Ingredients A drizzle of olive oil 1/2 an onion, diced 1 very large sweet potato or 2 small)(peeled and diced) 1/2 can of tomato sauce (or 1/2 can of diced tomatoes) 1 cup of low-sodium chicken stock or chicken broth 1 cup of water Optional: 1/4 cup of milk Salt and pepper () Chopped cilantro, for garnish
Instructions 1. Heat oil in a large pot over medium heat. Add sweet potatoes and onions. Cook until soft and golden, about 10 minutes. 2. Add tomatoes, stock/broth, and water. 3. Cover and bring to a slow boil, then reduce heat, and simmer for 20 minutes. 4. Transfer the soup to a blender, and puree until smooth. Add milk to reach desired consistency)(optional). Pour the soup
back into the pot and reheat. 5. Ladle the soup into bowls, top with cilantro (optional) and serve.
