ZOMBIE

Iwasprompted tobuildSchiller’safter spending time inEasternEurope. I foundmyself looking for a kind of bohemian bar therethatdidn’tactuallyexist—orifitdidIcouldn’tfindit—soIthoughtI’d return toNewYork and try to build itmyself. Iwanted a barthat was cheap, raw, and attractive to deadbeats likemyself. Italsohadtohaveexceptionalfoodandgreatcocktails.

Manyof thebartenders I firsthiredwere less interested in thesimplicityofclassiccocktailsthaninaddingtheirown“twists”tothem. (These were often the ones who calledthemselvesmixologists). I soonappliedmyown “twist” by firingmostofthesebartenders.Thishadasoberingaffectontheoneortwo who remained, and, not surprisingly, the drinks improvedimmediately.
