september 2014VERONA LOVE WINES
Valpolicella, Ripasso, Amarone and Recioto, yes, the Italian wine region Veneto bursting red goodies for all tastes and
budgets.
In late August, I visited Verona and the well-known producer Pasqua to experience the harvest up close.
Barely ten minutes by car outside the famous Renaissance city is the closest vineyard to Pasqua situated. It is 30 degrees in
the sun,
but the grape pickers keep pace. - 2014 has been a challenging year for us, Carlo Pasqua smiles, the firm's grand old man and
face outward. - The summer was the worst in 50 years.
We have to go got to the 1960s to find a year with as much rain. Then everything turned in August.
Today (the 29th of August) we harvest the Merlot grapes. It is 50 years ago that we have harvested wine grapes as early as
this. My nephew, Giovanni Nordera, our winemaker, has really got something to fight with!
Pasqua is all about family. The company was founded in 1920 by four brothers. Today it is run by generation number
two, who is about to leave the tradition to yet another generation.
Later on during the day, Carlo and Giovanni keep a tasting of the family prestige wine: The
monumental Cecilia Beretta Amarone . The 2008 vintage is available in Norway, but we got to taste vintages back to 1999.
For Amarone lovers, this wine is the purest nectar for the soul.
The are many producers that compete about the Amarone people's attention. The prices vary
also much. Genuine care and quality costs, but it is worth every single penny.
Cecilia Beretta Amarone 2008, has a tight, almost pitch dark color. The nose is seductive and aromatic, with complex
elements of plum, dark cherries, dried berries, dark chocolate,
barrel, tar, leather, balsamico and tobacco. Round and creamy at first, fruit driven and youthful. In the mouth a carpet of wild
berries, soil, minerals and spice spreads out. Full bodied, rich and intense, with an approximate
everlasting aftertaste. A classic Amarone with modern lines. You can find less expensive Amarones, but they
lack complete this wine's concentration and structure.
The vines are small. Only 12,000 bottles are produced each year. In other words: Exclusive! A brilliant result with the
autumn game dishes, pepper steak, pots, or cheeses. or romantic snuggling in front of the fireplace.
Pasqua has many wines available in Norway. Here are two favorites: Romeo & Juliet Passimento 2011 is a mini Amarone and
a tribute to Verona's famous love couples.
The grapes in the wine are dried 1 month and then stored 3 months in used oak barrels. This produces a fruit excessive
and round wine, characterized by plum, dark cherries, wild berries,
chocolate, tar, tobacco and spices. Rich and powerful (14 %), but also well balanced and dangerously easy to
drink. A wonderful lovewine!
The 3-liter Cecilia Beretta Passimento is also a mini-Amarone based on dried grapes. Dark color
and aromatic nose, with boiled blackberries, cherry and plum, plus large quantities
cocoa and spices. Pulpy and fruity. Medium-bodied, with good sweetness and a long, spicy aftertaste. Youthful and deliscious!
All these wines are superb company for the autumn gamedishes, pepper steak, beef,
duck, pots, cheeses or romantic snuggling by the fireplace.

september 26th 2014More goodiesEVERY DAY over 3,000 people write their name on the brick wall at the entrance to the small "Piazza" where Julies balcony is situated in Verona, where Romeo, according to legend, shouted out his love.
When the wine producer Pasqua hired a professional photographer to create a new label for his new "blend", he came back with a design from just this wall. The family Pasqua was not in doubt, we use a section of this wall. Thus "arose" Pasqua Romeo and Juliet`s wall Passimento 2011.
The Passimento name play on the term "Appassimento", ie the technique of using dried grapes for the production of wine.
HERE the grapes are dried for a month, and therefore contains somewhat more water than grapes what one use in a Amarone, where the grapes are often dried for three – four months.
In Romeo & Juliet the alcohol percentage is therefore 14, while in amarone wines often operate with 15 to 16 percent.
ROMEO AND Juliet`s wall Passimento costs only 140 NOK when now launched in Norway. The aroma is typical Ripasso with dark berries and gorgeous notes of spices.
Moreover, the amount of residual sugar is relatively high with 11 grams per liter. For me it is a little too much, but for many I think the residual sugar's ability to balance the acid is appealing.
The wine, which is made of a special blend , almost equal parts Merlot, Croatina and Corvina is simply gorgeous and has every chance to become a volume seller.
So now those Norwegians who have written their names on the wall and swore their love can reminisce while they are enjoying the wine.

The Wine Gang February 2015 issue:
‘’ this powerful modern-style
Valpolicella really comes into its own
as a hearty meat match. Alongside
local favourites Corvina and Croatina
there's a portion of Merlot in the
blend. But with some of the grapes
dried in "apassimento" style, the
flavour profile is very Veneto, with
black cherries fresh and dried, a touch
of chocolate, a firm tannic backbone
and a sweet spicy finish.’’87/100

Passione e Sentimento 2012 IGT
Veneto, Famiglia PasquaHere's a wine with passion written all over it. The label
depicts the famous wall of love near the Romeo & Juliet
balcony in Verona where thousands of love messages have
been inscribed over the years inspired by the tragic couple's
ill-fated but undying love for one another. But the label also
reflects to passion inside the bottle for making great wine
from the nearby vineyards of Valpolicella. Merlot (40%),
Corvina (30%) and Croatina (30%) are sourced from hillside
vineyards in Valpantena. Just like in the production of
Amarone, the Merlot and Corvina grapes are hand
harvested with great care and then left to dry for 1 month in
wooden trays in the winery. Here, thanks to the dry and well
ventilated environment where the humidity level is carefully
controlled, the grapes lose around 30% of their water
content and gain high sugar concentration. Vinification is
then done in separate steel tanks at controlled temperature
over 30 days followed by aging in oak barrels for 3 months.
Afterwards the wine from all three grapes are blended into
harmonious and delightful whole. Passione e Sentimento
shows intense aromas of red berries with hints of spices on
the nose. The palate is zesty and alive with rich berry fruit
flavors, bitter chocolate, woodsmoke and brown spices
while the tannins are ripe and velvety. It's a wine you've just
gotta love that's also a classic value!

NV finest* Fino Sherry, Jerez, Andalucia, Spain (£5.50,50cl bottle, Tesco). It is always pretty tricky to matchwine to soup and Tom’s Celeriac and apple soup deservesa well-chosen companion, so I have found you this mouth-watering, bargain-priced Fino for the job. Serve it chilledand revel in this stunning match.2014 Gavi di Gavi, Terre Antiche, Giustiniana,Piemonte, Italy (£12.00, Oddbins). Tom’s classic Codfish cakes with caper and parsley sauce is a wonderfulrecipe and I have found a very smart Gavi, made by myfavourite producer in the region, for you to trackdown. One sip of this elegant, dry wine and you will be inheaven.2013 Pasqua, Passimento, Veneto, Italy (£10.00,Morrisons). The Slow cooked duckling with pickledbeetroot and sweet and sour onion recipe has some verystrong flavours on the go. I have chosen an Italian beautymade from partially dried grapes. This techniqueincreases the intensity of plum and blackberry fruit tostunning results.

April 2016
For those of you who know of my love for
trying different variations on Amarone, this
Bottle of The Week choice should come as no
surprise. As you may be able to tell by the
name, Passimento, this red blend is made in
the style of Amarone by partially drying the
grapes before they are fermented, which is
referred to as Appassimento. The blend is
made up of 40% Merlot, 30% Corvina, and
30% Croatina. Corvina is the main grape used
in Amarone, but here it plays second fiddle to
the Merlot. A quick side note on Merlot, I
have heard several people recently dissing on
the Merlot grape as being a lesser grape, and
I just wanted to take a moment to say that,
while you can find some pretty bad Merlots,
there are also some fantastic bottles out
there if you know where to look.
