned the pictures in the paper of the Central High and Central Private graduates. Brought back memories from many years ago of my graduation in the 1800s, or so it seems! What a fine looking group of young people! And to read about the graduates from LSU, Southeastern, Southern, and BRCC to name a few! What great potential they all have to be a generation that will bring positive change to a world that needs to change! God, give them wisdom to make good choices concerning their future plans. Help them be attentive to your future plans for them! But, the icing on my graduation cake came this week as I had the privilege to attend a graduation at our Louisiana State Penitentiary at Angola. 52 men proudly marched down the aisle and received a college degree in Bible

and Ministry from New Orleans Baptist Seminary! These men had obviously made some mistake! Who hasn’t? But they chose not to dwell in the past and not to let the past control them! In 4 years, they completed 120 hours of ministry and bible classes taught by local pastors and seminary professors! Their faces beamed, their families cheered, their teachers applauded, and heaven roared with approval. This program has grown over the last 20 years. As inmates have been trained in ministry, the culture of the prison has changed! Each of these graduates will be sent as prison missionaries to a place of ministry in the Louisiana Department of Corrections! Hats off to Warden Burl Cain! Hats off to New Orleans Baptist Seminary! Hats off to Pastor Jim Efferson of Indian Mound Baptist Church, a Central pastor who teaches in this program! Hats off to God who is ready to make a way in our wildernesses and streams in our the deserts! Let Him do it for you!

Submitted by Gwen Lambert Two young parents, Gwen and Paul Lambert, were looking for a quality education for their pre-school girls, Kim Lambert-Cummings and Larissia Gail Lambert. All roads pointed to Central and both were enrolled in Starkey Academy in 1985. The expense of private education taxed the income of this young couple, but like most parents they struggled to keep their daughters in a good school environment. Both of the children went from Starkey to Central Middle, to commencement from Central High School. Kim is now a substitute teacher in the Watson school district, where she resides with her husband and two fine children. Larissa, the subject of this article, has never left her lifelong home town. Larissa entered JRROTC while in high school and earned a BA in Mass Communications from Southeastern in Hammond. Larissa had already enlisted in the Louisiana Air National Guard after graduation from Central High, thereby paying her way through school. She studied martial arts at Jackson Park at age six and is now a fourth degree Master teaching

Central’s youth the discipline martial arts brings to a young mind. As a result of her efforts my autistic grandson, Brandon, is a black belt teacher, one of his students is my granddaughter, Rebekah, she has acquired the rank of red belt and will one day be a black belt as well. Larissa trained with the 159th Tactical Fighter Wing in Belle Chase at the Joint Military training base. She is an Aerospace Propulsion Mechanic on Louisiana’s premier fighter aircraft the F15 Eagle. In addition, she found the time to attain a supervisory rating in the Air Guard’s Aerospace Communications program. Larissa had not reached her full potential with these accomplishments. Lara’s dream, flying the F15, was not to be. Less than perfect vision took that dream away. Undaunted, Larissa applied for and was accepted to the Officer Training School at Maxwell AFB in Alabama, completing the required course of study, she was commissioned as a 2nd Lieutenant in the Louisiana Guard on March 8, 2013, and her first salute was rendered by her proud, retired, enlisted Father. Larissa’s story continues as she makes plans for study to attain her Master’s Degree to enhance her further advancement in the Louisiana Air Guard. Larissa is now assigned to the 159th Force Support Squadron, Operational Readiness Officer. Larissa was called to active duty for the 9/11 Twin Tower attack, during hurricanes Katrina and Rita, and has been assigned to the Governor’s Office of Emergency Preparedness and Homeland Security. She has served in this capacity under two governors.

14 HEALTH Thursday, May 23, 2013 • CentralSpeaks.com Print Edition

During my time as a Medical Correspondent at WAFB, I did a lot of stories on the use of lasers in medicine. A growing number of Physical Therapists are discovering the benefits of Low Level Laser Treatment (LLLT) for PT patients. Tom Coplin, a PT at Central Physical Therapy, says he uses laser to treat a long list of painful conditions involving soft tissue. Some specific areas include pain in the neck and back, sprains, strains, headaches and TMJ. Coplin also uses the laser to reduce swelling. He says LLLT works by triggering the mitochondria in cells to “go into hyper-healing mode.” Coplin says, “Think of it this way, mitochondria are like microscopic power plants inside each cell of your body. They’re what direct the cell to facilitate pain relief and healing. When treated with Low Level Laser Treatment, the mitochondria become supercharged which speeds up cell function.” Like any device used in a medical setting, Low Level Lasers had to be cleared by the FDA. Research showed the technology to be both safe and effective. Despite that, Coplin says it can be difficult to get an insurance company to pay for

it. “While some major medical insurance carriers assist with payment, others won’t cover LLLT at all; neither Medicare nor Medicaid covers LLLT. “They call it investigational even though studies have shown otherwise.” As is the case with many innovative treatments, CPT’s Helen Balzli says it takes time for insurance companies to get on board. That does not dampen her enthusiasm for the technology. Balzli says “Patients respond differently. That applies to almost any treatment. More times than not, the people I treat with laser benefit from it. Some even offer to pay for it themselves.” Unlike hot lasers used to cut and burn, low level lasers emit cold light that is absorbed by the skin. Experts say it can take between 8 and 30 LLLT treatments for a patient to get maximum results. Depending on the severity of the condition, patients may be asked to come between 2 and 4 times a week. Laser therapy should not be used on any suspicious skin legions that could be cancer, over the thyroid or on women who are pregnant since researchers still aren’t sure what effects it may have on unborn children. To learn more about Low Level Laser Therapy (LLLT) online go to www.centralptonline.com. Under services, click on “Cold Laser”. By Rachel F. Johnson Morning is my favorite time of the day, especially when I can sit at the table and eat my breakfast while drinking a cup of coffee. I love to take a little time in the morning to make a to-do list for the day ahead and get my schedule in order. But sometimes, I spend so much time making my breakfast or packing lunches in the morning, that I don’t get time to relax or eat my breakfast at home. I end up jamming it into my face while I am in the car, frantically on my way to work or school or whatever errands I need to do. And, while cereal is a quick breakfast option, many are made with lots of added sugars, not enough protein, and they don’t keep me full for long. Plus, spilling milk in the car is no fun! That’s why I have been keeping a batch of these granola bars in the freezer! They are cheap to make, jam packed with fiber and protein to keep hunger at bay, and they are extremely tasty! Whip up a batch (or two!) on Sunday for a week of breakfasts on the go! Makes 12 bars1 cup whole natural almonds1 cup roasted peanuts1 cup old fashioned oats (GF optional)1 cup chopped dried fruit of choice¼ cup + 2 Tbsp Honey3 Tbsp. Coconut Oil or Butter½ tsp. Salt¼ tsp. vanilla extract¼ tsp. almond extract Place ½ cup almonds, peanuts and oats in a food processor or high speed blender. Process until fine. Pour into a large bowl. Roughly chop the remaining almonds and peanuts and add to the bowl. Add remaining oats and dried fruit (I used ½ cup dried cranberries and ½ cup dried apricots!) Mix and set aside. In a small saucepan over medium heat, combine honey, coconut oil (or butter), salt and extracts. Stir until the mixture melts and begins to foam slightly. Pour over nut mixture in bowl and mix well. Line a 9x13 sheet with saran wrap and allow enough to lie over the sides of the pan. Pour granola into pan on top of saran. Using another piece of saran wrap, cover the granola and, using your hands, press hard to push it into the bottom of the pan. Place in freezer for 2-4 hours, or overnight. Remove from pan and slice into 12 pieces. Wrap each piece individually with saran wrap and store in the freezer for breakfast or post-workout snack!
