GIN—Manycocktailsfromtheearlytwentiethcenturycalledforginasthebaseliquor.Ginisagrain-basedspiritdistilledwithbotanicalstogiveitanherbal,aromaticflavor.Juniperberry,orangezest,lemonrind,licorice,coriander,cardamom,andmanyotherslendginitsdistinctiveflavor.Donotskimpongin.

WHISKEY—Whiskeyisagrainspiritwithanincredibleamountofvariation.Thedifferenceinwhiskeyscanresultfromingredients,distillation,thecountryoforigin,andmanyotherfactors.Scottish,Irish,American,andCanadianwhiskeys,bourbons,andryesarethemainfour.However,thereareevenmoredistinctivevariationswithineachcategory,soweencourageyoutoexplore.

TEQUILA—TequilamustbeproducedintheMexicanstateofJaliscotobeconsideredauthentic.Theagaveplantsarecultivatedformorethantenyearsbeforebeingharvested.Theheartsarethenmaceratedandfermentedwithsomepreviouslyfermentedagave.Darktequilasgettheircolorationfromtheagingprocess.Makesurethatthelabelreads100%deagaveoryoumaybepurchasingaproductthatcontainscaramelcolororotheradditives.

Iwasprompted tobuildSchiller’safter spending time inEasternEurope. I foundmyself looking for a kind of bohemian bar therethatdidn’tactuallyexist—orifitdidIcouldn’tfindit—soIthoughtI’d return toNewYork and try to build itmyself. Manyof thebartenders I firsthiredwere less interested in thesimplicityofclassiccocktailsthaninaddingtheirown“twists”tothem. (These were often the ones who calledthemselvesmixologists). Oncesatisfiedwiththequalityofourclassiccocktails, Ibegantothink about a second category: experimental drinks. Slowly, Iencouragedmybartenderstochangeaningredientortwoinsomeof our cocktails. I was looking for subtle variations that wouldsignificantlyimprovethetasteofthedrinksoratleastalterthemin an interesting and pleasing way. Tinkering with freshingredientsandsmallbatchesofhomemadeinfusionsandsyrupsfiguredprominentlyintheserecipes,whichiswhytheyarelooselyclassifiedas“artisanal.”

Ninetypercentoftheconcoctionsendedupdownthedrain.Butthe10percentthatIliked,thatIwasconvincedhadawonderfullyspecial taste, I added to our cocktail list. Included here areSchiller’s originals, such as the Sloeberry Bramble (which swapsblackberries for plum-like sloeberries), Jalisco Sour (which hashintsof raspberry),andtheChaiFashioned (asimple tea-infusedtwistontheOldFashioned).Ihopeyouenjoythem!
