With the change in lifestyle among the people around the world, the eating habits of people have also changed. Italian food is preferred by people of all ages. Pasta's available in different varieties like penne rigate, fussili, conchigli, farfalle, spaghetti, lumache ( cut macroni), coloured pasta etc.

Pasta is a staple in the diet of people around the world. Pasta makes an ideal meal as a part of healthy diet as it is a rich food high in complex carbohydrates, vitamins, iron, and above all is low in calories.

Pasta- Unleavened dough, made of wheat flour/ rice flour, water, and sometimes eggs, that

is molded into any of a variety of shapes and boiled.

To make pasta, flour is mixed with water, then kneaded to make a dough. This dough is

rolled into thin sheets or forced through holes to create different shapes. Sheets of pasta are

cut into the desired shape. Shaped pastas are ready to be sold (fresh pasta) or dried.

The choice of pasta shape is a matter of taste and how it will be used.

Small pastas are used particularly for clear or hearty soups.

Curved, twisted or tube-shaped pastas are perfect for sauces.

Ridged pastas are ideal for meat-based sauces, while smooth pastas are ideal for cream- or

cheese-based sauces.
