The capital of the whisky world, in the heart of the Scottish Highlands, Speyside is the most densely populated whisky region in Scotland. Sitting in a fertile valley of winding rivers and luscious glens, it is home to over half of Scotland’s distilleries, Speyside malts are traditionally characterized by the rich, fruity and nutty flavours from the likes of Balvenie to the lighter, grassy malts of the Glenlivet distillery.

GLENFIDDICH 12 YEAR ...................................... 5.95One of the world’s best selling malts, brought to life by one of whiskies founding fathers William Grant. The distillery sits in a glen in Dufftown on the River Fiddich, hence it’s name. The whisky itself has strong characteristics of pear, vanilla and a creaminess that lends itself to a long, mellow finish.

GLENFIDDICH 15 YEAR......................................6.95A variant of Glenfiddich, this 15 year old malt is blended and married from three different types of casks, bourbon American oak, Portugese sherry and virgin oak. This blending process and the introduction of two new types of wood imparts a beautiful rich flavour of candied apples, woody sweetness and spices.

GLENFIDDICH 18 YEAR......................................9.95Aged in fine Spanish Oloroso sherry casks and American oak casks providing a complex take on the traditional Glenfiddich, with depths of flavour, robust oak and that trademark rich fruit.

GLENFIDDICH IPA CASK .................................. 8.95One of the first in the Experimental Series for Glenfiddich. Aged in a cask seasoned with specially brewed India Pale Ale, from the Speyside Craft Brewery. An interesting dram with the usual characteristics you’ll find in all of Glenfiddich Malts, but with the addition of a certain breadiness and a hint of hops.

GLENFIDDICH 21 YEAR ....................................14.95Aged for 21 years and allowed to rest in Caribbean rum casks for the last four months, this Glenfiddich is an incredibly mellow whisky with strong caramel, rum and butterscotch notes that leads into a long, rolling finish.

CRAIGELLACHIE 13 YEAR .................................................7.95Craigellachie, a queer whisky, stubborn in both attitude and flavour. When other whiskies changed and moved with the times, they dug their heels in at the Craggy Craigellachie Rock and kept the method the same. Shying away from the normal age statements of 10,12,21; Craigellachie bottle their whisky on the year they believe it to be its very best. Waxy on the palate, with cloves, baked apples and the slightest hint of saline.

CRAIGELLACHIE 17 YEAR ............................. 11.95Another characteristically chewy, meaty malt from Craigellachiem. The beautiful sweetness and mellow nature of this dram comes from this malt spending a further four years in the cask. Touted as the best in the range – it’s easy to see why.

MACALLAN GOLD ....................................................6.95Another whisky giant, the Macallan Distillers have been distilling since 1824, with the oldest bottle in the archives coming from 1841. The name Macallan, derives from two gaelic words - ‘Magh’ meaning a fertile piece of land and ‘Ellan’ meaning of St Fillan, an Irish born monk who travelled Scotland spreading Christianity in the 8th century. Aged in first fill and refill sherry casks, this whisky has a predominant flavour of sultanas, sweet spices and vanilla. A medium body with moderate finish.

MACALLAN AMBER .................................................7.95Part of the core 1824 series, unsurprisingly amber in colour and aged in sherry casks, it is more flavourful than the Gold but a little more reserved than the Sienna which follows it. With similar characteristics to its predecessor, it has a heavier focus on spices and sweetness. Cinnamon and candyfloss spring to the forefront, with a light finish of fresh fruit.

MACALLAN SIENNA ..............................................9.95The beautiful rich colour reflected on the palate of this dram, is due to aging exclusively in sherry casks. Flavours of toffee, figs and citrus with a long, warming finish embody this fine whisky.

MACALLAN 25 YEAR ........................................49.95One of the most revered whiskies in the world, a superlative Speyside whisky allowed to age for 25 years in sherry casks. Rich mahogany in colour, with massive cinnamon, orange peel and dried fruit flavours and chewy oak, bonfire smoke and warm finish.

BALVENIE 12 YEAR .................................................6.95Located in Dufftown on Speyside, in early 1892 work began to convert and early 18th century mansion, the Balvenie New House into a distillery. The building took 18 months to complete and on May 1, 1893, the first distillation took place at the Balvenie Distillery and still continues to be at the front of leading whiskies to this day. The 12 year, is a distinctive single malt which gains its character from being matured in two different types of wood, traditional American oak and European sherry cask. As a result of this, the whisky gains a beautiful vanilla sweetness from the American oak and a spicy, fruit led flavour from the sherry casks.

BALVENIE 14 YEAR ..................................................7.95Like the 12 year before it, this malt matures in two types of cask. First American oak, and then finished in Caribbean rum casks. The result is a beautifully smooth malt with the honeyed character of Balvenie paired with hints of toffee and tropical fruit.

BALVENIE 17 YEAR ................................................ 11.95The DoubleWood 17 Year Old is an elder sibling to DoubleWood 12 Year Old and shares its honeyed, spicy characteristics. However, it is distinctly different, with deeper vanilla notes, hints of green apple, creamy toffee and a striking richness and complexity.

BALVENIE 21 YEAR ...............................................14.95Another Balvenie malt introducing yet more unique wood to a great malt. The 21 is a rare Balvenie, finished in port casks, lends an intense raisin and sultana flavour to the palate with a hint of walnuts. The finish is long, gentle and nutty.

GLENLIVET FOUNDERS RESERVE .............................................................................. 5.95The founder George Smith, built this distillery in the early 19th century close to Josie’s Well, near a glen on the River Livet. This malt aims to capture the essence of Founder George Smith’s vision for the malt, using time honoured distilling methods and boasts Glenlivet’s classic flavours of smooth fruit, zesty orange, apple sweets and toffee with a creamy finish coming from the copper pot distillation.

TAMDHU 10 ....................................................................... 5.95Originally located on the banks of the River Spey, distilling and casking its first malt in 1897, 2010 the distillery sadly closed. Inspired by the founders vision, Ian Macleod Distillers recommissioned the distillery with hopes of returning it to its former glory. The 10 year old signature malt, is matured in sherry oak casks with toffee, vanilla and fresh fruit being the three main flavours on the palate, however you can pick up slight hints of dark chocolate and butter.

ARDMORE LEGACY ................................................ 5.95The Ardmore Distillery is located at the highest point of the Northern Railway line, 600 feet above sea level. Looked over by a majestic golden eagle that circles the distillery as a sort of protector and sigil. Legacy is a light peated liquid with a standout Highland sweetness. Honey, treacle and campfire smoke with a full bodied mouth feel.

CRAGGANMORE 12 YEAR ..............................6.95The site chosen by founded John Smith, in 1869, for its proximity to the waters of the Craggan Burn and the Strathspey Railway. A hugely complex malt, with layers of flavour and the slightest hint of smoked salmon.

AULTMORE 12 YEAR ...............................................7.95Known as ‘of the Foggie Moss’, this distillery has been shrouded in mystery until the Dewars family released it as part of the Last Great Malts series. An elegant whisky offering heaps of fruit and vanilla flavors with a medium finish.

KNOCKANDO 12 YEAR ....................................... 5.95Built in 1898 by John Tytler Thomson and situated in Knockando, the village it derives its name from. This is textbook Speyside, delivering a fruity and honeyed spice palate with a medium warming finish.

The largest whisky region in Scotland, The Highlands hosts a vast number of different styles of whiskies. From the northern Highlands, rich and textured to sweet and floral whiskies stemming from the changing landscape of coastlines, moors and mountains. Some of the most famed whiskies in the world come from this region and is no surprise that their popularity as a whole is so far reaching due to its unique portfolio of distilleries.

ABERFELDY 12 YEAR ........................................... 5.95Aberfeldy, the heart malt of world renowned Dewars Blended Whisky, is the area where the famous heather honey sweetness comes from. Located in Perthshire the distillery draws its water from the Pitilie Burn which runs right through the distillery and has been known to have gold running through it. This golden dram is pure sweetness with an amazing warmth and boasts honey, tangerine and incense on the nose and palate.

THE DEVERON 12 YEAR ................................... 5.95Another whisky from the Last Great Malts collection, The Deveron is made exactly where the River Deveron meets the seas. A perfect fireside malt, maritime in flavour with a slight brininess and soft fruity notes on the palate.

THE DALMORE 12 YEAR ...................................6.95Located 20 miles north of Inverness, on landed gifted to the Chief of Clan Mackenzie by King Alexander III as thanks for saving him from a charging stag, giving the bottle it’s trademark emblem which has been adorned on every bottle of Dalmore since. Sweet on the nose with orange marmalade notes, and sweet sherry, spice and balanced citrus on the palate.

OUR FAVOURITE FROM THE HIGHLANDS

THE DALMORE 15 YEAR ............................................8.95Aged 12 years in the traditional American Oak then split between three types of sherry woods, Amoroso, Apostoles and Matusalem Oloroso for a further three years. The spirits are then married together creating an amazing infusion of orange marmalade, cinnamon and nutmeg on the nose and mandarins and vanilla on the tongue.

DEANSTON 12 YEAR ............................................. 5.95First opening its doors in 1785 as a cotton mill, but closing its doors in 1965, which lucky for us, saw the renovation of the mill into a distillery. With every bottle handcrafted and not a ounce of modern technology, this is a true traditional Single Malt, authentic creamy with a sweet honey blossom taste.

OBAN 14 YEAR ..............................................................7.95Nestling beneath the steep cliff that overlooks Oban, one of Scotland’s oldest sources of single malt scotch whisky is a stone’s throw from the sea. Sweet fruit, oranges and pears on the nose with a slight sea-saltiness, figs and honey on the palate. Long smooth finish of oak and peat.

HIGHLAND PARK 12 YEAR ............................. 5.95Situated in Kirkwall, Orkney in the most northerly part of Scotland, this distillery was founded by Magnus Eunson in 1798. This distillery holds itself strictly to its five ‘keystones’; hand turned malted barley, a mixture of aromatic peat, matured in a wonderfully cool climate, aged in sherry casks along with harmonisation of different casks. The 12 year old has warm hay, citrus zest and orange blossom on the nose leading into a continuation of orange, hay and grain on the palate with a hint of marzipan.

HIGHLAND PARK 18 YEAR ...........................12.95One of the most awarded whiskies of all timem, the Highland Park 18 yYear old demonstrates a clever complex whisky with layers of honeyed sweetness, golden syrup and just a hint of peat smoke.

HIGHLAND PARK DARK ORIGINS ............................................................. 8.95Dark origins is a combination of whisky matured in 80% first fill sherry cask and 20% refill cask. A darker expression of the Highland Park which fits in well with the founder, Magnus Eunson’s origins of being a smuggler who worked in the dark of night. Incredibly rich flavours of dark chocolate, black cherry, peppercorns witha touch of tobacco smoke.

GLENGOYNE 10 YEAR ......................................... 5.95Glengoyne, one of the only distilleries that doesn’t use peat in the distilling process choosing instead to allow the malted barley to dry naturally, resulting in a medium-bodied whisky with sweet bourbon like characteristics of vanilla, caramel and dryness.

GLENGOYNE 12 YEAR ......................................... 5.95Aged for a further two years this whisky offers a more mellow approach to the classic 10 year. It offers a rounded mouthfeel with plenty of oak and vanilla.

GLENGOYNE 18 YEAR .........................................9.95The result of 18 years maturing and a generous proportion of first fill sherry casks, this dram is fresh, malty and spicy with a luxurious mouthfeel.

GLENGOYNE 21 YEAR ........................................ 11.95Matured exclusively in hand selected sherry casks results in a beautifully fruity and rich whisky, great for after dinner. Christmas cake, sultanas and spices on the nose, rich dried fruits and hazelnuts on the palate. Wonderfully dark in colour.

GLENGOYNE 25 YEAR .....................................24.95In a similar fashion to the 21, matured in only select sherry casks but for a further four years, this whisky is incredibly complex, with toffee and rich sherry oak on the nose and a delightful palate of honey, rich orange and dark chocolate.

ROYAL BRACKLA ......................................................6.95First established in 1812 by Captain William Fraser of Brackla House, in the Highlands of Nairn, it was the first whiskies to receive a Royal Warrant and is one of three distilleries honoured to bear ‘Royal’ in its name. Rich amber in colour, this malt has a touch of ginger and stewed apples on the nose which goes through onto the palate with a balance of maltiness and blood orange on the finish.

OLD PULTENY ............................................................... 5.95Pulteney distillery is one of the most northerly distilleries on the Scottish mainland. The extreme location and unique stills have resulted in a Single Malt Scotch Whisky that is bursting with the power and subtlety of the sea, a real maritime malt. Red golden in colour, honeyed cream in the mouth with touch of vanilla and citrus.

GLENMORANGIE 10 YEAR ............................. 5.95The original Glenmorangie. Produced from Scotland’s tallest stills and matured for 10 years in first and second fill American oak casks. Ripe fruit on the nose is evident with hints of vanilla coming from the American oak. A fruit-led malt on the palate with bunches of citrus and apricots.

GLENMORANGIE SIGNET .............................14.95A blend of Glenmorangie’s oldest whisky, distilled over 30 years ago and matured in the finest ‘designer casks’ of unique roasted ‘chocolate’ barley malt. Big espresso notes on the nose, followed by plum and malty hints with spices on the palate.

DALWHINNIE 15 YEAR ........................................6.95Located in Scotland’s Highlands, Dalwhinnie is the highest distillery above sea level in Scotland. The site for the distillery was chosen for its easy access to spring water at Lochan-Doire-Uaine and plenty of peat from the surrounding bogs. The name Dalwhinnie is derived from Gaelic word Dail Chuinnidh, which means meeting place, referring to the meeting of ancient cattle drovers’ as they made their way through the mountains. Nutty on the palate, almonds and walnuts with a slight smokiness driving it’s way through the malt.

A once great whisky locality which has since lost its status as a significant malt player. This is the home of the blend, and of the large quantities of grain whisky which form its foundation – but a few producers keep up the trademark light and grassy Lowland malt style.

AUCHENTOSHAN THREE WOOD .................................................................7.95Known as Glasgow’s Malt Whisky, Auchentoshan is located on the outskirts of Clydebank, close to Glasgow. A ‘breakfast whisky’ by nature due to it’s sweet delicate characteristics. Earning the name Three Wood after its use of three types of wood in the maturing process. This is a rich and complex whisky with sherry and toffee notes.

AUCHENTOSHAN AMERICAN OAK ......................................................... 5.95Introduced in 2014 after replacing the Original, this expression of Auchentoshan is matured exclusively in American oak barrels. This maturing process lends a vanilla cream sweetness to the whisky, plenty of banana and rich oak on the palate.

OUR FAVOURITE FROM THE LOWLANDS

AILSA BAY ...............................9.95Ailsa Bay Distillery, located on the Clyde coast looking out onto Ailsa Craig, is unique in nature due to its shunning of the notion that style is dictated solely by region. This distillery houses eight stills all producing various styles of whisky. This inaugural release is a rare peated lowland whisky, with notes of liquorice and campfire smoke at the forefront.

SPRINGBANK 10 .........................................................6.95The once proclaimed whisky capital of the world, Campbelltown, used to play host to 28 distilleries. Springbank, now one of only three surviving distilleries, takes pride in it’s uniqueness with 100% of the process still being carried out within the distillery. On the nose is pear and vanilla with a touch of maltiness, it’s waxy mouthfeel leads into a smooth taste of oak, nutmeg and sweet spices with a tingly salty finish.

GLENKINCHIE 12 YEAR ......................................6.95Founded in 1825 by brothers John & George Rate and situated about 15 miles outside of Edinburgh, in the glen of the Kinchie Burn. The 12 year old replaced the original 10 year in 2007, which helped produce a lovely cereal, floral sweetness for this rare lowland survivor.

Islay, the southernmost of the island chain of the west coast of Scotland. Known for its thunderous drams, full of peat, smoke, sea salt and medicinal qualities. Like the Champagne or Bordeaux region of France, of all the whisky regions, Islay has gained its recognition as truly iconic in style and attitude.

CAOL ILA 12 YEAR ...................................................6.95The Caol Ila distillery near Port Askaig on the island of Islay, gains its name from the Gaelic ‘Caol Ilé’ meaning ‘Sound of Islay’. Typically one of the lighter Islay whiskies, pale straw in colour and grassy on the nose. The balanced peat is paired beautifully with pear and citrus notes.

BUNNAHABHAIN 12 YEAR .............................6.95Located at Port Askaig and founded in 1881, after it’s establishment the village of ‘Bunnahabhain’ was founded to house many of its workers. Another mild Islay malt, with a unique taste to other Islay malts. This 12 year old is lightly peated for an Islay single malt and consequently is a light, fresh dram. Now at the higher strength of 46.3 - for more complexity and flavour.

BUNNAHABHAIN 18 YEAR............................ 11.95Matured in a mixture of ex-oloroso sherry, and ex-bourbon casks. This is the relaunch of a whisky with no caramel colouring or chill-filtration instead it offers robust flavours of cherry, smoke, cream and vanilla.

BUNNAHABHAIN 25 YEAR ........................29.95The crème of the crop for Bunnahabhain, matured for 25 years and coming out at a hefty 46.3, lending to the full on mouthfeel. Cardamom, leather and sweet caramel dessert on the nose. An indulgence of sweet berries and cream on the palate which progress into a feast of malt and nuttiness.

LAPHROAIG 10 YEAR...........................................6.95One of the most distinctive and divisive single malts in the world, the mother all smokey peated whiskies. Seaweed, bonfire smoke and a hint of iodine are the presiding flavours in this whisky, seasoned drinkers will find a touch of sweetness and lemon citrus.

OUR FAVOURITE FROM ISLAY AND THE ISLANDS

LAGAVULIN 16 YEAR ..............................................9.95The name of Lagavulin is an anglicization of the Gaelic ‘lag a’mhuilin’, meaning ‘hollow by the mill’. Constructed in 1816 in the village of the same name, Lagavulin and it’s introductory 16 year old remains one of today’s most highly regarded whiskies in the current day. Aged in oak casks for at least sixteen years, this much sought-after single malt has the massive peat-smoke that’s typical of southern Islay, but also offers a dryness that turns it into a truly interesting dram.

BRUICHLADDICH ‘CLASSIC LADDIE’ ....................................................6.95One interpretation of the Gaelic word Bruichladdich is ‘stony shore bank’ referring to a post-glacial raised beach, though an alternative, perhaps more pertinent translation may be ‘rocky lee shore’. Located on the shore of Loch Indaal on the Rinns of Islay, this whisky is uncharacteristic of an islay malt due to it being unpeated. This leads to a whisky as smooth as a pebble. Clean, fresh and delicious with a perfect balance of grain and malt.

BRUICHLADDICH ‘OCTOMORE’ .................................................................12.95Straying to the furthest point from the classic expression going from unpeated to one of the most heavily peated whiskies available today. TALISKER 10 YEAR ..................................................6.95Founded on the isle of Skye in 1830 by Hugh and Kenneth MacAskill, Talisker became the favourite whisky of writers Robert Louis Stevenson and HV Morton. In his poem ‘The Scotsman’s Return From Abroad’, Stevenson mentioned “The king o’ drinks, as I conceive it, Talisker, Islay, or Glenlivet.” Primarily aged in American oak casks, this malt has an intense coastal character of spice and brine with a touch of white pepper and a hint of heather and lemon peel on the finish.

ARRAN 10 YEAR ......................................................... 5.95Located on the small isle of Arran, the distillery was founded in 1994 by Harold Currie, former director of Chivas Regal. During the construction of the distillery, a pair of Golden Eagles built their nest on a cliff near the distillery; since Golden Eagles are a protected species, construction of the distillery was temporarily halted. These two eagles can be found on the branding to this day. A medium bodied, citrus led dram reflecting the distilleries youth.

ARRAN 12 YEAR ..........................................................7.95A cask strength variation of the Arran malt, matured in a combination of first fill sherry casks, refill sherry hogsheads and ex-bourbon barrels. The cask strength gives it a spicy kick and hints of nuts and dark chocolate.

JURA ORIGIN.................................................................. 5.95The Isle of Jura is nestled off the West Coast of Scotland. It’s only 60 miles from Glasgow as the crow flies, but 60 miles has never felt so far away. Described by George Orwell as the ‘most un-get-at-able place’. Origin, named to signify where it all began, is a warm golden malt with liquorice, coffee beans and vanilla on the palate.
