What is celiac disease?
Celiac disease is a disorder that causes problems in your
small intestine when you eat gluten, a protein found in
wheat, rye and barley. Gluten is poison to people with
celiac disease.
What does gluten do to people who have
celiac disease?
Gluten damages the small intestine of people who have
celiac disease. This damage keeps your body from taking in many of the nu-
trients from the foods you eat, including vitamins, calcium, protein, carbohy-
drates, fats and other importante nutrients. Your body can´t work well wit-
hout these nutrients.
In which foods gluten is found?
People with celiac disease should avoid the following foods:
Bread, cakes, pretzels, muffins, pancakes, couscous, pizza, all Bran,
sauces thickened with flour, any foodd made with flour, drinking cho-
colate, salad dressings, White pepper, malt vinegar, gravy powders,
etc.

Turkey Burgers with Feta and Dill
Ingredients (serves 2)
1/2 lb extra lean ground turkey
1 Tablespoon chopped fresh dill 2-3 oz fresh feta cheese, crumbled
salt and pepper to taste
Spicy Sweet Potato Side
1 teaspoon grapeseed oil (you can sub olive oil) 2-4 shallots, sliced
2-3 jalapenos, sliced 1 medium sweet potato, grated
salt and pepper to taste romaine hearts
In a bowl, combine turkey, dill and feta. Shape with your hands into two burger patties and set aside.In a medium non-stick skillet, heat oil
over medium heat. Add shallots and jalapenos and sauté until the shallots are soft and beginning to caramelize (about 10 minutes). Add
the shredded sweet potato and stir until the sweet potato is warmed through (about 3-5 minutes).Heat grill (or your grill pan/george
foreman for my fellow Nyers) and cook the burgers over med-high heat. (quick tip – I like to make turkey burgers a little thinner than
burgers made with beef to make sure they cook through without losing too much moisture)Serve with gluten-free bread or hamburger
buns.

Celiac disease is a very new illness in Costa Rica and in the world. People always confuse this disease
with stomach ache or other digestive problems. For example, some symptoms of celiac disease are
abdominal bloating and pain, chronic diarrhea, vomiting, constipation and weight loss. These problems
are usually related as normal consequences of bad digestion.
Therefore, other worst problems appear like unexplained iron
deficiency anemia, fatigue, bone or joint pain, arthritis, bone
loss or osteoporosis, depression or anxiety, missed
menstrual periods and infertility or recurrent miscarriage. As
a result of these symptoms, the person has to visit the doctor
and ask for specialized exams, like blood test or intestinal
biopsy to diagnose the celiac disease.
Once the person is diagnosed with celiac disease the lifestyle
has to change immediately and has to begin with a gluten free
diet. The most commons foods that include gluten are any
kind of bread, pastas or any that contents wheat, rye and
barley. In this specific kind of diet there is not enough information for the people consequently has to
begin a process of education to the population.
For example, if a celiac patient decides to eat outside there
are not many options in the market. Almost all the fast foods
contain wheat, rye and barley in their preparations. Rye and
barley is not consume very often by costaricans, but in the
case of wheat it can be found in: bread, cakes, pasta, fried
chicken, ¨empanadas¨, pies, tortillas, any kind of meat that is
breaded and many kinds of desserts. Hopefully, there are new
kinds of flour and pasta for celiacs in the national market and
the products have been increasing the presence in our
supermarkets and stores.
It is a big challenge to the restaurants in Costa Rica, to
prepare a specialized menu for the celiac disease patients in
order to attract them to visit their restaurants. In Costa Rica
there is one restaurant in Escazu that offers a gluten-free
menu. I think that the government has to force the restaurants
to include in their menus the information of the amount of
calories and if it includes wheat, rye or barley to make an
easier way to choose the right food for the consumers.
Finally, It is important to mention that in Costa Rica we do
not have many information about the celiac disease and
we have to learned a lot of this illness. Tastes The Food

Nowadays our life it is becomes to be much accelerated, for different reasons that indirectly affect our everyday life. One of the most important, that is affected is part of our bodies, with the type of food that we consume. Hamburgers, chips, canned soft drinks and snacks are examples of fast food that usually we eat and replace for healthy food that have more nutritional benefits. People has the erratic thought that to eat healthy food is expensive and very complex, however is more easier than you can imagine. Sometimes, we need to kwon how to buy intelligently. The supermarkets have days of fruits and vegetables where you can find special prices and offers in very nice quality of products. Just take few minutes in your house to prepare a healthy menu instead of fast food. This is one of the reasons that people prefers this kind of food.
There is other that knows about healthy food but they do not have enough time to prepare and go at the supermarket in days mentioned so they choose fast food rather than healthy food because is most quickly and easy. Obviously they aware about the calories, fat and little nutritional value but in spite of it consume to satiate their hunger. Also, other important reason that why the people prefer
fast food instead of healthy food are the very nice and interesting advertisings that restaurants of fast food have, speaking of the best known, besides that benefit to eat healthy food compares with fast food does not have comparison in nutritional facts terms. To conclude, healthy food must be a compromise of every restaurant that sell a complete menu. How everybody knows, this idea it could be a magical petition, therefore if we wants to eat healthy food, we need to begin cooking ourselves food or if we are going to eat in a restaurant try to select a dish lower in fat. Also if you have problems of overweight check yourself with a specialist and starts to eat more healthy. Do it.

Libyan is nation from the north of Africa, bordered by the Mediterranean Sea to the north. This country is the fourth largest country in Af-rica and also they have the highest life expectancy with 77.65 years. The Libyan econ-omy it depends on the oil sec-tor. In addition on that 95% of their exports are from petro-leum that is why Libya is one of the richest countries in Africa. In this country the agriculture is limited because they pre-sent an unfavorable climatic condition and poor soil, as a result Libya imports about 75% of its food. Libya culture revolves around their popular traditions with music festivals and dance, the folk music is typically Arab.
Libyan cuisine is generally simple but not less taste. Libyan food is probably the most popular and well know out of all the middle-east cuisine and it can be find around the world. These recipes have the perfect mix of products such as fish, meat (lamb and camel), vegetables and fruits. Their four traditional ingredients are the olives, palm dates, grains and milk. As a result Libyan
food is not only healthy food, but they also have a great taste. One of the most popular and traditional food from Libya is the couscous, this was made from the hard part of the durum, but nowadays in-dustries treat this product and is sold in markets. Other very fa-mous and traditional food is the Lebanese breads, especially the flat Pita bread is an integral part of home-made Lebanese food. The flat Pita is use to eat with a very delicious and famous dip called Hummus. In the Libya the alcohol consumption is illegal that is why the typically drink is the tea especially black tea or refreshing teas.

In Costa Rica to find Libyan food is very easy, for example in the supermarket sells the flat Pita and different type of breads. Here in Costa Rica Libyan restaurants now are more popular for their spe-cial, tasty and different kind of food. In these restaurants we can find vegetarian plates and also recipes with lamb. Some Libyan restaurants that can we mention here in Costa Rica are for exam-ple Lubnan, this is located in the Paseo Colon in this place they offer a great variety of Lebanese food beside the make traditional dance presentation; Sash is other restaurant where people can taste Libyan food in a place that have a unique decoration repre-senting Libya culture, this is located in Rohrmoser; Nikklas is also a restaurant but here they specialize in fast food like lamb ham-burger and hummus with flat Pita. In conclusion there are no ex-cuses to not taste the Libyan food For the ultimate hummus dish, follow these simple instructions: Drain the chick peas and rinse well, then put in a saucepan with plenty of water and cook over high heat till it starts boiling, then lower the heat and simmer covered for about one and a half hours, or until the chick peas are soft to the touch, alternatively, use tin-ned chick peas ( 2 tins of 445g each). Drain the cooked chickpeas and put in a food processor with all other ingredients till they beco-me a soft paste. Empty in a flat dish and decorate with some pars-ley leafs and drizzle with good quality olive oil. Serve with warm pitta bread.
Hummus recipe serves 3 – 4
Ingredients
2 cups dry chickpeas (to be rinsed and
drained before use) soaked in water and
1/2 tsp.
3 cloves of garlic crushed
1/2 cup tahini ( sesame seeds paste )
1/4 cup lemon juice
Salt & pepper
Garnish
1 pinch smoked paprika
1 t e a s p o o n f r e s h p a r s -
ley or 1 teaspoon fresh cilantro, minced
