A ThOusANd legeNds AT The cOuRT OF The VINe queeNValle dei laghi: nine little lakes ruffled by the wind

The pretty valle dei Laghi, as the name suggests, is dotted with numerous expanses of water. Nine of these lakes lie within a few kilometres of each other in this pleasant valley crossed by the river Sarca. The scent rising gently from the Nosiola vineyards is transported by the Ora, the steady breeze from Lake Garda that keeps the air circling, cool and dry.The first stop is in Dro to taste the succulent plums and admire the attractive Drena Castle, and then the pine, fir and beech woods and olive groves, as well as the vineyards producing the grape for the prized Trentino Doc vino santo. The local wineries and the numerous distilleries producing the excellent Trentino Grappa are well worth a visit.A small romantic paradise awaits you farther on. The wonderful castle standing on the shores of Lake Toblino still seems to be the setting for one of the thousand legends that have accompanied it down the centuries.From here you can reach Trento, through the Bus de Vela pass, but not before visiting the many villages in what is commonly called the “Wind Valley”, from the Roman road of Cavedine with its shrines and inscriptions, to Santa Massenza, famous for its broccoli, to Castel Madruzzo surrounded by a string of villages that magically rhyme with the word “vino” (wine): Stravino, Calavino, Brusino, Lasino.

A sTROll AlONg TReNTINO’s “seA” shOReThe attractions of Arco and then relaxation on the beaches of Riva del garda

Sunbathing on the shores of the lake, or wandering around the monumental attractions of Riva del Garda, it is often hard to imagine that a stone’s throw away the landscape is completely different. Strolling through the maze of streets of the lakeside town, visiting the Rocca fortress, the Apponale clock tower and the precious Church of the Inviolate, the eye is attracted to the endless expanse of this lake that penetrates Trentino like a fjord. The long line of carefree bathers matches the sails of the boats and windsurfs merrily caressed by the Ora, the mischievous wind that is a feature of this area and blows across the whole of the Valle dei Laghi and beyond to the Valle dell’Adige.The eastern shore of Lake Garda offers enchanting views and many gastronomic temptations of lake tradition, such as trout or bleak, all dressed with the superb Garda Trentino extra virgin olive oil.Before going inland along the course of the river Sarca, there is time to visit nearby Arco, a small town where the pomp and splendour of the Austrian and Bohemian nobility, who used to holiday here, is revived in many artistic and folklore events and reflected in the magnificent castle clinging to the steep rock outcrop overlooking Arco. Hapsburg memories have also influenced the cuisine and so goulash, strangolapreti, dumplings and salted cod are the stars of a sumptuous repast accompanied by the notes of highly evocative waltzes.

Before continuing on the trail of Trentino tastes, there is just time to take a leap backwards, something like four thousand years, because at Fiavé there are the remains of a lake dwelling area, an ancient prehistoric village. Fiavé also gives you the chance to stop and try the delicious dairy products like the mozzarelle, or the spressa delle Giudicarie Dop, a low fat cheese well known for its fragrance.You are now in Valle di Ledro, a valley rich in history as shown in the Lake Dwelling Museum on the shores of Lake Ledro and by evidence of the Third War of Independence when Garibaldi pronounced the famous words “I will obey!” in Bezzecca. In this connection, why not visit the interesting Garibaldi Museum in the village. Owing to its uncontaminated natural countryside, Valle di Ledro is particularly appreciated for the strong relationship it has created between man and territory. Here it is possible to take long and meditative walks in the woods before tasting the local specialities: carne salada, Caponec, potato polenta and Sguazét.The south-western tip of Trentino, a stone’s throw from the border with Lombardy, is the ideal departure point for an adventurous journey in the wild and enchanting countryside of Valle del Chiese, a place in which nature mingles with traces of bygone times, evidence of which can be found in the ecomuseums in the area. Passing the ancient palazzos and castles, the residences of the distant feudal Lodron family, and the endless signs of Christianity in the valley, you reach Storo, the capital and uncontested realm of polenta produced with the traditional yellow maize flour.

A “secret” corner of Trentino worth exploring includes the three sunny plateaus of Banale, Bleggio and Lomaso around the Terme di Comano. Artistic parish churches, castles and fortifications, the area is scattered with signs and evidence of the local history. From the green fields of Lomaso, where the “montagnine” potatoes are grown, to Bleggio with its characteristic walnut trees and the impressive and fascinating Stenico Castle, a separate branch of the Buonconsiglio Museum. A rural landscape that stretches to the foot of the Brenta Dolomites, to San Lorenzo in Banale, the capital of the ciuìga sausage, protected by the slow Food mark, and into the heart of the Adamello Brenta Nature Park. Century-old trees, picturesque woods and icy cold torrents with clear fresh water used to breed trout and char.Valle Rendena also offers its visitors delicious cheeses made with the milk supplied by the special breed of Rendena cows, named after the valley. This is a place with a long standing tradition in the production of pork meats: salami, lucanica, speck, bacon (particularly the one of Caderzone). You can end a meal here with one of the exclusive distillates of Spiazzo Rendena. The valley features the paintings of the celebrated dynasty of itinerant Baschenis painters who came to Val Rendena in the 16th century. Not to be missed are those on the Church of St. Vigilio in Pinzolo and St. Stefano in Carisolo, with the evocative “danse macabre”.This valley is ideal for lovers of good food and for those who are keen on activity holidays. EXTRA VIRGIN OLIVE OIL FROM GARDA TRENTINOIn confirmation of the extraordinary nature of the territory explored by this itinerary to discover the wine and flavours from Lake Garda to the Brenta Dolomites are the area’s time-honoured olive oil producing tradition. Evidence of this are the terraces and slopes teeming with a multitude of different types of olive tree, such as Casaliva, Drizzar, Lezzo, Favarol, Razza, Rossanel, Fort, Morcai and Pendolino, which prosper here in the microclimate generated by the lake known to the Romans as ‘Benacus’. This area’s unique Mediterranean-type climate produces an oil of great merit, with a rich golden green colour due to the high chlorophyll content, a delicate bouquet with notes of almond and a light and fruity, sapid and harmonious flavour. Nowhere else in the world is olive oil made as far North as it is here and this factor, together with its quality and traditions, has led the European Union to award DOP status to this product.

TRENTINO D.O.C. VINO SANTO - A LISTED SLOW FOOD pRODUCTNot far north of Lake Garda, in a landscape still preserving expanses of untamed wilderness, the olive trees gradually give way to vineyards. The breath of the lake - the Òra - passes through Valle dei Laghi, providing a constant stream of mild, dry air and creating the perfect conditions for another of this area’s oldest and most distinctive products: Vino Santo. This genuine nectar is produced from the native Nosiola variety, which must meet a series of precise prerequisites - for instance, the loose bunches (known as ‘spargoli’) may only bear few, sparse grapes. These are left to ripen and partially dry on the vine as late as early October. A fascinating and complex winemaking process begins with the harvest. The grapes are left to dry further on racks (‘arèle’), in well aired rooms, where they dehydrate and are covered with noble rot, increasing the sugar concentration and giving rise to a distinctive bouquet. This raisining process lasts 5 or 6 months and ends with the pressing, which is usually carried out during Holy week - hence the name Vino Santo (Holy Wine). After pressing, the second stage in the winemaking process - fermentation - begins, which may last up to two or three years and is carried out in small oak barrels. The resulting Vino Santo Trentino D.O.C. is golden to amber yellow in colour with an intense, generous and fragrant nose, distinct notes of raisin, fresh fruit and fruit conserve, and a well-rounded, sweet and pleasant taste. This wine, which has drawn admiration over the centuries, is now a listed Slow Food product.

SpRESSA DELLE GIUDICARIE D.O.p.This cheese, produced exclusively in the Giudicarie area and Val Rendena, is one of the oldest dairy products in the entire Alpine chain. An inextricable part of country traditions, it has preserved its most interesting characteristics to this day. The cheese is made from raw, low fat cows’ milk, because originally the farmers first removed as much of the cream as possible from the milk to make butter. The name ‘Spressa’ probably derives from this process and the dialect word ‘Spress’, which means ‘pressed milk solids’. While this excellent cheese is undoubtedly richer in fat than it used to be, it is still ideal for a healthy diet. A natural precipitation process is used in making this cheese: fresh milk is added to the milk skimmed the previous day and transferred to a heating vat, where natural inoculant milk and calves’ rennet are also added.The result is a cheese that is best eaten relatively fresh, with a compact and elastic consistency, a sweet flavour that develops intensity with aging and the typical aromas of mountain cheeses. It is an excellent accompaniment for traditional Trentino specialities and a cornerstone of many regional recipes such as ‘Carbonera’ polenta, in which Spressa is cut into strips and stirred into the mixture.

TRENTINO D.O.C. NOSIOLAThe wine growers of Valle dei Laghi use the name ‘Nosiola’ for both the native variety of grape and the wine it produces. This ancient white wine, with brilliant gold reflections and greenish hints has a delicate nose defined by fruit notes, traces of grassiness and wild hazelnut - Nosiola in dialect - and a pleasantly acidic, sapid and inviting palate.

TRENTINO GRAppAFor centuries, the flavours, bouquets and aromas of the grape and wine have also been expressed in another of the area’s major products - grappa. In a province that already boasts so many excellent grappa producers’ the Valle dei Laghi stands out as a place that has traditionally been associated with the distiller’s art. The small hamlet of Santa Massenza, for example, has a remarkable five distilleries in spite of its population of only 150 inhabitants.

STORO yELLOW MAIZE FLOURThe ‘Marani’ variety of maize produced in Storo is an example of when a unique product and dedicated farmers come together. In 1990, a group of fifty farmers formed the Agrinovanta cooperative to protect and continue maize farming in Valle del Chiese. This traditional product is harvested in early October, allowed to dry in the mountain winds and then slowly milled to preserve its distinctive nutritional properties, aroma and flavour.

DRO pLUMSThe particular soils of alluvial and glacial origin in Valle del Sarca have formed the character of this variety of plum. This purplish fruit with its very firm, greenish yellow flesh, has a sweet yet tart flavour and is very rich in vitamins and important minerals such as potassium.

MARONI CHESTNUTSThis ancient product has only reached a few parts of Trentino and, in the Garda area specifically, the woods of Drena and Darzo. This medium sized brown chestnut, identifiable by its star patterned striations and marked ribbing, is very highly flavoured. Grown using natural methods, the chestnuts are hand harvested between October and November when they fall from the trees.

BLEGGIO WALNUTSWalnut farming has deep rooted traditions in Trentino, which can be traced back with certainty to at least as early as the 16th Century. Today, after years of neglect, walnut growing has been revived using completely natural agricultural techniques. This high quality product, with a thin shell and a light coloured nut, is harvested by hand at the end of September and then dried - as in days gone by - on racks stored in airy attics.

CIUÌGA DEL BANALE - A LISTED SLOW FOOD pRODUCTCiuìga, an intrinsic part of the gastronomic heritage of the Giudicarie, is a product of extraordinary character and a testimony of the extreme poverty that was once rife here. This sausage was made using the poorest cuts of pork and boiled turnips. The result was and is still today a highly aromatic product with a distinctive seasoned meat flavour that can be eaten fresh, if cooked, or as a cold cut, after a ten day maturing period.

LUCANICA TRENTINA - A LISTED SLOW FOOD pRODUCTFresh and matured Lucanica is a basic ingredient in many traditional Trentino dishes. This pork sausage is widespread throughout the region, and each area has developed its own original variant, with the addition of other meats or distinctive flavours. After mincing and stuffing, the Lucanica must mature for forty to ninety days before it is ready to eat.

TROUT AND CHARWith some of the richest waterways in the entire province, the area between Garda and Brenta was always destined to be a significant producer of trout. Rainbow trout, tench and Arctic char have been farmed for centuries in Trentino, as the fast running, fresh and well oxygenated waters they need are found in abundance here.

concerned. Several possible itineraries start from this town. The

valley floor with its castles and wines opens the doors to the

What could be more inviting than a long relaxing walk through an endless avenue of lush grapevines where you only have to lift your head for a moment to see evidence of the past in the impressive outlines of ancient castles and palazzos? Well, Vallagarina offers you this and much more. The widespread cultivation of vines, using the pergola system dictated by tradition in this valley, immediately brings to mind one name: Trentino Doc Marzemino, praised by Mozart in his Don Giovanni.History and memory are distinctive features of Vallagarina. Every stone seems to be bursting to tell you about the past. For instance, the spectacular castel Beseno which, more than a castle, is a fortified citadel that comes magically to life in summer with the revival of distant medieval customs and uses. The Vallagarina castles are not cold silent ruins, but living places that have much to tell you about the present too, and even something about the future.Northwards, on the other side of the river Adige that flows through the whole valley, is a strip of land steeped in local history, culture and tradition. In olden times all the communes on the right of the Adige were joined under the institution of the “Comun Comunale”; from Isera to Nogaredo, famous for its witch trials, and Villa Lagarina with the noteworthy Palazzo Libero, where the treasures once belonging to the noble Lodron family are kept. Immediately beyond the centre of Aldeno, the Italian capital of Merlot, the slopes of Mount Bondone climb steeply to Garniga Terme, where the traditional practice of hay baths has become a modern medical treatment.

Trentino never ceases to surprise. For instance, from Loppio, along the road of the same name, you come to val di Gresta, known today as the Vegetable Garden of Trentino. Every corner of this green valley flourishes with mostly organic produce. Particularly prized are the traditional white cabbages, potatoes and carrots displayed and presented to the public every year in the renowned Garden Market Festival. Care for the environment and agriculture has kept this small area free of architectural and man induced contamination. You will find proof of this if you go to Monte stivo, or the fragile Lake Cei, a small expanse of water surrounded by beech-trees and secular firs.After a number of hairpin bends, we suddenly arrive in the heart of the nearby altopiano di

Brentonico. The ideal destination for a holiday in a virtually unspoilt environment where you can relax and, at the same time, enjoy sport, healthy entertainment and, of course, good food. This is a place where chestnuts are produced and the old village of Castione is literally overwhelmed with thousands of chestnut trees, some hundreds of years old. The prized castione marone chestnut is used in many dishes of the traditional cuisine. The village of Brentonico is certainly no less hospitable and its cultural offer includes a Fossil Museum, a Botanical Garden and the 18th century palazzo eccheli Baisi.The third opportunity this itinerary offers for those who want to spend an unforgettable day is reserved for enthusiasts of mountain excursions. Starting from nago you can go to the ridge of Monte Baldo, a splendid natural balcony, a place of wonderful wild flowers and rare officinal plants, with a double panorama: the expanse of Lake Garda and the course of the river Adige.

Imagine for a moment that Vallagarina is the ground floor of an elegant and noble mansion. From here the road climbs to the Altopiano di Folgaria, Lavarone and Luserna revealing an area of quite different scenery that never ceases to surprise. From Besenello the itinerary goes across gentle slopes dotted with characteristic rural constructions and fascinating watermills. The dark green pasturelands are animated by the sound of cowbells because the plateau is the kingdom of a local cheese called vezzena, which you can buy directly from the producers. Here you can go for hikes and healthy walks along the paths through the woods where you will find important evidence of the past, like the massive war fortifications, many of which are now museums. Worth a visit is Fort Belvedere, the only First World War fort that has remained virtually intact till today.Folgaria is a special place that from time immemorial has boasted the title of “Magnifica Comunità” and is formed of many small hamlets, each with its own precious highlight making it a popular tourist destination. Guardia di Folgaria, for instance, is famous for the murals on the houses, which give a vaguely naïf air to the whole village.Leaving behind Lavarone that attracted the Viennese aristocracy in the late 19th century, you reach the small linguistic island of Luserna, where the ancient Cimbric language is still spoken and protected.

TRENTINO D.O.C. MARZEMINOThis wine is the epitome of elegance, with a bouquet of wild berries and floral, aromatic notes, a distintive deep ruby red colour and a smooth, inviting palate, making it extremely versatile and an ideal accompaniment for ‘in between’ dishes that are not too richly flavoured and local cheeses. While there are many wineries throughout the area making outstanding examples of this wine, the town of Isera deserves special mention, as it has always been considered the most important area for this variety. The story of how this grape reached the Vallagarina, which is now its undisputed homeland, is one of adventure. Perhaps the seeds, grapes and aromas were introduced into this part of Trentino from distant Plafagonia, the home of Diomedes according to Homer, or maybe they came here more recently from Marzmin, a town situated between Carinthia and Slovenia, with the soldiers of the Serenissima Republic.Marzemino has found its ideal home in Vallagarina and has become the very symbol of this area, made famous the world over by Mozart over two centuries ago in his eulogy to the wine in the opera ‘Don Giovanni’.

VEGETABLES FROM VAL DI GRESTAVal di Gresta, with its small to medium vegetable plots between an altitude of 250 and 1400 metres, has been renowned for the use of organic and integrated farming methods for the production of cabbages, potatoes, carrots, celery and many others since the era of the Austro-Hungarian Empire, which earned it the nickname of ‘the vegetable patch of Trentino’.

MARONI CHESTNUTS FROM CASTIONEAround the medieval hamlet of Castione, at an altitude of 528 metres, almost three thousand chestnut trees - some of which three centuries old - produce large chestnuts with a distinctive heart shape, a rich, sweet flavour and a fine grained consistency. Entering Val di Non from the south is like stepping into a huge garden in full bloom, whose accommodating owner has decided to share with you the beauty and fruits of this wonderful place. It is a unique experience that leaves you with a pleasant memory to take home as a souvenir. After passing the natural border of the Rocchetta separating Val di Non from the Piana Rotaliana, you immediately reach Vigo di Ton and Castel Thun, a castle exuding history from every stone, and farther on the Mondomelinda, a real shrine of the star of this valley: the apple. Golden Delicious, Renetta and Stark Delicious, many names to express a single concept of genuineness. A few kilometres farther on you come to Coredo where the tasty smoked Mortandela awaits you. More than a sausage, this is a genuine example of the valley’s long-standing pork producing art, which you might enjoy after a peaceful and relaxing walk in the fields and woods of Predaia, a terrace of conifers easily reached beyond the village of Smarano.The delicacies and traditional highlights of Val di Non do not end here. Moving towards Revò, beyond Lake Santa Giustina, you will make a very interesting discovery. Among the endless expanse of apple trees you will come across some vineyards. This is the only production zone of Groppello, a very old native ruby coloured grape, which offers an unmistakeable and unique taste on the palate.

One of the most beautiful views in this gentle landscape is across the Lake Santa Giustina, a picturesque expanse of water surrounded by the magnificent Brenta and Maddalene mountain chains. In Sanzeno the appointment is with history and also with religious tradition. In the newly built Rhaetian Museum you may admire numerous archaeological relics and then visit the Basilica dei Martiri Anauniensi and the famous san romedio hermitage, one of the oldest sanctuaries in Europe, incredibly built on the top of a rock outcrop in the midst of the wood.Impressions that fill the eyes and heart and linger on while tasting one of the distillates produced in the area. Those of the Spadona di Ronzone Association, for instance, that produces pure cider and balsamic vinegar with a native apple. And why not try the original Montesòn cheese in Castelfondo, made with the milk of alpine cows and the addition of kid’s rennet.Before ending this itinerary in Upper Val di Non take time to admire the magical reflections of Lake Smeraldo and then venture into the Rio Sass Canyon in Fondo for an exciting guided descent into the depths of the earth where the water has worn away the dolomite rocks in the course of thousands of years.

Val di Sole, hemmed in by the Brenta, Adamello, Presanella, Ortles-Cevedale and Maddalene mountain chains, is an authentic green oasis of Trentino offering nature, sport and relaxation in an environment of stunning beauty, starting with the long cycle route that stretches along the course of the torrent Noce and then climbs to Pejo and Vermiglio. A natural habitat for mountain bike enthusiasts who can make use of the Dolomiti express train service and especially for rafters who will enjoy the whitewaters of the river Noce.If you want to relax, instead, you can wander around Castel Caldes covered with interesting frescoes, or venture into one of the two splendid little side valleys to see either the Tyrolean attractions, wild scenery and spa properties of Val di Rabbi, or the beautiful stelvio national park in Val di Pejo.Don’t miss the chance to taste and buy one of the many traditional cheeses of Val di Sole. In Terzolas and Mezzena the Trentingrana, casolèt and aromatic goat’s cheeses are made exclusively with milk produced in the mountains. Before leaving this characteristic corner of Trentino you can stop in Malé, where the Museum of the val di sole civilisation is worth a visit.The road now returns to Val di Non and continues to Cles, the capital of the valley.After lunch you can continue through the orchards and enter the valley of Lake Tovel in the heart of the Adamello Brenta Nature Park. The area is one of the favourite habitats of the brown bear and is being repopulated with bears from Slovenia. In Spormaggiore there is a visitor centre with an educational route where adults and children can view these nice plantigrades at close quarters and learn about their vices and virtues.

san romedioSan Romedio is one of the most popular places of worship in Trentino. This vertiginous pyramid of churches perched on a 90 metre tall rock, still surrounded by untamed nature to this day, was once the site of the San Romedio hermitage. The rock hosts a remarkable total of five churches erected in different periods. The first was built in the 11th century, three date to between the 15th and 16th centuries and the most recent was built at the end of the Great War as thanks for peace. Over the years, San Romedio has also become a home to bears born in captivity in Trento in a symbolic reference to San Romedio himself who, as legend has it, trained a bear and used it instead of a horse.

nature parksThe area surrounding the Route of Apples and Flavours also hosts two major nature parks. On one side the Adamello Brenta Nature Park, the largest in Trentino 620 km², which encompasses the beautiful Lake Tovel, whose waters once turned a reddish colour (Lago di Tovel Visitor Centre), and a wildlife reserve for the brown bear, the park’s symbolic animal (‘Orso’ Visitor Centre at Spormaggiore). On the other side, the Trentino portion of the Stelvio National Park (177 km²), one of the most renowned and historical of all Italian parks, that has recently celebrated its 70th anniversary. The Terme di Pejo and Rabbi Spas in the Stelvio National Park offer a multitude of spa treatments and wellbeing services. The carbonic ferruginous waters that flow ice cold from the glaciers have beneficial effects for the digestive and respiratory systems, for rheumatic ailments and for the circulation. In addition to these curative treatments there are a series of wellbeing services, such as massages and kneipp treatments with herbs and peat, and carbonated mud packs for cellulite.

VAL DI NON AppLES D.O.p.The Val di Non is now known throughout the world for its apples - in particular the Golden Delicious, Renetta and Stark Delicious varieties, which are grown here today using natural, organic or integrated methods. The connection between this ancient fruit of such fascinating history - which appears to have originated in the Orient - and this territory was documented as early as 1500 in the ‘Carte di Regola’ (Rights of Civic Use). Widespread apple growing however only began to cover the gentle slopes of the Val di Non in 1850, whereas Golden Delicious first appeared in 1935, to then become the predominant variety in the area. In 2003, the three commonest varieties of apple grown in the valley received DOP status, a mark that is only awarded to typical and unique products, with deep rooted links with the territory and its tangible culture. There are countless recipes and applications for apples, and they are used to make juice and as ingredients for desserts and many sophisticated dishes. Golden Delicious has found its ideal habitat in Val di Non and Val di Sole, and has become so well established that it now accounts for over seventy percent of all apple production in these valleys. Sweet and crisp, its extraordinary characteristics are due to the mountain climate. The wide range of temperature between day and night favours the development of reddish hues in the skin, which are a guarantee of the apple’s origin and unique flavour. In addition to Golden Delicious are Stark Delicious, known also as the red apple of the mountains, with its sweet and delicate flavour, and the Renetta Canada, of ancient French origin, with its sophisticated, antique and aromatic notes that make it unparalleled for use in the kitchen, in juices and in distillates.

CASOLÈT - LISTED SLOW FOOD pRODUCTCasolèt is one of the most original dairy products in Trentino. This is a cheese generally eaten fresh or semi-mature, which was once made with the meagre milk produced by cows as they returned to the valley from the alpine pastures. Today, this is a high quality delicacy produced in Val di Sole, with an extraordinarily smooth palate and notes of grass and milk. It is also - in its unpasteurised guise - a listed Slow Food product.

TRENTINGRANAThe origins of this significant cheese, whose specifications reflect the great care devoted by farmers to dairy production in Trentino, date back to 1926. Made only with milk from small to medium family owned herds, raised in the mountain air and fed with healthy natural fodder and non-GM feed, the cheese is matured for 18-24 months before commercialisation and has earned recognition for its nutritional qualities, its flavour and its aroma.

VALLE DI NON MORTANDELA - A LISTED SLOW FOOD pRODUCTThis ancient sausage, with deep rooted origins in the pork production of the Val di Non, is now also a listed Slow Food product. This round sausage of minced pork has a unique and intriguing aroma of juniper wood smoke. As in days gone by, the meat is rolled into a ball, wrapped in net and laid on a wooden board on a layer of buckwheat flour to dry for 12 hours, after which it is slowly smoked.

GROppELLOThe name of this historical variety typical to the Val di Non stems from the dialect word ‘grop’, meaning knot, describing the unique shape of its bunches of grapes. This variety, which was widely cultivated in the days of the Austro-Hungarian Empire, now survives only in a few areas, and in Revò in particular, where the grapes are left to ripen on the vine as long as possible, to be harvested as late as mid October. After lengthy maceration and barrique aging, for optimal maturing and oxygenation, the resulting wine is an intense and dark ruby red in colour, with a heady bouquet with almost unruly notes of ripe grape and an equally decisive palate that, moreover, mellows with a pleasant, smooth end note.

The “Desmontegada” of Primiero is an old-established ritual that takes place every year at the end of September when the cows return to the valley from the mountain pasturelands. As in the past, this is celebrated today with the picturesque “Gran Festa del Desmontegar” that has not altered in years. The cows are adorned with garlands of flowers and foliage and the best animals wear precious cowbells and decorated harnesses. Thus adorned the animals parade through the villages of upper Valle di Primiero, to greet the arrival of autumn, bringing to an end an event full of traditions and food and wine specialities.

pUZZONE DI MOENA - A LISTED SLOW FOOD pRODUCTPuzzone di Moena, known to the Ladins as ‘Spretz Tsaorì’ (‘strong flavoured pressed cheese’), is the product of time honoured country traditions and is renowned for its truly unique aroma, with a very strong personality and of equally strong impact. This local cheese is produced in Val di Fassa and Val di Fiemme, in seasonal dairies and mountain dairies where, in keeping with tradition, the wheels are washed with lukewarm water or brine to create a waterproof surface crust, promoting fermentation and the development of strong smells and aromas within the cheese. Today, these aromas continue to fascinate cheese lovers and connoisseurs, with initial pungent notes followed by nuances of pastures, Alpine grass and ripe fruit, whereas on the palate Puzzone is enticing and soluble with hints of toasted hazelnut. The distinctive brick red crusts can still be seen today in cooperative dairies and in certain mountain dairies that continue to employ traditional methods, using unpasteurised milk to make a cheese that is then matured for at least 80 days and, in some cases, as long as 6-7 months, and which is now a listed Slow Food product.

TOSÈLATosela is a fresh, unpasteurised cheese made with the morning’s raw milk by the Primiero dairy farmers, who in the past only had very small quantities of milk available. This is one of the area’s specialities and is delicious sautéed in a pan or grilled and served with polenta.

CApRINO DI CAVALESE - GOATS’ CHEESEOver the past decade or so there has been a revival in the production of goats’ milk cheese, which was a characteristic product of the Val di Fiemme up until the 1970s. Today, these traditions are continued mainly by the Cavalese Cooperative Dairy, which produces goats’ cheeses with a particularly aromatic flavour that are ideal served with honey, preserves and vegetables.

NOSTRANO DEL pRIMIEROThis cheese fully represents the Primiero valley, its territory, the perfume of its pastures and its history, which once saw this speciality made in the haylofts that still dot the mid-mountain areas to this day and in the mountain dairies and seasonal dairies. The wheels are treated with brine to create a greasy crust that favours fermentation and the development of decisive and unique aromas and flavours.

NOSTRANO DELLA VAL DI FASSANostrano di Fassa is one of the most highly prized cheeses of the entire Cheese Route, and expresses the typical strong flavours associated with the local high altitude pastures and the milk produced by certain breeds of cow, such as the Alpine Brown and Grey. As with other cheeses in this area, the wheels are treated with brine to form a waterproof crust, promoting anaerobic reactions within the cheese that give rise to intense flavours.

HONEyThe genuine essence of the perfumes and flora of the territory, the honey produced in Val di Fiemme has unmistakeable characteristics: such as the extraordinary fusion of flavours and mineral elements of wild flower honey and the delicate taste of rhododendron honey - a true rarity. Other unmistakeable varieties include silver fir honey, with its greenish black colour and sweet, aromatic flavour and Norway spruce honey, with its amber colour and delicious flavour.

FIEMME BEERThe small brewery of Daiano was made to recuperate this old tradition and is the result of the enthusiasm of Stefano Gilmozzi who has always believed the quality of homemade beer lies in its ingredients and in the rediscovery of tradition. The resulting product is unique, a beer made with hops grown in the valley and selected malt extract. The real secret, however, is in the water of Val di Fiemme, pure high mountain water that is neutral and easily digestible, but at the same time rich in minerals that give this beer its unmistakeable flavour and taste. The “Fiemme Beer” is thirst-quenching, averagely bitter, with a light aroma of hops and a dry slightly acid and fruity aftertaste.

To get a better view of the area you should climb one of the surrounding mountains to fully appreciate its splendour and magnificence. Known as the most beautiful vineyard in Europe, it lies between the Noce and Adige rivers responsible for its fertility. A garden of flourishing vineyards that produce Teroldego rotaliano D.o.c. The presence of historical distilleries in the area also evidences the importance of the production of Trentino Grappa.For over forty years the Museum of uses and customs of the Trentino people has been the custodian of the ancient and recent history of social life and its numerous display rooms offer an in-depth view of the traditions and folklore of Trentino.A tour around Mezzocorona is also culturally enriching. Traces of history are literally embedded in the rocks, in the bold lines of Castel S. Gottardo, a castle set in the walls of the mountain, and in the aristocratic elegance of Palazzo Firmian. If you decide to go up the river Avisio to Valle di Cembra, the ideal point of departure is Lavis, an important centre north of the capital. Here the “La Vis e Valle di Cembra” Winery not only offers a cultural approach to wine tasting, but also shows the dedication of this land to the vine and its fruit, which goes back a long way, probably to the time of the fascinating hanging garden of the “Ciucioi” modelled on the lines of the so-called 19th century romantic gardens.But here is Valle di Cembra. Thirty-three kilometres long and deeply furrowed by the river Avisio, the valley is covered with splendid vineyards growing on the steeply terraced slopes. The result of the hard and persevering work of the farmers who, for generations, have erected an endless series of small dry walls to protect the precious soil from being carried away by the rain. Here, where the cultivation of vines requires a great effort and where the mild climate is characterised by a wide temperature range, a superb fine wine is produced: Trentino D.o.c. Müller Thurgau, celebrated in Cembra every year with an exhibition of the same name.The Avisio Hills guard wine and food secrets they love to reveal only to the most attentive and enthusiastic guest. The Trentino valleys are like the pages of a book, a story line with different undertones that enthrals the reader with its intriguing plot full of unforgettable charm and fascination. This is why surprises in Val di Cembra do not end here. After admiring the roccolo del sauch situated in the Comune di Giovo, in a twinkling of an eye the scene changes radically as you pass through Lases, Albiano and Fornace, the area of porphyry, rock of magmatic origin used in paving, the umpteenth wealth of this unique land. And you will be literally staggered when you see the incredible segonzano earth pyramids. One of nature’s masterpieces, elegant columns, some 20 metres tall, others covered with a huge protective stone. A breathtaking and extraordinary sight!But it is on the Altopiano di Piné that nature recaptures the attention of the guest. The lakes of Serraia and Piazze offer a tempting invitation for a holiday of total relaxation and reconnection with nature. The two expanses of water are surrounded by dense woods concealing the paths of thousands of walks you can go on to discover a waterfall, a biotope, an old votive shrine or, for the more active, a high mountain dairy. And perhaps, in the meantime, between one discovery and another, you can pick mushrooms, wood fruits, nuts and chestnuts. The segonzano pyramidsThese are elegant pillars of earth, some of which 20 metres tall, produced by the eroding action of water and wind which, for millennia, have moulded these moraine soils that date back to as early as the Quaternary. The Segonzano pyramids are gigantic pillars, often topped by a rock, and a genuine spectacle of nature, which folklore has likened to the shape of a man wearing a hat, or of gnomes that have been turned to stone, as legend has it, by a strange magic.

Dürer WegA rediscovered ancient trail, which many ttavellers once had to take to reach Verona or to avoid the frequent floods of the Adige. After a documented flood, this route was taken in 1494 by the renowned German painter Albrecht Dürer. He passed by Cembra, Faver, the Segonzano castle and even the Segonzano pyramids, painting his famous watercolours along the way. This historical trail has been revived today as the ‘Dürer Weg’, and gives hikers an opportunity to relive the sensations of travellers from days gone by.

TEROLDEGO ROTALIANO D.O.C.The pride of Trentino winemaking and a genuine symbol of the Piana Rotaliana, Teroldego has always been one of the most sought after wines of Trentino which, however, expresses itself fully only in the alluvial soils between Trento and Bolzano. The history of this variety and its ties with the Campo Rotaliano are almost lost in the mists of time and are documented in many medieval and modern accounts. The name Teroldego itself is swathed in mystery. Some say that it derives from the Terodol variety, mentioned in many Veronese manuscripts, which was introduced into Trentino along with the mulberry, whereas others say that it comes from the German words ‘Tirol’ and ‘Gold’, and means ‘gold of the Tyrol’. While the origin of the name may still be uncertain, there is no doubt in anyone’s mind about the outstanding quality of this variety and its wine. Noble vines of great character produce grapes to make a unique product that has been nurtured by generations and generations of winemakers. Today, the aromas and flavours so arduously gleaned over centuries of dedicated work are to be discovered in every glass of Teroldego Rotaliano D.O.C.: with intense and varied aromas of ripe fruit, with nuances of wild blackberry, blueberry and raspberry and exclusive notes of earth, black truffle and leather, which develop especially with aging. On the palate, Teroldego is fine and powerful, pleasant and concentrated, with a complex spectrum of flavours evocative of specific balsamic fragrances.

TRENTINO D.O.C. MÜLLER THURGAUMüller Thurgau is a young variety, born in 1882 from the passion and vision of Prof. Hermann Müller, a Swiss scientist from the Thurgau Canton, who dedicated his entire life to creating this extraordinary cross. Behind the crystal clear colour and the aromatic bouquet with notes redolent of the blossoms of the vine itself and of sage, jasmine, hay, peach and Trentino Golden Delicious apple, is one of the most interesting oenological stories of the 19th Century: a story of diffidence and even contempt from the scientific community, painstaking experimentation and, finally, triumph, which was further confirmed with the arrival of Müller Thurgau in Trentino, as a result of the work and research of the San Michele Agrarian Institute and of numerous agronomists, who successfully adapted the variety to the Dolomite climate of the upper hills. The result was an outstanding wine, first used in blends and then, from the 1970s, vinified as a single variety, which found its ideal habitat in particular in the Valle di Cembra, with its small terraces and porphyric soil.

BERRIESIn an incredible explosion of colour, perfume, flavours and shape, berries - blackberry, raspberry, strawberry, wild strawberry, blueberry and white and red currants - have found the perfect habitat in the area between Valle di Cembra, Valsugana and the Altopiano di Piné, with its acidic, well draining porphyric soils, soft mountain waters and favourable climate.

ZAMBANA ASpARAGUSZambana asparagus is a completely white variety that grows in sandy soil and particular climate conditions. The first references to the cultivation of this unique vegetable date to the early 19th century. Today, as then, the asparagus is still picked by hand, or using traditional tools, from the end of March to the end of May

TRENTINO GRAppAA balanced relationship between grapes and territory, tradition and innovation to produce the final essence of the fruits of the vine: grappa. A spirit made from the marc of the best vines, with a distinct bouquet, unique and unmistakable fragrances, still produced with traditional methods. Thanks to pure water and the skill of the distillers, it is possible to discover the fragrances of the grappa produced with passion using the marc of the most representative grapes of these zones: Teroldego Rotaliano, Müller Thurgau, Chardonnay.

Whereas Trentino may be considered a store of human wealth and natural beauty, the City of the Council may be described as the treasure room of the whole province, the pulsating heart of two thousand years of history still on show for all to see.It is really difficult to recommend an ideal itinerary around the many palazzos, castles, churches and museums, or the restaurants, cafés, characteristic trattorias and street markets.We may begin in the splendid rooms of Buonconsiglio castle where time really seems at a standstill. Frescoed halls, antique furniture and precious exhibits: a feast of never-ending splendours giving a lesson on the cult of beauty. This occurs more or less everywhere in Trento. Inside the cathedral, for instance, where hundreds of years ago the Church Fathers participating in the famous Council of Trent held their discussions. Walking down the aisles, gazing upwards and breathing history. Outside, Piazza Duomo, one of the most beautiful squares in Italy, is a programme of architectural and urban marvels, with neptune’s Fountain and the Bishop’s Palace that houses the Tridentine Diocesan Museum. From here you can proceed along the beautiful via Belenzani lined with frescoed houses to the palazzos Geremia and Thun or you can visit Palazzo Roccabruna, the House of Trentino products. Our advice, at this point, is to take a break and sit down in one of the restaurants where the specialities of the traditional Trentino cuisine are served, washed down with a glass of “TrentoDoc” classic method, the pride of this city.Restored by the good food and wine, you can now go to Monte Bondone, the splendid mountain overlooking the city. Here you will find yourself completely immersed in nature, in a rural mountain world that is not sparing in breathtaking views. Centuries-old woods and deep green meadows often give way to mountain dairies, places of work, but also caskets of the gastronomic genuineness of the mountains. The picture is completed by the abundant flora of officinal herbs and therapeutic plants that make Monte Bondone even more unique, as also seen in the viotte Botanical Garden.

Exploring a particularly beautiful mountain environment may often lead to pleasant surprises. This is true of the Altopiano della Vigolana, a splendid setting of meadows, woods and high rock mountains, not far from the city, where the cordiality of the local people with their nice fêtes and country fairs make it even more attractive and a lovely surprise. As do the two splendid expanses of water just beyond that cannot fail to delight the eye of the visitor. The caldonazzo and Levico lakes are an invitation for a relaxing holiday against a background of mountains, woods and charming hamlets nestling here and there on the hillside.You are also spoilt for choice if you are interested in historical and cultural itineraries as there is plenty of scope for outings to small artistic churches, castles and fortifications.In Caldonazzo, literally surrounded by splendid apple orchards and a festive sea of white blossom in spring, open air markets of specialities and local products are held several times a year in the medieval Magnifica Corte Trapp, where you can taste the Mortandela of caldonazzo, which is not to be confused with the Mortandela of Val di Non.There is really everything in this valley: mountains, lakes, history, gastronomy. In Levico Terme you can step into the world of the 19th century Belle Epoque, when the Austrian aristocracy used to holiday here. Everything seems to preserve the memory of the Emperor; the beautiful park rich in botanical and exotic species, coloured avenues and hotels in Art Nouveau style.

Approaching Pergine Valsugana from Trento, you will be struck by the sight of the huge castle high on the hill, which seems to be guarding the surrounding area. Its silhouette accompanies the whole tour of this small town, from the narrow winding streets in the historic centre to the Renaissance via Maier and, perhaps, while tasting the delicious cherries that grow in abundance in the vicinity.Pergine is important also for another reason: it is the gateway to the mysterious and folkloristic valle dei Mocheni. Off the beaten track, this valley has incredibly retained its identity, clearly evident in every feature of the valley; nature, uses and customs, and even the language spoken by the inhabitants, which is a sort of ancient German tongue mingled with words of the Trentino dialect. A linguistic minority now protected by the Mocheno Cimbric Cultural Institute centred in Palù del Fersina. A corner of the world where time is at a standstill and where the watermills, farm houses and old mines will intrigue you. And, perhaps after an outing in the mountains, there will also be time for an innocent sin of gluttony. In S. Orsola Terme, the capital of strawberries and soft fruits, you can enjoy a healthy and refreshing feast of black and red currants, bilberries and raspberries widely produced in this area.

Buonconsiglio castleBuonconsiglio Castle is one of the main monuments of the city and bears the signs of the great historic events that have defined Trentino.Starting life as an old thirteenth century tower, shortly afterwards it grew to become an expansive fortified structure and the seat of the Prince Bishops of Trento. Around the middle of the fifteenth century, the Torre dell’Aquila tower was built and embellished by the remarkable ‘Ciclo dei Mesi’ (Cycle of the Months), one of the most significant pictorial works of the international Gothic style. In the sixteenth century, the castle was further extended in the Renaissance style, with the erection of a majestic residence known as the Magno Palazzo. After the fall of the Prince Bishops, the castle was initially turned into a barracks for Austro-Hungarian troops; in 1924 it then became the headquarters of the National Museum and, in 1992, what is known as the ‘Castello del Buonconsiglio, monumenti e collezioni provinciali’, including three other castle- museums in Trentino.

TRENTODOC CLASSIC METHODThe broad expanses of vineyards on the hills around Trento and along the Valle dell’Adige, where mainly Chardonnay is cultivated, provide not only unique views but are also the primary source from which TRENTODOC classic method sparkling wine is produced, the true pride of the spumante industry, on both a provincial and a national scale. The process by which Trentino sparkling wines are produced is both complex and rigorous, and depends firstly on the production of Chardonnay grapes cultivated and ripened in optimal conditions, with summer temperatures averaging at over twenty degrees yet still benefiting from a continental climate. The winemaking process begins with a soft pressing followed by fermentation at a controlled temperature, using specially selected yeasts. The wine produced is then bottled in the classic champagne bottle, to which sugar and carefully selected yeasts are added. This is the beginning of the second fermentation, which transforms the wine into classic sparkling wine and gives it its distinctive aroma and taste. This phase lasts at least twenty-four months, as required by the strict product specifications of TRENTODOC. During this period the bottles, which have been laid down, are riddled and turned by hand on a daily basis. Once the final operations are complete, such as removing the sediment and adding the liqueur d’expedition, the result is a unique product with the yellow hue of hay, which is deeper in reserve wines, a fine and lingering perlage, a delicate and elegant aroma evocative of fragrant fruit and a dry, somewhat spirited palate that is utterly refined and harmonious.

CHERRIES, STRAWBERRIES AND OTHER BERRy FRUITSSmall in size but big in flavour. We are of course talking about the strawberries, wild strawberries, raspberries, blackberries, blueberries and blackcurrants that have, since time immemorial, grown spontaneously in these mountains. Before organised farming began after the Second World War, small berries were a precious nutritional resource (they are rich in vitamins B and C) and a significant economic help for rural families living here in the highlands. In the past, it was mainly the womenfolk who picked berries to fill out the family coffers. Trentino strawberries are now mainly grown in the Valle dei Mocheni, the Valsugana and on the Altopiano di Piné from 500 to over 1200 metres in altitude, and ripen only when their lowland counterparts have already completed their life cycle. Highly prized wild strawberries also grow here. These are the most characteristic of all small berries and are as fragile and delicate as they are rich in aroma and flavour. Up to altitudes of 1500 metres a particular variety of raspberry, with an intense red flavour, a slightly elongated shape and rich in vitamin C, known as ‘ampòmole’, grows throughout the entire summer. Blackberries, with their glossy black colour, juicy flesh and recognized astringent properties, also belong to the same family. Blueberries and lingonberries are, on the other hand, renowned for their protective action for the skin and eyes and ripen at over 1000 metres in altitude, largely in the Upper Val dei Mocheni and on the slopes of the Lagorai. While redcurrants, blackcurrants and whitecurrants, which grow small in bunches, each with their own distinctive flavour, are known for their diuretic properties. Cherries are also rich in fibre and vitamin C. There are many varieties grown in Italy, which may be cultivated at up to 1000 metres in altitude in areas sheltered from the spring winds. The variety traditionally grown in Trentino and in Valsugana in particular is the late ripening sweet cherry, which permits harvests from June up until early August.
