1. ClEaN aND SaNiTizEThoroughlycleanandsanitizeALLequipmentandutensilsthatwillcomeincontactwithyourciderusingacleanserandacertifiedsanitizer,e.g.,StarSanorIOStar.

2. BOilBring1gallon(128oz./3.78L)ofwatertoaboil.Oncethewaterisboilingdissolve2lbs.(.90kg)ofcornsugar(notincluded)intotheboilingwaterthenaddthemixturetothesanitizedfermenter1 (waRNiNG: Never pour hot liquid into a glass carboy).Removetheadditionalingredientsandinstructionsfromthepouch.Next,pourtheliquidconcentratefromthepouchintothesanitizedfermenterwhichcontainstheboiledsugarwater.Rinseoutanyremnantsfromthepouchusingcleanwater.Addittothefermenterandstirwell.

3. TOP-UPTopupto6gallons(23L)usingcool,cleanwaterandstirwell2.Checktobecertaintheliquidtemperatureisbetween64°-74°F(18°-23°C).AddthecontentsoftheCiderYeastSachetandCiderSweetener3,thenstir.

4. aiRlOCk PREPaRaTiONFitanairlockintothegrommetonthefermenterlidthensecurethelidtothefermenter.Filltheairlockhalfwaywithwaterandsnapthelidbackontotheairlocktoprotectduringfermentation.

5. FERmENTaTiONLeavethefermenterinanareawherethetemperatureremainsbetween64°-74°F(18°-23°C)andmarkyourstartdayintheTRACkINGYOuRPROGRESScalendar(right).Below64°F(18°C)fermentationmaystopsoifthetemperatureistoocolduseaheatingbelt4.Fermentingabove77°F(25°C)willcausetheciderqualitytobereducedsignificantly.Leavetofermentfor6days.

6. mONiTOR aND RECORDAftersixdays,checkthespecificgravity(S.G.)usingasanitizedhydrometer.Iffermentationhasfinished,theS.G.shouldbe1.004orlower.Ifthegravityhasnotbeenreached,continuefermentingandcheckthegravityagaineachdayuntilthegravityreadingstaysthesamefortwoconsecutivedays,thencontinuetostep7.IMPORTANTWARNING:TheS.G.mustbestableforatleasttwoconsecutivedaysbeforebottling.Neverbottleuntilfermentationiscomplete.

7. FlavORiNGOnce fermentation iscomplete remove the lid,add theFlavorSachetandstirwell.Secure the lidandairlocktothefermenterandleavetositforatleast48hoursbeforebottling.Thisallowstheyeasttore-settletothebottomofthefermenter,reducingtheamountofsedimentthatcouldbetransferredintothebottles.

10. PREPaRE CaRBONaTiON DROPSAddoneBrewer’sBest®CarbonationDroptoeachsanitized12oz.bottle5(2dropsfor22oz.bottles).

11. BOTTlEusingyoursiphonsetupandbottlingwand,fillthebottles6towithinapproximatelyoneinchofthetop.useabottlecappertoapplysanitizedcrowncaps.

12. BOTTlE CONDiTiONMovethebottlestoadark,warm,temperature-stableareaapprox.64º-72ºF(18°-22°C).Overthenexttwoweeksthebottleswillnaturallycarbonate.Carbonationtimesvarydependingonthetemperature,sobepatientifittakesaweekorsolonger.

TRaCkiNG yOUR PROGRESS

1Never pour hot liquid into a glass carboy.

2use a good quality drinking water withthiskit.Ifyouareunsureaboutyourwaterqualityconsiderusingbottledwater.

3Ifyoupreferasweetcideraddthewholecontentsofsweetenersachet, foramedi-um-sweetcideraddhalfof thesweetenersachet,orforadrierciderdonotaddanyofthesweetenersachet.

4Consult your local homebrew shop forheatingoptions,pads,belts,etc.

5Alternatively you can use priming sugar.Toprepareprimingsugar,dissolve5oz.ofprimingsugarin2cupsofboilingwaterfor5minutes. Pour thismixture into a cleanbottlingbucket.Carefullysiphonciderfromthefermentertothebottlingbucket.Avoidtransferring any sediment. Stir gently foraboutaminute.

6use standard crown finish bottles,preferablyambercolor.Makesurebottlesare thoroughly clean. useabottle brushifnecessarytoremovestubborndeposits.Bottles should be sanitized prior to filling.AmberPETbottlesarealsoacceptable.
