Catering Equipment Description -What does it do?

What is it used for?e.g. foods / products / recipes

Bain-Marie

A Bain-Marie is used to keep cooked foods warm ready for service. It keeps foods above 63oC. This is known as ‘hot holding’.

It does this by heating a large volume of water underneath the containers which hold the food. A thermostat keeps this at the correct temperature.

A Bain-Marie is used for chips; baked beans; pasta dishes; fried fish; stews; currys; custard etc.
